American fritters

Ingredients
- 135 g plain flour
- 1 teaspoon of baking powder
- ½ teaspoon of salt
- 2 spoons of powdered sugar
- 130 ml of milk
- 1 large egg, lightly beaten
- 2 tablespoons melted butter (let cool slightly) or olive oil, plus extra for frying
To serve:
- Maple syrup

Method
- Sift the flour, baking powder, salt and icing sugar into a large bowl.
- In a separate bowl or jug, lightly whisk together the milk and eggs, then whisk in the melted butter.
- Pour the milk mixture into the flour mixture and beat with a fork until a smooth dough is formed.
- Let the dough rest for a few minutes.
- Heat a non-stick pan over medium heat and add a bit of butter.
- When it melts, add a ladle of batter (or two if your pan is big enough to fry two fritters at the same time).
- It will seem very thick, but that’s how it should be.
- Wait until the top of the fritter starts bubbling, then turn it over and fry until both sides are golden brown and the fritter is about 1 cm thick.
- Repeat until all the dough is used up.
- The fritters can be kept warm in the oven at a low temperature, but they taste best fresh.
- Served with butter and maple syrup.

Buckwheat fritters
Thanks to buckwheat flour, these delicious fritters have a light and delicate texture and a pleasant nutty taste. You have to try this!
Ingredients
- 1 and 1/2 cups buckwheat flour
- 1 and 1/4 cup milk
- 2 tablespoons of white vinegar or fresh lemon juice
- 4 tablespoons butter, melted, plus more for the pan
- 1 spoon of sugar
- 3/4 teaspoon of baking soda
- 1/2 teaspoon fine sea or table salt
- 1 large egg
- 1 teaspoon of vanilla extract
Method
- Mix milk and vinegar (or lemon juice) in a bowl, then let stand for five minutes.
- Meanwhile, whisk together the flour, sugar, baking soda, and salt in a medium bowl.
- Beat the eggs and vanilla into the milk.
- Make a well in the middle of the flour mixture.
- Pour the milk mixture and melted butter into the well and stir with a fork until the lumps of flour disappear.
- It’s okay if the dough has a few small lumps – it’s important not to overmix the dough.
- Heat a large pan over medium heat.
- Brush the pan lightly with melted butter.
- Pour ¼ cup batter into the pan.
- Gently spread the dough into a 10 cm circle.
- When the edges seem dry and bubbles start to appear, flip.
- This takes about 2 minutes.
- As soon as we turn the fritter over, fry for another 1 to 2 minutes.
- Serve immediately with warm syrup, butter and your favorite topping.

Cottage cheese fritters with blueberries
These cottage cheese pancakes can also be enjoyed by people who watch their lifestyle, because they are not too high in calories and at the same time they are absolutely luxurious!

- 2 eggs
- 3 tablespoons of brown sugar
- 1 cup whole wheat plain flour

Ingredients
- 1 and 1/4 cup plain flour
- 3 tablespoons of cornstarch
- 2 teaspoons of baking powder
- 1/4 teaspoon fine sea salt
- 3/4 cup unsweetened almond milk, room temperature
- 3-4 tablespoons pure maple syrup, room temperature
- 1 teaspoon of vanilla extract
- 3 tablespoons of raw cashew butter
Method
- We make sure that the milk and syrup are not cold and at room temperature, this will make the dough smoother.
- Mix well the flour, cornstarch, baking powder and salt in a large bowl.
- Add the syrup, almond milk, cashew butter and vanilla extract to a separate medium bowl.
- Beat well to get a smooth mixture.
- Pour the wet ingredients into the dry ingredients and whisk gently.
- Using a spoon, mix the rest of the dough from the bottom into a smooth, slightly thick dough.
- But watch out for mixing.
- It’s okay if the batter has a few small lumps that will disappear when fried.
- The batter won’t be runny, but a little thicker than cake batter, that’s normal.
- Let the dough rest for 10 minutes and at the same time heat the pan on a medium-low flame
- The key to successful vegan fritters is letting the batter sit to absorb the starch and baking powder, and a hot pan.
- If you use a non-stick pan for cooking you won’t need oil, otherwise you might.
- Scoop ¼ cup of the batter and fry for 3-4 minutes or until the surface looks dry and bubbles form everywhere.
- Turn and fry for another 2 minutes.
- Repeat until all the dough is done.
- Served with maple syrup and any fruit to taste.
- These fritters are even fluffier when you let them sit for 10 minutes and are still great the next day.

Yogurt fritters with apples

- 1 egg
- 1/2 cup Greek yogurt
- 1/2 cup milk
