The best Bavarian pancakes

One of the best sourdough specialties. These are Bavarian jam buns.

INGREDIENTS

  • 500 g semi-coarse flour
  • a cup of milk
  • 25 g of yeast
  • 25 g of butter
  • 1 spoon of sugar
  • 1 egg yolk
  • pinch of salt

To decorate the muffins:

  • a glass of plum jam
  • cottage cheese/cream

METHOD

  1. Add sugar to the milk and crumble the yeast.
  2. Leave to rise in a warm place.
  3. Add a teaspoon of salt to the flour, mix and add the dissolved yeast.
  4. Add the yolk and melted butter. We will make the dough so that it is flexible.
  5. Let it rise under a towel for another hour.
  6. Roll out the dough to a thickness of 2 cm and cut out circles.
  7. In addition to the classic round shape, we can also use other shapes for unfilled pastry dough and join several of them together or process the dough by hand into different rolls, which we can also interweave.
  8. Let the shapes rise on the table for about 10 minutes and then fry them in oil on both sides with the lid closed.
  9. Decorate the buns with a dollop of jam and a cottage cheese cap.

Savory muffins with poppy seeds

However, we must also mention the salty version of poppy seed muffins, which are very popular.

INGREDIENTS

  • 7 and ½ cup bread flour
  • 5 teaspoons of salt
  • 2 teaspoons of dry yeast
  • 1 teaspoon of sugar
  • 3 cups of water

To fill:

  • 2 tablespoons of oil
  • 1 large onion
  • poppy seeds for sprinkling
  • egg for brushing

METHOD

  • Pour flour into a bowl, add salt, pour lukewarm water and add dried yeast and a teaspoon of sugar.
  • Then we thoroughly work out a dense dough, which we leave to rise in a warm place for at least an hour.
  • Then we roll the dough into a pancake, cut out circles using a glass, flatten the centers of the muffins, cover with a tea towel and leave to rise again for at least half an hour.
  • Cut the onion into cubes and fry.
  • Then brush the muffins with a beaten egg, put a fried onion in the wells and cover everything with poppy seeds.
  • Bake the muffins at 230 °C.
  • Bake for about 12-15 minutes.

  • 300 g plain flour
  • 50 g of yeast
  • 50 ml of milk

  • 30 g lard

  • 1 vanilla sugar
  • a teaspoon of rum
  • about 50 g of butter for spreading
  • 250 g of butter for the fat dough
  • 100 g plain flour for fat dough

METHOD

  1. Crumble the yeast into the lukewarm milk, add a teaspoon of sugar, three tablespoons of flour, mix and let it rise, covered. In the meantime, we will prepare the fat dough.
  2. Mix softened butter with flour, knead thoroughly by hand and leave to cool.
  3. Put flour in a bowl, add yeast, sugar, cream, melted fat, egg yolks, salt, vanilla sugar, rum and make a smooth, elastic dough. We work it well and let it rise in a warm place for another hour.
  4. Roll out the risen dough into a square.
  5. We also roll out the fat dough – half the size of the yeast dough.
  6. Put half of the leavened dough on the fat dough, fold the other over and roll out the dough.
  7. Then fold the combined dough into thirds and let it rise covered. Roll out and fold into thirds 2 more times.
  8. Divide the dough prepared in this way into thirds. We gradually roll each part into a thin layer.
  9. Divide into palm-sized squares and place a ball of cottage cheese in each. Wrap the balls well and place them seam side down.
  10. We make a hole with our finger, which we fill with jam, put a crumb on top.
  11. Bake in a preheated oven for 10 minutes at 250 °C.
  12. Then, while it’s still hot, brush it with butter.
  13. We prepare the fried version without crumbs and fry in oil on both sides until golden, finally sugar with powdered sugar.

  • Knead everything thoroughly, cover the dough again and let it rise in a warm place for another 30 minutes.
  • Then we make a roll from the dough and divide it into 12 pieces.
  • We make a ball from each piece, which we flatten so that the pancake is the thinnest in the middle.
  • Place the muffins on a floured roll, cover again with a tea towel and leave to rise for another 10 minutes.
  • Then fry the muffins in a sufficient amount of hot fat on both sides for about 5-7 minutes until golden brown.

Why are muffins actually called muffins? Perhaps this was caused by the creation of a hole in the middle of the dough. It is there on purpose to make the center easier to bake and at the same time to keep the filling in place.

Unlike doughnuts, the buns are not filled, but the filling is placed on top of them. This traditionally includes cottage cheese, jam, but also sour cream, whipped cream, marmalade, or even honey and cinnamon.

The dough is typically leavened, but today it has also seen simpler variations, where baking powder or baking soda can be used. You will get similar processing in a fraction of the time.

Although nowadays recipes for muffins are fried, according to our grandmothers they were baked on the griddle.
