Mini Ice Cream Sugar Cookie Cups

YUMMY Summertime Recipe featuring Do You Bake? Sugar Cookie Mix. An easy make ahead recipe! Total Kiddo approved and delicious for all ages! This recipe makes for a beautiful summertime presentation.

  1. Prepare Do You Bake? Sugar Cookie Dough Mix to directions
  2. Preheat Oven to 350F
  3. Lightly grease mini muffin cups
  4. Roll out cookie dough to 1/4 - 1/2 " thick. Using a small glass or round cookie cutter, cut cookie dough into rounds (sized to fit your mini muffin cup pan)
  5. Press 1 cookie dough round in each muffin cup.
  6. Bake 15 to 20 minutes until golden brown, remove from oven.
  7. While cookies are still warm and inside the tins, place 2 teaspoons of granulated sugar in a small bowl or ramekin. Dip end of wood spoon handle in sugar; carefully press handle into center of each cookie cup to make a 1" wide indentation.
  8. Cool Cookie Cups completely in pan, about 15 to 20 minutes
  9. While cookies are cooling, in a small bowl, mix the remaining 2 teaspoons of sugar and chocolate chips. Microwave on high 30 to 60 seconds, stirring after 30 seconds until smooth.
  10. Chop your nuts of choice into small pieces and place them on a flat dish or cutting board
  11. Run a knife around edges of cups to loosen, gently remove from pan. Dip rim of each cup in melted chocolate and then into your finely chopped nuts of choice. Place Cookie cups on cookie sheet.
  12. Once chocolate is set (you can also freeze the cups for 5 minutes) spoon vanilla ice cream (or favorite ice cream flavor) into sugar cookie cups, using a small coookie scoop or measuring tablespoon. Top with fresh fruit or jam, serve immediately.
  YUMMY TIP : You can store cookie cups for2 to 3 days in an airtight container. Fill with ice cream and top with fruit before serving.
