American fritters

Try authentic American pancakes that are easy, light and fluffy and perfect for a weekend brunch, for example. If you want to make them a little special, mix a large handful of fresh blueberries into the batter.


  • 135 g plain flour
  • 1 teaspoon of baking powder
  • ½ teaspoon of salt
  • 2 spoons of powdered sugar
  • 130 ml of milk
  • 1 large egg, lightly beaten
  • 2 tablespoons melted butter (let cool slightly) or olive oil, plus extra for frying

To serve:

  • Maple syrup
  • butter


  1. Sift the flour, baking powder, salt and icing sugar into a large bowl.
  2. In a separate bowl or jug, lightly whisk together the milk and eggs, then whisk in the melted butter.
  3. Pour the milk mixture into the flour mixture and beat with a fork until a smooth dough is formed.
  4. Let the dough rest for a few minutes.
  5. Heat a non-stick pan over medium heat and add a bit of butter.
  6. When it melts, add a ladle of batter (or two if your pan is big enough to fry two fritters at the same time).
  7. It will seem very thick, but that’s how it should be.
  8. Wait until the top of the fritter starts bubbling, then turn it over and fry until both sides are golden brown and the fritter is about 1 cm thick.
  9. Repeat until all the dough is used up.
  10. The fritters can be kept warm in the oven at a low temperature, but they taste best fresh.
  11. Served with butter and maple syrup.

Buckwheat fritters

Thanks to buckwheat flour, these delicious fritters have a light and delicate texture and a pleasant nutty taste. You have to try this!


  • 1 and 1/2 cups buckwheat flour
  • 1 and 1/4 cup milk
  • 2 tablespoons of white vinegar or fresh lemon juice
  • 4 tablespoons butter, melted, plus more for the pan
  • 1 spoon of sugar
  • 3/4 teaspoon of baking soda
  • 1/2 teaspoon fine sea or table salt
  • 1 large egg
  • 1 teaspoon of vanilla extract


  1. Mix milk and vinegar (or lemon juice) in a bowl, then let stand for five minutes.
  2. Meanwhile, whisk together the flour, sugar, baking soda, and salt in a medium bowl.
  3. Beat the eggs and vanilla into the milk.
  4. Make a well in the middle of the flour mixture.
  5. Pour the milk mixture and melted butter into the well and stir with a fork until the lumps of flour disappear.
  6. It’s okay if the dough has a few small lumps – it’s important not to overmix the dough.
  7. Heat a large pan over medium heat.
  8. Brush the pan lightly with melted butter.
  9. Pour ¼ cup batter into the pan.
  10. Gently spread the dough into a 10 cm circle.
  11. When the edges seem dry and bubbles start to appear, flip.
  12. This takes about 2 minutes.
  13. As soon as we turn the fritter over, fry for another 1 to 2 minutes.
  14. Serve immediately with warm syrup, butter and your favorite topping.

Cottage cheese fritters with blueberries

These cottage cheese pancakes can also be enjoyed by people who watch their lifestyle, because they are not too high in calories and at the same time they are absolutely luxurious!


  • 2 eggs
  • 3 tablespoons of brown sugar
  • 1 cup whole wheat plain flour
  • 250 g of soft cottage cheese
  • maple syrup or honey
  • fresh blueberries
  • 1 and 1/2 teaspoons of baking soda
  • vegetable oil
  • milk as needed if the dough is too thick


  1. Mix all the ingredients into a smooth dough.
  2. Add some fresh blueberries to the dough.
  3. Heat a Teflon pan with a small drop of oil and gradually fry smaller fritters.
  4. Cheese fritters are served with maple syrup or honey and fresh blueberries.

Vegan fritters

We have a recipe for the best dairy-free and egg-free pancakes you can imagine! You only need 7 ingredients and they are incredibly light, fluffy and super fluffy!


  • 1 and 1/4 cup plain flour
  • 3 tablespoons of cornstarch
  • 2 teaspoons of baking powder
  • 1/4 teaspoon fine sea salt
  • 3/4 cup unsweetened almond milk, room temperature
  • 3-4 tablespoons pure maple syrup, room temperature
  • 1 teaspoon of vanilla extract
  • 3 tablespoons of raw cashew butter


  1. We make sure that the milk and syrup are not cold and at room temperature, this will make the dough smoother.
  2. Mix well the flour, cornstarch, baking powder and salt in a large bowl.
  3. Add the syrup, almond milk, cashew butter and vanilla extract to a separate medium bowl.
  4. Beat well to get a smooth mixture.
  5. Pour the wet ingredients into the dry ingredients and whisk gently.
  6. Using a spoon, mix the rest of the dough from the bottom into a smooth, slightly thick dough.
  7. But watch out for mixing.
  8. It’s okay if the batter has a few small lumps that will disappear when fried.
  9. The batter won’t be runny, but a little thicker than cake batter, that’s normal.
  10. Let the dough rest for 10 minutes and at the same time heat the pan on a medium-low flame
  11. The key to successful vegan fritters is letting the batter sit to absorb the starch and baking powder, and a hot pan.
  12. If you use a non-stick pan for cooking you won’t need oil, otherwise you might.
  13. Scoop ¼ cup of the batter and fry for 3-4 minutes or until the surface looks dry and bubbles form everywhere.
  14. Turn and fry for another 2 minutes.
  15. Repeat until all the dough is done.
  16. Served with maple syrup and any fruit to taste.
  17. These fritters are even fluffier when you let them sit for 10 minutes and are still great the next day.

Yogurt fritters with apples

Delicious yogurt fritters without leavening will come in handy as a quick and hearty breakfast that your whole family will enjoy!


  • 1 egg
  • 1/2 cup Greek yogurt
  • 1/2 cup milk
  • 1 teaspoon of vanilla extract
  • 1 cup whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 4 spoons of honey
  • 3 teaspoons of cinnamon
  • 1/2 teaspoon nutmeg
  • pinch of salt
  • 1 cup grated apple
  • frying oil
  • nuts


  1. Mix eggs, yogurt, milk and vanilla extract.
  2. Add the dry ingredients to the same bowl and mix together.
  3. Add grated apple.
  4. Heat a non-stick pan over a medium-low flame.
  5. Add a teaspoon of oil.
  6. Pour the batter into the pan and fry small fritters.
  7. Fry the fritters on each side for about 2-3 minutes.
  8. Served with your favorite syrup, walnuts and apple slices.

Banana pancakes

Simple fluffy pancakes with bananas are light and hearty at the same time. You only need a few ingredients for them and you can easily conjure up a delicious breakfast that you will fall in love with.


  • 1 and 1/2 cups plain flour
  • 2 tablespoons sugar (optional)
  • 2 and 1/2 teaspoons baking powder
  • 1 pinch of cinnamon (optional)
  • 1 pinch of salt
  • 2 medium ripe bananas
  • 1 cup of milk
  • 2 large eggs
  • 1/4 cup canola oil


  1. In a medium bowl, whisk together the plain flour, sugar, baking powder, cinnamon, if you are using it, and salt.
  2. Let’s put it aside.
  3. In a separate bowl, mash the bananas with a fork (it’s okay if you have small pieces left).
  4. Add the egg and pour in the milk and canola oil and mix until everything is combined.
  5. Pour the dry ingredients into the wet and mix until everything is combined.
  6. Let sit for a few minutes.
  7. Heat a large pan or grill to medium heat.
  8. Pour about 1/4 cup batter into the pan for each fritter.
  9. Fry until bubbles form on the surface of the fritters, then turn with a thin spatula and fry for another 1 or 2 minutes.
  10. Serve warm with a drizzle of maple syrup and an extra topping of your choice.

Fluffy kefir fritters

You can also try kefir pancakes. They are not leavened and yet perfectly fluffy, and even healthier thanks to the kefir.


  • 116 g light wholemeal flour
  • ¼ cup sugar
  • ½ teaspoon of salt
  • 4 tablespoons of warm water
  • 2 tablespoons of oil
  • 4 teaspoons of baking powder
  • 1 vanilla sugar
  • ½ cup of kefir
  • fruit for garnish


  • Mix flour, sugar and salt in a bowl.
  • In the second bowl, mix the oil, water and baking powder.
  • Then add vanilla sugar and kefir and mix.
  • Finally, add the mixed dry ingredients and mix again.
  • Pour a quarter of a cup of batter onto a lightly greased pan and fry for 3-4 minutes on each side.

Pudding and cottage cheese fritters

These fritters are amazingly soft thanks to the cottage cheese, and you can easily change their taste depending on the flavor of the custard you choose.


  • 1 bag of custard to taste
  • 125 g of cottage cheese
  • 2 eggs
  • 2 teaspoons of honey or cane sugar
  • 1 banana
  • 50 g of cottage cheese + 1 spoon of honey + 5 spoons of cane sugar for serving


  1. In a bowl, beat the eggs with a fork, add the custard powder and finally the cottage cheese and honey.

Perfect Pumpkin Pancakes are absolutely luxurious and yet so easy to make! They’re full of fall flavors like pumpkin, cinnamon, ginger and nutmeg.


  • 2 cups plain flour
  • 3 teaspoons of baking powder
  • 1 teaspoon of salt
  • 1 and ½ teaspoons of ground cinnamon

  • 2 eggs
  • 1/4 cup milk of choice
  • 1 teaspoon of apple cider vinegar
  • 3/4 cup almond flour

  1. Mix milk and apple cider vinegar in a small bowl.
  2. Let it sit for at least 5 minutes.

Yeast fritters

The pancake batter in this recipe is beautifully fluffy and light, and paired with fruit and sour cream, it’s an absolute treat!


  • 400 ml of milk
  • 300 g semi-coarse flour
  • 50 g granulated sugar
  • 3 eggs
  • 3/4 bag of dry yeast
  • pinch of salt


  1. Mix the yeast into the lukewarm milk, then the flour and sugar, finally the eggs and a pinch of salt.
  2. Mix everything properly and let it rise.
  3. The dough is thinner and usually doubles its volume.
  4. It is really important just so that the fritters are nice and fluffy.
  5. Let it rise for about 45 minutes.
  6. Then fry the pancakes on both sides in a frying pan until golden.
  7. Served with sour cream, honey and fresh fruit.
