Kicked Up Mashed Potatoes
3 pounds potatoes, boiled and soft
pinch salt
1 to 1 1/2 cups milk
1/2 cup sour cream dip, made (such as Do You Bake? Cheesy Cheddar Bacon Dip
or Do You Bake? Garlic Asiago Dip
1/2 tsp pepper.
Directions:
Mash potatoes lightly with a potato masher or fork. Add milk, dip, salt pepper. Use an electric mixer to whip potatoes until desired consistency, or until light and fluffy. Add additional milk for a thinner mashed potato texture. Transfer to a baking dish and serve.
Additional Kicked Up Options:
I kick it up a little and usually reduce the amount of milk by about 1/4 to 1/2 and add another 1/4 cup dip. If I’m feeling extra adventurous – for Bacon Cheddar mashies – once I finish mashing, I will put into a baking dish and then top with shredded cheddar cheese and put under the broiler until ‘ bubbly’. then serve right away.
