What will we need

  • 30 g of butter
  • 1/2 tablespoon of olive oil
  • 300 g mushrooms (sliced)
  • A pinch of salt and pepper
  • 2 cloves of garlic
  • 65 ml white wine (dry)
  • 125 ml of chicken or vegetable stock
  • 250 ml of heavy cream
  • 30 g parmesan (finely grated)
  • 2 teaspoons of fresh thyme leaves

Method

  • Heat the oil in a pan and melt the butter over medium-high heat.
  • Add the mushrooms and cook slowly until golden, about 4 to 5 minutes.
  • Just before they are done, add the garlic and a pinch of salt and pepper.
  • Cook until the garlic turns golden.
  • Add the white wine.
  • Stir for 1 minute or until almost evaporated.
  • Add stock, cream and Parmesan cheese.
  • Stir, then reduce the heat to medium to simmer the mushroom sauce.
  • Stir occasionally and cook for 2-3 minutes until thickened.
  • Stir in the thyme, salt and pepper to taste. Remove from the stove.

Wine – any dry white will do here, avoid woody / oaky (eg Chardonnay) and sweet. Try Sauvignon Blanc and related varieties, Pinot Gris and Rosé wines are also great.

  • 500 g of fresh potato gnocchi
  • 4 tablespoons of olive oil
  • 1 small brown onion (finely chopped)
  • 2 cloves of garlic
  • 300 g mushrooms (cut into thick slices)
  • 200 g of mushrooms (cut into thick slices)
  • 250 ml of chicken stock
  • 300 ml of thickened cream
  • 1 small bunch of sage
  • 100 g baby spinach leaves

Method

  • Cook the gnocchi in a large pot of gently simmering water according to package directions.
  • Heat 2 tablespoons of oil in a deep saucepan over medium heat.
  • Add the onion and garlic and cook, stirring frequently, for 5 minutes or until softened.
  • Add the mushrooms and cook, stirring occasionally, for 4 minutes until softened.
  • Add stock and bring to a boil. Cook gently for 5 minutes.
  • Stir in the cream, reduce the heat to medium and simmer for 5 minutes or until the sauce has reduced slightly. Season to taste.
  • Heat the remaining oil in a large skillet over medium-high.
  • Add the sage and cook for 2-3 minutes, then remove to a plate.
  • Increase the heat to high, in two batches, add the gnocchi to the pan and fry for 2 minutes until golden on both sides.
  • Return all the gnocchi to the pan. Add the spinach and mushroom sauce, tossing to coat the gnocchi. Garnish with sage.

Pork tenderloin with creamy mushroom sauce

What will we need

  • 500 g pork tenderloin (cut into medallions)
  • salt
  • pepper
  • 1 tablespoon of olive oil
  • 45 g of butter
  • 250 g of mushrooms
  • 3 cloves of garlic
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon Italian seasoning
  • 80ml chicken/beef stock or wine (dry white or sherry)
  • 160 ml thick whipping cream

Method

  • Cut the doll and season each piece with salt and pepper.

  • Sear the pork for 3 minutes on each side, then transfer to a plate.

  • 250 g mushrooms (sliced)
  • 1 clove of garlic
  • 100 ml of dry white wine
  • 200 ml thick cream
  • 1 lemon (rind)
  • 200 g Parmesan cheese
  • 300 g tagliatelle or linguini
  • ½ small bunch parsley (finely chopped)

Method

  • Heat the oil and butter in a medium saucepan. Fry the onion on a medium heat for 10 minutes or until softened.
  • Add the mushrooms and cook for 10 minutes over medium heat. Add the garlic and cook for 2 minutes.
  • Add the wine and bring to a boil, reduce the liquid by half.
  • Add the cream and bring to the boil, then add the lemon zest and Parmesan.
  • Season with salt and plenty of black pepper.
  • Meanwhile, cook the pasta according to package directions. Reserve 100 ml of the pasta water.
  • Toss the pasta in the pan with the creamy mushroom sauce and enough reserved water.
