  • 6 eggs (3 eggs per person)
  • 3 tablespoons of butter
  • 1 teaspoon of sour cream

Ingredients

  • 4 tablespoons of butter
  • 1 large yellow onion, finely chopped
  • 1 clove of garlic, chopped
  • 1 large green chili, finely chopped
  • 1 teaspoon of cumin
  • 2 medium-sized tomatoes, finely chopped
  • 3 tablespoons cilantro, finely chopped, plus more for garnish
  • 8 large eggs, beaten

Method

  1. Heat the butter in a large non-stick frying pan over medium heat.

  4. Reduce the flame to low.

  • 1 small green pepper, chopped

  • 12 large eggs

  1. Melt the butter in a nonstick skillet over medium-high heat until it sizzles.

6 tips to make the best scrambled eggs

  1. Prepare all the ingredients and kitchen utensils.
    All you really need are eggs and fat to cook them in (olive oil, butter, ghee…). Use a tablespoon of fat for every two eggs . If you add a little milk or cream to the eggs before you start frying them, they will be more tender and have more volume. You will also need a bowl, a fork, a rubber spatula and a non-stick pan.
  2. Beat the raw eggs with a fork.
    Beat the eggs thoroughly. It is better to use a fork than a whisk , as the whisk tends to introduce more air into the eggs, which can cause them to be more frothy and the overall texture too airy.
  3. Fry the eggs slowly and on a low flame if you want soft and creamy eggs.
    Prepare the scrambled eggs on the lowest possible flame and mix them thoroughly. They will be so beautifully soft and creamy. If you want to add cheese to the eggs , mix it in when the eggs are about halfway done. This will give it time to melt and bond with the eggs.
  4. Fry the eggs quickly and on a higher flame if you want them to be firm and fluffy.
    If you prefer harder eggs that you can eat with a fork, fry them quickly over medium-high heat. Make sure your pan is hot before you start by placing your hand 2.5cm from the cooking surface. If you can hold your hand comfortably for 30 seconds, the pan is not hot enough.
  5. Remove the eggs from the heat as soon as possible.
    When the eggs are almost done, remove them from the heat. The residual heat in the pan will finish them off, so if you pull them out when they still seem a little undercooked, they’ll be absolutely perfect.
  6. Season them and add your favorite topping.
    Add the salt to the eggs all the way to the end. This is because it wicks away moisture, so if you add it too early or at the very beginning, it can dry out the eggs.
