A classic recipe for frog mushrooms

Under this name, some of you might imagine some gourmet delicacy of French cuisine, where frogs are a regular part of the menu.

However, in this case, it is an excellent and completely simple cookie that you can prepare in several ways with coffee or tea. After all, try the recipes for walnut cake with your afternoon coffee.

Ingredients:

For the dough:

  • 350 g plain flour
  • 100 g of brown sugar
  • Pinch of salt
  • 2 eggs (size M)
  • 250 g of butter

For the filling:

  • 80 g ground walnuts
  • 80 g of dried apricots
  • 1 tablespoon of brown sugar
  • 100 g of whipping cream
  • 2 tablespoons of Amaretto liqueur
  • 1 egg yolk
  • 1 tablespoon of milk
  • Icing sugar for sprinkling

Method:

  • Sift flour, brown sugar, salt and eggs into a bowl. Add the butter cut into pieces and make a smooth dough.
  • Wrap in foil and leave to rest in the fridge for at least 1 hour.
  • For the filling, grind walnuts and apricots in a blender. Stir in brown sugar, cream and Amaretto.
  • Fold the filling prepared in this way and put it in the fridge to cool for 1-2 hours.
  • Preheat the oven to 200 degrees.
  • Roll out the dough into a 3-4 mm thick pancake and cut out circles with a diameter of approx. 7 cm.
  • Mix the yolk with milk and brush the wheels with it.
  • Place 1 heaping teaspoon of filling in the center of each circle.
  • Fold the wheel over and press the edges together with a fork.
  • Place the pockets on a baking sheet lined with baking paper.
  • Bake in a preheated oven for about 15-20 minutes.
  • Remove from the oven and transfer to a kitchen rack and let cool.
  • After the walnut-apricot pockets have cooled, dust them with powdered sugar.

Curd frog mushrooms

A small dessert, simple candy or simply a treat that will quickly and easily satisfy your sweet tooth. The preparation is not at all complicated and the result will please you and your loved ones.

Ingredients:

For the dough:

  • 30 dkg plain flour
  • 15 dkg of fresh softened unsalted butter
  • 2 egg yolks
  • 10 dkg of erythritol ground into a powder
  • 1 packet of vanilla sugar
  • Grated rind from 1 chemically untreated lemon
  • 1 bag of baking powder
  • Salt on the tip of a knife
  • 1 spoon of sour cream

For the cheese filling:

  • 250 g of cottage cheese
  • 1 M-sized egg
  • 1 – 2 bags of vanilla sugar
  • 1 heaping tablespoon of granulated sugar
  • 1 – 2 teaspoons of vanilla pudding

To finish:

  • 2 tablespoons of milk
  • Juice from half a chemically untreated lemon
  • Icing sugar for sprinkling

Method:

  • Sift the flour into a bowl and pour it into the bowl of a food processor.
  • Add softened butter, egg yolks, powdered erythritol, vanilla sugar and turn on medium speed.
  • Leave it on and add sour cream with salt.
  • Sprinkle the grated crust, and finally the baking powder.
  • At medium speed, we make a smooth dough, which we put in the refrigerator to rest for 1 hour.
  • Then we take out the dough, divide it into two halves and roll each into a plate with a thickness of about 3 mm.
  • Using a cookie cutter or perhaps a mug, cut out circles of the same size.
  • Preheat the oven to 180 degrees.
  • Put 1-2 teaspoons of cottage cheese filling in the center (it depends on how big the circle is).
  • Mix milk with lemon and grease the edges of each round.
  • Fold the edges together and press with a fork around the entire perimeter.
  • Place on a tray lined with baking paper and place in a preheated oven.
  • Bake for about 15-20 minutes until the surface is pink.
  • Remove the finished frog mushrooms from the oven and transfer them to a kitchen rack, where we let them cool.
  • After cooling, sprinkle with powdered sugar.
  • If you want a slightly sweeter option, you can mix powdered sugar with vanilla sugar and wrap the still warm candy in this mixture.

Frog mouths with jam

Each filling has something in it, and when it is made from plums and made at home, then the luxurious taste is 100% guaranteed. After all, who doesn’t love all things jelly.

Ingredients:

For the dough:

  • 200 g of butter (can also be Hera)
  • 300 g plain flour
  • 1 M-sized egg
  • 2 tablespoons of vinegar
  • Pinch of salt

To finish:

  • Homemade plum jam (if you don’t have it, you can of course use purchased)
  • Icing sugar for coating

Method:

  • Sift the flour into a bowl, add cubed softened butter, eggs, salt and finally vinegar.
  • We will make a smooth dough, shape it into a ball and let it rest in the refrigerator for 2-3 hours.
  • Then preheat the oven to 170 degrees and prepare a baking sheet lined with baking paper.
  • Put the dough on a floured rolling pin and roll it out into a sheet about 3 mm thick.
  • Using a round cutter, a glass or a mug, cut out circles of the same size.
  • Place each round in a pirogue mold or a small bag, put a little jam in the center and turn it over.
  • We press firmly so that the edge of the dough closes and the jam does not leak out during baking.
  • Place the clams prepared in this way on a baking sheet and place in the preheated oven.
  • Bake for about 15 – 17 minutes, remove from the oven and roll in powdered sugar while still hot.

Tip: Try the egg white nut filling.
What you will need:
3 egg whites, 1 teaspoon of egg extract, 5-6 tablespoons of granulated sugar, 3 and 1/2 cups of ground walnuts.
How to do it:
In a bowl, beat the egg whites and vanilla extract until foamy using a hand mixer. Add sugar spoon by spoonful and mix each one thoroughly. Once the sugar has been processed, add the ground nuts and mix with a wooden spoon. Then just use it as a classic filling.
