Homemade breakfast cereal with hail
If you want to achieve a finer mixture, grind not only meat, but also grits in a grinder.
Ingredients:
- 1000 g pork belly
- 1000 g pork neck
- 1000 g groats
- 500 g of pork liver
- 1 pork tongue
- 4 onions
- 10 cloves of garlic
- 1 tbsp marjoram
- 2 tablespoons of ground pepper
- 2 tbsp ground allspice
- 1 tbsp fresh grated ginger
- broth
- pork lard
- salt
- pork intestines
Method:
- Boil all the meat in a pot of water until soft.
- Allow the meat to cool and then grind it in a grinder.
- In the meantime, cook the grits and fry the chopped onion in lard.
- Place the minced meat mixture in a large bowl and add all the spices, crushed garlic, onion, grits and a little of the meat stock.
- Mix everything thoroughly and let it stand for about an hour so that the individual ingredients work together.
- Then fill the washed pork casings with the finished mixture, which you tie or sew at the ends.
- After that, boil the homemade morning glory in water at a temperature of about 90 degrees for about 15-20 minutes.
- When the plantains are cooked, rinse them in cold water and let them dry freely.

Homemade bread rolls
If you have more time, you can bake a special bread roll instead of a bun.
Ingredients:
- 400 g pork knee
- 200 g of pork liver
- 400 g pork head
- 200 g bun
- 200 ml of broth
- 2 cloves of garlic
- 40 g of marjoram
- ground allspice
- ground mace flower
- salt pepper
- pork intestines
Method:
- Boil all the pork in a pot of water.
- Cut the buns into small cubes.
- Grind the cooked meat.
- Place the sliced buns in a bowl and pour the meat broth over them.
- Add the ground pork mixture to the bowl.
- Stir and add the crushed garlic and all the spices.
- Let the mixture rest for about an hour.
- Next, prepare the pork casings, in which you will fill the breadcrumbs.
- Fill the casings and boil them in water at a temperature of about 90 C.
- Cook for approximately 15-20 minutes.
- Rinse the cooked morning glory in cold water and leave to dry on a cutting board.

Midsummer pan with vegetables
An original recipe, the advantage of which is that you have a tasty dinner or lunch ready in one pot or pan in a short time.
Ingredients:
- 2 breadcrumbs (prepared using one of the above methods)
- 500 g of potatoes
- 1 red pepper
- 1 green pepper
- 1 onion
- 1 apple with yellow skin, e.g. Golden Delicious
- 1 bunch of fresh thyme
- 2-3 tablespoons of oil
- salt pepper
Method:
- Cut the peeled potatoes into slices, finely chop the onion.
- Heat two to three tablespoons of oil in a pan and fry the potato slices over medium heat.
- Wash the peppers, halve them, remove the core and cut them into fine strips.
- Quarter the washed apple, remove the core and also cut it into slices.
- Add the pepper, apple and onion to the pan with the potatoes and fry for another 6-8 minutes.
- Then add the mixture squeezed from the breadcrumbs to the pan and mix everything thoroughly.
- Salt, pepper and add thyme leaves.
- Cook for about 5 more minutes, stirring constantly.

Baked breadcrumbs in the oven
You don’t always have to prepare this killer delicacy in a pan. It tastes great even out of the oven!
Ingredients:
- 2 breadcrumbs (prepared using one of the above methods)
- 5 potatoes
- pork lard
- salt
Method:
- Preheat the oven to 200°C.
- Wash the morning glory and the potatoes.
- Afterwards, do not peel the potatoes, or cut out the damaged parts, and cut them lengthwise into eighths.
- Grease a baking pan or a deep tray with lard and spread the potatoes, lightly salted, and the breadcrumbs in it.
- Pierce the breadcrumbs lightly with a fork.
- Place the pan in the oven and bake for approximately 30 minutes.

Afternoon bread with mashed potatoes and cabbage
A simple and tasty dish that suits even those who don’t like corned beef.
Ingredients:
- 4 breadcrumbs (prepared using one of the above methods)
- 2 onions
- 150 ml of milk
- 100 ml of water
- 300 g of sauerkraut
- 10 potatoes
- 2 tablespoons of butter
- marjoram
- salt pepper
Method:
- Peel and dice your potatoes.
- Cook them in a pot of salted water until soft.
- Also peel and finely chop the onion.
- Then slowly fry it until golden in a pan with melted butter.
- Squeeze out their contents from the casings and add them together with a little water to the pan with the onion.
- Add marjoram, possibly a little salt and pepper and cook briefly.
- When the potatoes are soft, mash them, add lukewarm milk and make mashed potatoes.
Serve the morning glory with mashed potatoes and sauerkraut. You can braise it or not.

Breakfast with cabbage and roasted potatoes
One of the most classic ways of preparing morning bread is the one with sauerkraut and potatoes. Try this symphony of flavors!
Ingredients:
- 2 breadcrumbs (prepared using one of the above methods)
- 200 g of potatoes
- 150 g of sauerkraut
- 1 large onion
- butter
- a few sprigs of fresh thyme
- salt and pepper
Method:
- Wash the potatoes and boil them in their skin until soft.
- Peel the onion, cut it in half and cut it into thin slices.
- Cut the cooled potatoes into slices.
- Melt the butter in a pan and fry the onion in it.
- Then remove the onion from the pan and place the potato slices in it to bake, sprinkle with salt, pepper and thyme leaves.
- Carefully fry the potatoes on both sides for approximately 10 minutes.
- Toward the end, return the fried onions to them as well.
- In the meantime, heat up the breadcrumbs in a pot of water, or you can also lightly fry them in a pan.
- In another pot, simmer the cabbage for approximately 15-20 minutes.

Morning glory soup
Pork meat and blood can of course be replaced very easily with ready-made breadcrumbs. In that case, add less spices to the soup, as the plantains themselves are already seasoned.
Ingredients:
- 150 g pork shoulder
- 75 g root vegetables (carrots, parsley and celery)
- 250 ml of pig blood
- 50 g groats
- 20 g of pork lard
- 1 onion
- 2 cloves of garlic
- marjoram
- salt pepper
Method:
- Place the pork shoulder and the peeled and chopped root vegetables in about a liter and a quarter of salted boiling water.
- Cook everything until soft and in the meantime cook the grits in another pot.
- Remove the cooked meat and cut it into cubes.
- Then put it back into the soup and also add the drained pork blood.
- Lightly fry the chopped onion in lard and then add it together with the boiled grits to the pot with the soup.
- Add pressed garlic, salt, pepper and marjoram and cook for a while longer.
Serve the morning glory soup with fresh bread or croutons.

How to make homemade breadcrumbs
When it comes to the meat that is best to use for the production of homemade breads, we can say that it varies from region to region. In general, “less valuable meat” is used, i.e. the head, loin, belly and various innards, especially the liver, but lungs or spleen can also be used. In terms of spices, the basis is garlic, marjoram, salt, pepper and ground allspice. You can also add onion or ginger.
A few final tricks
- For skewering, use dry skewers so that they break well, which you grease with a little fat just before skewering. They will subsequently be easier to stretch through your intestine. Cutting them to the tip with a knife will also help.
- You will know that the home-made bread is ready when it floats to the top of the pot in which you are cooking it.
- There are two tricks to prevent your breadcrumbs from bursting when frying in the pan. Either put the breadcrumbs in hot water for two minutes before putting them in the pan, or lightly coat them in plain flour before frying. In any case, it is necessary to proceed slowly when roasting.
