  • Melt the butter in a large saucepan. The soup is perfectly prepared in a cast iron pot.
  • Add the mushrooms and shallots to the pot. Cook, stirring occasionally, until everything is soft. This will take about 6-8 minutes.
  • Stir in the garlic and let it become fragrant.
  • Add the wine and mix everything well.
  • Add chicken stock, thyme and bay leaf to everything. Season with salt and pepper and cook, at the lowest temperature, for 10 minutes.
  • Cover the pot and simmer for another 10 minutes.
  • Remove the mushroom soup with potatoes from the heat, stir in the parsley and serve immediately.

  • 500 g of dried mushrooms
  • 100 g of white beans
  • 2 potatoes
  • 2 sprigs of fresh thyme or ½ teaspoon of dried thyme
  • 2 tablespoons of butter
  • 2 cups of boiling water
  • 1 tablespoon of balsamic vinegar
  • 4 minced garlic cloves
  • 2 onions (finely chopped)
  • 1 small spring onion (chopped)
  • 1 liter of beef broth
  • 1 teaspoon of salt
  • ½ teaspoon of pepper
  • 1 bay leaf
  • 1 dcl of white wine
  • fresh parsley (finely chopped), thyme leaves or chives


  • Before cooking, soak the beans in water, ideally overnight.
  • Soak the dried mushrooms in hot water and strain them after softening.
  • Melt the butter in a pan, fry the onion and add the mushrooms. Then saute together.
  • Pour in the stock and add the spices and wine. Cook for about 1 hour, until the beans are tender.
  • About halfway through the time the mixture is cooking, add the potatoes, cut into smaller cubes, to the soup.
  • Cook until the potatoes are soft. It doesn’t matter if part of the potatoes boil over – it thickens the soup.
  • Remove the bay leaf from the soup and season with balsamic vinegar, salt and pepper.
  • Garnish the prepared mushroom soup with fresh herbs and serve.
