Mushroom cube like from grandma
Christmas cube is prepared in different ways. While some make it from bulgur, others from groats. It has been made from hailstones since ancient times. So, if you want the mushroom cube to be grandma’s style, proceed as follows.
INGREDIENTS
- 1/2 cup dried mushrooms (soak in water for 30 minutes before using)
- 1 cup of grits
- 2 tablespoons of melted butter
- 1 and 1/2 cups of broth or water
- 2 onions
- 6 cloves of garlic
- 1 teaspoon cumin
- salt and pepper to taste
METHOD
- Wash the mushrooms, soak and set aside.
- Melt the butter in a deep saucepan over low heat.
- Add the rinsed hailstones to it, let them fry for a while, but do not burn them.
- As soon as the hailstones turn yellow, add mushrooms, stock, salt and pepper to them.
- Cook the mushroom cube for about 45 minutes.
- Stir it so it doesn’t burn to the bottom of the pot.
- If necessary, add a little water or broth during cooking.
- Roughly 15 minutes before the end of cooking, fry the finely chopped onion and garlic in butter in a separate pan.
- Meanwhile, preheat the oven to 180°C.
- Once the mushroom cube is ready, add the prepared onion with garlic, marjoram and cumin.
- Mix it up.
- Prepare a baking pan, grease it with butter and pour the mushroom cube into it.
- Bake it for about 15 to 25 minutes.
- Old Bohemian mushroom cube is served with pickled cucumbers.

Risotto à la mushroom cube
You will love this luxurious dish and you can prepare it at any time of the year! This cuba is made special with white wine, chili peppers, sausage and slaw, making it a truly unique dish.
INGREDIENTS
- 250 g of barley groats
- 0.05 l of oil
- 150 g of onion
- 30 g of garlic
- 5 g of chili peppers
- 0.5 l of chicken broth
- 0.1 l of white wine
- 10 g of dried mushrooms
- 10 g, fresh marjoram
- 200 g of sausage
- 160 g of niva
- 40 g of butter
- salt and ground black pepper to taste
METHOD
- Boil the grits in boiling salted water for about 20-25 minutes.
- Soak the dried mushrooms in lukewarm water.
- Fry the onion, garlic and fresh chilli in the oil.
- Add the chopped soaked dried mushrooms and deglaze with wine.
- When the wine has evaporated, add the water from the dried mushrooms and pour over the broth.
- Add the pre-cooked grits, which will cook in the liquid and absorb as much of the mushroom flavor as possible.
- Finally, soften with cold butter and season with fresh marjoram.
- When serving, cut the grilled sausage into cubes and crumble the niva.
- Enjoy it!

Christmas bulgur cube
Of course, not everyone likes hail. However, they can easily be replaced in the mushroom cube, for example with bulgur. Bulgur is a pre-cooked whole wheat that is rich in vitamins, minerals, fiber and antioxidants. If you like bulgur and consume it for its benefits, be inspired by other bulgur recipes .
INGREDIENTS
- 100 g of bulgur
- 35 g of dried mushrooms
- 10 g of unsalted butter
- olive oil for frying and wiping the baking sheet
- 1 onion finely chopped
- 6 thyme leaves
- 200 g of finely chopped fresh mushrooms
- clove of garlic
- 1 tablespoon of dry vermouth
- 1 egg
METHOD
- Put the bulgur in a large bowl, pour warm water into it so that it is about 1.5 centimeters above it.
- Season with salt and pepper, then cover with foil.
- Leave the bulgur like this for about 20 minutes until it absorbs the water and becomes soft.
- Then uncover it and let it cool.
- Meanwhile, soak the dried mushrooms in water for about 15 minutes, then cut them into pieces.
- Heat the butter and a little olive oil in a pan.
- Fry the onion with thyme.
- Add the fresh mushrooms and garlic and cook, stirring constantly, for about 5 minutes.
- Salt the mushrooms, pour vermouth into them and also put dried mushrooms in them.
- Then cook the mixture on high heat until all the water evaporates.
- Stir the bulgur into the mushrooms and let the mixture cool.
- Then add the egg and let the mushroom cube cool for at least 20 minutes.
- Meanwhile, preheat the oven to 180°C.
- Grease the tray with oil and pour the mushroom cube without grits on it.
- Bake it for about 15 to 20 minutes.

Buckwheat cube with bacon and cheese
Prepare a Christmas mushroom cube from buckwheat, add bacon, bake with cheese and you will enjoy it divinely!
INGREDIENTS
- 2 handfuls of dried mushrooms
- 150 g of bacon
- salt and ground black pepper to taste
- garlic
- marjoram
- lard
- 1.5 cups of buckwheat
- grated cheese
METHOD
- Soak the mushrooms in water overnight.
- Fry the bacon, foam the diced onion on it, add the mushrooms and simmer.
- Boil the buckwheat in salted water, mix with the mushroom mixture, season with salt, marjoram, pepper and garlic.
- Place the mixture in a baking dish, drizzle with lard (if you have fattier bacon, you don’t need to add lard), sprinkle with cheese and bake until the surface is golden.
- Serve with sauerkraut salad.

Christmas cube with mushrooms, turkey and cabbage
Try a completely new version of the traditional mushroom kuba, this time with sauerkraut and turkey meat. A delicacy!
INGREDIENTS
- 200 g of groats
- a handful of wild mushrooms
- 1 kg of turkey legs
- 1 kg of sauerkraut
- onion
- garlic
- oil
- caraway seeds
- ground paprika
- salt and pepper to taste
METHOD
- Rinse the hail several times well in cold water.
- If you use spelled groats, they soften very quickly when boiled, other types need to be boiled for 20-30 minutes (they don’t have to be completely soft).
- Cut the meat into larger pieces, soak the mushrooms, chop the sauerkraut, onion and garlic.
- Saute onion and garlic in oil and add ground pepper.
- Next, add the meat, mushrooms and water, cumin, ground pepper and salt.
- Finally, add the cabbage and simmer for 20 minutes or until the meat is completely tender.
- Mix pre-cooked grits into the finished mixture.
- Transfer the mixture to an oiled baking dish, smooth and bake in the oven for about 40 minutes.
