On a dime
- 30 g plain flour
- 2 spoons of granulated sugar
- 1 tablespoon of butter
For muffins
- 2 large eggs
- 125 ml of vegetable oil
- 150 g granulated sugar
- zest of 2 lemons
- 1 teaspoon lemon extract (optional)
- 125 ml buttermilk
- 60 g of lemon juice
- 2 teaspoons of baking powder
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
- 250 g plain flour
Method
- Preheat the oven to 180 degrees.
- Line a muffin tin with paper cups.
- Combine the crumbly ingredients and mix with your fingers until the butter is incorporated and the mixture has a dry crumbly texture.
- In a large bowl, whisk together the eggs, oil, sugar and zest until well combined.
- Whisk in the extract, buttermilk and lemon juice.
- Mix in the baking powder, baking soda and salt and then mix in the flour.
- Fill 11-12 muffin cups with the batter and sprinkle with breadcrumbs.
- Bake for 20-23 minutes, until the batter is risen and a toothpick comes out clean.
- Let the muffins cool in the tins for 5 minutes, then remove to a cooling rack.

- 275 g plain flour
- 225 g of powdered sugar
- 50 g ground almonds
- 2 teaspoons of baking powder
- 2 lemons (finely grated peel and 2 tablespoons of juice)
- 150 ml semi-skimmed milk
- 100 g butter (melted)
- 50 ml of sunflower oil
- 2 large eggs
- ½ teaspoon of vanilla extract
For the frosting
- 4 tablespoons of lemon juice
- 50 g of powdered sugar
Method
- Preheat the oven to 180 degrees. Line a muffin tin with paper cups.
- Place the flour, sugar, almonds, baking powder and lemon zest in a large bowl and mix well.
- Next, beat the milk, butter, oil, egg, vanilla and lemon juice.
- Pour into the dry ingredients and mix.
- Divide the dough into molds.
- Bake for 15-18 minutes, until a skewer inserted into the center of the muffin comes out clean.
- Quickly poke holes in each muffin using a skewer.
- Mix the frosting ingredients and then spoon over the muffin tops.

- Pour into the dry ingredients and mix until combined.

- In a small bowl, whisk together the sugar and lemon juice until smooth and thick.
- Drizzle frosting over each muffin top. Allow to set before serving.
If time permits, cover the batter in the tins and refrigerate overnight for taller, fluffier muffins.
