Ingredients:
- 400 g of fresh curly hair
- 1 large egg
- 3 tablespoons of extra virgin olive oil
- 1/2 teaspoon fresh parsley
- Salt and pepper to taste
Method:
- Dip the sponge briefly in boiling water. Then rinse under running water.
- Cut into 2-3 cm thick slices, immerse in a bowl of water and thoroughly clean from needles and various uninvited guests.

Ingredients:
- 400 g roll
- 1 tablespoon of oil (we can also use lard)
- 250 ml of coconut milk
- 1 large handful of Asian basil
- 1 large onion
- 3 cloves of garlic
- 1 teaspoon of fresh lemon juice
- 1 and 1/2 liters of water
- 8 cm of fresh ginger
- 8 cm of fresh galangal
- 3 cm of fresh kencuru
- 1 stalk of lemongrass
- 8 kaffir lime leaves
- 2 cubes of mushroom stock
- 1 teaspoon of salt

Method:
- Peel the ginger and finely chop it. Cut the garlic and onion into small cubes. Cut the galangal into 1/2 cm slices.
- Fry the onion, garlic, ginger, galangal and orange pulp in a spoonful of oil.
- Add the thoroughly washed and cleaned kotrko, cut into smaller pieces. After about 3 minutes, add hot water.
- Let it bubble for about 5 minutes under the lid on the pan.
- Add cubes of mushroom broth, pour in coconut milk and throw in lime leaves and kencur.
- Add coarsely chopped Asian basil. Cook the noodles according to the instructions on the package.
- Then all you have to do is serve and decorate according to your imagination.
- Drizzle a little lemon juice over the soup and serve with noodles.

Ingredients:
For the risotto:
- 1 cup of Arborio rice
- 1/2 medium onion
- 5 cups of hot chicken stock
- ½ cup grated high-quality Parmesan cheese
- 6 tablespoons of fresh unsalted butter
- 1/4 cup dry white wine
For the cauliflower mushroom ragout:
- 1 and 1/2 cups chicken stock
- 1/2 medium onion
- 350 g of fresh cleaned breadcrumbs
- 1 tablespoon fresh unsalted butter
- 1 tablespoon plain flour
- 1/2 tsp freshly chopped thyme
- 1 tablespoon chopped Italian parsley
Method:
- First we prepare the ragout. Chop the onion into small pieces. Melt a spoonful of butter in a pot and sauté the onion.
- Add salt and saute until the onions become translucent, then add the flour, mix and cook for 1-2 minutes.
- Pour in wine, add kotrč, thyme and cover with broth. Bring the mixture to a boil, season with a pinch of salt and let it cook for another 15 minutes.
- Then we set aside and start preparing the risotto. We can easily prepare the ragù a day in advance.
- Chop the onion into fine cubes for the risotto, add another spoonful of butter and sauté until translucent.
- Add the rice and cook for about 2-3 minutes, stirring constantly.
- Season the rice with a pinch of salt. Pour in the wine and let it cook until it evaporates, then gradually pour in the hot stock.
- Reduce the heat to medium and cook until the rice is tender.
- Remove the rice from the heat, stir in the remaining butter, Parmesan and a ladleful of stock to adjust the consistency.
- When the rice is hot, divide it evenly into 4 small pasta bowls, pour over the finished ragout from the roll and sprinkle with chopped parsley.

Toast mix
You can prepare kotrč in many ways, but this recipe will delight you with its simplicity and yet excellent taste.
Ingredients:
- 1 fresh drumstick
- 2 cloves of garlic cut into slices
- 2 teaspoons chopped fresh parsley
- 1 teaspoon of olive oil
- Salt to taste
- A pinch of ground fresh pepper
Method:
- We start by thoroughly cleaning the sponge. We remove all impurities and immerse it in a bowl of water, rinse it under running water.
- Then we break it into parts, fill the bowl with clean water and wash the roll again so that it is really completely clean.
- Heat the olive oil on a medium heat, add the garlic and let it fry for about 1 minute.
- Throw in the scallion and stir-fry for 2 minutes. Then we sprinkle parsley and reduce the temperature.
- Let it cook until the mushrooms are fried. Season with salt and pepper.
- Then all you have to do is cut the bread and put the mixture on it.
