  2. Add a sliced piece of ginger and chopped chili pepper.
  3. Also chop the pumpkin and add to the pot.
  4. Saute briefly and cover with broth.
  5. Cook until soft and blend.
  6. Season with salt and pepper.

  • 2 tablespoons of butter
  • 1 cup carrots, peeled and diced
  • 1 cup onion, sliced
  • 1 cup leeks, halved and sliced
  • 3/4 cup chopped celery stalks
  • 3 large garlic cloves, roughly chopped
  • 2 teaspoons of fresh thyme leaves
  • 1 kg of mushrooms, rinsed and cut into thick slices
  • 6 cups chicken stock
  • 1 teaspoon of sea salt
  • 1/2 teaspoon ground black pepper


  1. Melt the butter in a large saucepan over medium heat.
  2. Add the carrot, onion, leek, celeriac and garlic.
  3. Cook and sauté until tender but not starting to brown, about 10 minutes.
  4. Add thyme, mushrooms, chicken broth, salt and pepper.
  5. Bring to a boil, then reduce to low, cover and simmer for 30 minutes.
  6. Remove from heat, pour into bowls and serve.

Low calorie broccoli soup

Broccoli is a superfood full of vitamins and other beneficial substances. Due to its high water content, it is a great aid in losing weight. Make a simple soup out of it!


  • 500 g of broccoli
  • 1 stalk of celery
  • 2 cloves of garlic
  • 1 teaspoon of oil
  • 1 handful of chives
  • 1 liter of vegetable broth
  • salt
  • pepper


  1. Cut the garlic into slices and fry in a teaspoon of oil.
  2. Add the chopped celery stalk.
  3. Add the broccoli florets to the garlic.
  4. Pour in the stock and cook until soft.
  5. Blend.
  6. Season with salt and pepper.
  7. Sprinkle with fresh chives and serve.

Red lentil and spinach soup

This low-calorie spicy soup is full of protein-rich vegetables and lentils. It is beautifully warm, healthy and you will enjoy it!


  • 4 cups of vegetable broth
  • 1 small chopped onion
  • 3 chopped carrots
  • 3 chopped celery stalks
  • 2 cloves of garlic, chopped
  • 1 cup rinsed red lentils
  • 450 g of fresh spinach
  • 1 tablespoon of Italian seasoning
  • 1 teaspoon cumin
  • salt and pepper to taste
  • 1 can (425g) diced tomatoes


  1. Pour ¼ cup vegetable broth into a large pot.
  2. Add onion and garlic.
  3. Cook over medium heat until the onions are translucent.
  4. Add carrots and celery stalks.
  5. Cook for another 5 minutes.
  6. Add Italian seasoning and cumin and season with salt and pepper to taste.
  7. Mix it up.
  8. Add the rest of the vegetable stock, the can of diced tomatoes and the lentils.
  9. Bring to a boil, then cover and reduce heat to medium-low.
  10. Cook for 30 minutes, stirring occasionally.
  11. When ready to serve, add the spinach and toss.
  12. Add the spinach by handfuls until it is absorbed and combined with the soup. Spinach wilts quickly.
  13. Serve drizzled with fresh lemon and garnished with fresh chopped parsley (optional).

  1. Divide the cauliflower into florets and cook gently in the broth.
  2. Blend.

  4. Serve.

Diet vegetable soup

This soup is great if you need to lose weight because it is low in fat and calories, full of vegetables and delicious flavors! So what are you waiting for? Come prepare it with us now!


  • 1 small onion, diced
  • 2 cloves of garlic, chopped
  • 1 cup carrots, diced
  • 4 cups chopped cabbage (about ¼ head of cabbage)
  • 1 cup green beans, cut into 2.5 cm pieces
  • 2 whole peppers, chopped
  • 800 g canned chopped tomatoes
  • 6 cups of beef broth
  • 2 tablespoons of tomato puree
  • 2 bay leaves
  • ½ teaspoon thyme
  • ½ teaspoon basil
  • pepper to taste
  • 2 cups broccoli florets
  • 2 cups chopped zucchini


  1. In a large pot, cook the onion and garlic over medium heat until slightly softened.
  2. Add carrots, cabbage and green beans and cook for another 5 minutes.
  3. Stir in peppers, tomatoes, stock, tomato paste, bay leaves and spices.
  4. Cook for 6-7 minutes.
  5. Add zucchini and broccoli.
  6. Cook for another 5 minutes or until tender.
  7. Remove the bay leaves before serving.

  • When serving, the soup can be sprinkled with a handful of roasted seeds . The food then looks good, tastes even better and we supply the body with important healthy fats.
  • Instead of classic milk, we can also use coconut milk in the soup, giving the food a touch of exoticism. However, we think about the quantity, coconut milk has more calories than cow’s milk.
