Fillers
Fillers increase the volume of food without increasing its energy value. They have specific effects and are therefore only used in a few groups of food products. Since they have almost zero effect on the energy value, they are often added to low-calorie foods.
Fillers often also fulfill another function, for example as an emulsifier, stabilizer or thickener.
We divide them into:
- natural
- semi-synthetic and synthetic
