Ingredients for the body
- 400 g of fresh baby spinach or frozen leaf spinach
- 3 large eggs
- 3/4 – 1 cup powdered sugar
- 3/4 cup oil
- 2 cups plain flour
- 2.5 teaspoons of baking powder
- 2 tablespoons of lemon juice
- zest of 1 lemon
Cream ingredients
- 250 ml whipping cream
- 125 g of mascarpone cheese
- 1.5 teaspoons of powdered sugar
- 1 teaspoon vanilla or lemon extract or lemon juice
Method
- Preheat the oven to 170°C and line a cake tin with baking paper.
- If you have frozen leaf spinach, thaw it in a strainer over a bowl to drain all the water. Then squeeze it some more to remove all the moisture.
- Blend the fresh baby spinach in a blender into a fine puree.
- In a large bowl, beat the eggs with the sugar until thick and fluffy. Gradually add oil and beat. Then add the spinach puree, lemon juice and zest. Mix until everything is combined.
- Finally, add sifted flour with baking powder and mix until a smooth dough is formed.
- Pour the resulting dough into the prepared cake mold and bake for 40-45 minutes. Test with a toothpick to see if the body is ready and then let it cool.
- Meanwhile, prepare the cream by whisking all the ingredients in a large bowl until stiff.
- Cut the cooled carcass flat on the surface. Keep the scraps aside, you will need them to decorate the cake.
- Cut the carcass horizontally into two parts. Spread a generous layer of cream on the first layer and reserve 3 tablespoons to spread over the top of the cake.
- Crumble the scraps you set aside on top. Finally, decorate the cake with blueberries and pomegranate seeds. Leave the cake to harden in the fridge and serve.

Gluten-free moss cake
If you want to bake this kind of cake for someone with celiac disease, this recipe is a great choice.
Ingredients for the body
- 250 g of fresh spinach (baby)
- 250 g of gluten-free flour
- 60 g of rice flour
- 3 eggs (room temperature)
- 180 g granulated sugar
- 180 g of vegetable oil
- 1 packet of baking powder
- zest of 1/2 lemon
- 1 tablespoon of lemon juice
Cream ingredients
- 400 ml of whipping cream
- 500 g of mascarpone cheese
- 170 g of powdered sugar
- 1 teaspoon of vanilla extract
Method
- First, wash the spinach, let it drain, then squeeze out all the water and moisture with your hands. Then blend the spinach into a fine puree.
- Line the cake tin with baking paper and preheat the oven to 170°C.
- In a large bowl, beat the eggs, sprinkle in the sugar and beat until fluffy. The mass should double in volume and be light in color, which will take you about 5-8 minutes.
- Then pour the oil into the mixture while constantly whisking. Also add the blended spinach, lemon zest, lemon juice and beat briefly.
- In another bowl, sift the flour with the baking powder and then work it into the prepared dough base.
- Pour the resulting dough into the prepared mold and bake for 45-50 minutes. Test with a toothpick to see if the body is ready, then remove from the oven and let cool completely.
- Meanwhile, prepare the cream. In a bowl, mix the mascarpone, sugar, vanilla extract, add the whipping cream and beat until the mascarpone is combined with the cream and you have a stiff cream.
- Cut the cooled carcass evenly into two high plates and a third slightly lower plate. Set the third sheet aside, you will need it for crumbs to sprinkle on the cake.
- Apply the smaller half of the cream on the bottom sheet and cover with the second sheet of the corpus. Spread the same amount of cream on top again and brush the sides of the cake with the remaining cream.
- Break the sheet you set aside into small crumbs and sprinkle them over the top and sides of the cake.

Can’t make it? Try this sponge cake with cottage cheese baked on a baking sheet, which you can do once or twice. Not only is it simple, but everyone will enjoy it!
Dough ingredients
- 200 g semi-coarse flour
- 50 g of almond flour
- 150 g of fresh spinach or spinach puree
- 1/2 package of baking powder
- 3 eggs (room temperature)
- 130 g of granulated sugar

- 80 ml of oil
- juice of 1/2 lemon

- 500 g of cottage cheese in a tub

Method
- Let the spinach thaw, drain and squeeze out the excess liquid. Then blend to a fine puree. Wash the fresh spinach, squeeze out the water and also blend it into a fine mush.
- Mix the flour with the baking powder in a bowl, then add the almond flour and leave the flour mixture aside.
- In another bowl, put the yolks (separated from the whites – keep them), lemon juice, vanilla extract, oil and spinach puree. Whisk to combine.
- Beat the egg whites with a pinch of salt to a semi-stiff consistency. Then sprinkle sugar and beat until stiff snow.
- Finally, you mix everything together – spinach mixture with loose ingredients and finally mix in the egg whites.
- Pour the resulting dough onto a greased and floured baking sheet and bake in a preheated oven at 180°C for 10-15 minutes.
- Leave to cool after baking and prepare the cream in the meantime.
- Mix cottage cheese, sour cream and thickener. Beat everything for about 5 minutes.
- Cut the cooled carcass evenly into two sheets. Cut the top of the body flat and put the scraps aside. Spread the first layer with jam and half of the cream cheese. Place the second part of the body on top of the cream and spread the cream again.
- Sprinkle the top of the bun with the crumbled scraps you saved. Put the finished cake in the fridge and serve.

- 250 g of mascarpone
- 200 g of sour cream

Method

- In a separate bowl, mix the sifted flour with the baking powder.
- In another bowl, beat the egg whites with salt. Gradually add sugar and mix so that the snow is still just stiff.
- Then mix the dry ingredients with the spinach puree. Finally, mix in the snow in parts as well.
- Pour the finished dough into the prepared mold and bake at 180°C for about 55 minutes. Test with a skewer to see if it’s done. Leave to cool on a wire rack.
- In the meantime, prepare the cream by mixing all the ingredients together.
- Cut the cooled carcass flat on top and keep the scraps aside. Also trim the brown and burnt edges of the cake. Cut the carcass in half.
- Apply a strip of cream about 1 cm wide around the perimeter of the body, which will create a higher edge for the marmalade, which at least will not leak.
- Put half of the marmalade inside the circle you made from the cream and spread it evenly. Then cover the marmalade with cream.
- Place the top layer of the corpus on top of the cream. Create a raised edge again, spread jam inside and then cream. Flatten the top of the cake.

- 160 g of leaf spinach
- 1/2 cup coconut milk
- 4 eggs (room temperature)
- 1/2 teaspoon of vanilla extract
- sweetener or sugar to taste
- 300 g fine almond flour
- 30 g of coconut flour
- 2 teaspoons of baking powder
- 1 teaspoon of baking soda
- 2 egg whites (whipped)
Cream ingredients
- 500 ml whipping cream
- 250 g of mascarpone
- 1 teaspoon of vanilla extract

Method
- First, preheat the oven to 170°C. Wash the spinach and squeeze out the excess water so that the dough is not too wet.
- Blend the spinach with coconut milk, sugar and eggs into a smooth cream.
- Mix flour and baking powder with baking soda in a bowl. Then add spinach puree, vanilla extract to the bowl and mix.
- In a separate bowl, beat the egg whites until stiff and carefully fold them into the batter. Put the resulting dough in the mold and bake for 45-55 minutes. Test with a skewer to see if it’s done.
- Allow the finished body to cool and then hollow out with a spoon so that the body remains about 1 cm high and the edges a little higher. You will make such an enclosure for the cream.
- Align the carcass with a knife, cut off the brown and burnt sides to make it green. Set the scraps and hollowed out pieces aside.
- In a bowl, whip the cream until stiff. Next, mix the mascarpone with the vanilla extract and then carefully mix in the whipped cream. Let it sit in the fridge.
- You finish the cake by stacking fresh fruit into the hollowed-out body, layering cream on top, which you shape into a mound/mole lump. This is then sprinkled with crumbled hollowed out pieces and carefully pressed into the cream.
- Put the finished cake in the fridge for about an hour and then serve.
