Vegan sauce:
- 3 cups of vegetable broth
- 2 tablespoons white shiro miso paste

- 2 tablespoons of Tamari gluten-free soy sauce
- ¼ cup yeast
- ¼ cup organic rose hip powder (purchased at a health food store)
- ¼ cup vegan butter
Method
Potatoes:
- Preheat the oven to 200°C.
- Using a fork, make a hole on the sides of each potato – this will help the heat to escape during baking.
- Wrap each potato in foil and bake in the oven for 40-50 minutes.
- While the potatoes are baking, prepare the pan.
- Heat the coconut oil in a pan and fry the garlic, mushrooms and season everything with a pinch of salt. Cook for 5-10 minutes.
- Mix the almond butter, balsamic vinegar and lemon juice in a bowl. Pour everything over the vegetables in the pan. Continue cooking until the mushrooms are browned and tender.
- Add the spinach and cook for 2-3 minutes.
- Slice the baked potatoes and fill with the mushroom mixture from the pan.
- When unpacking, be careful not to get scalded by the steam that has accumulated in the foil.
Vegan Sauce:
- In a blender, combine the vegetable stock, miso paste, onion powder, soy sauce, yeast, and rose hip powder. You can replace it with flour or cornstarch. Mix well to combine all the ingredients.
- Melt the vegan butter in a saucepan and add the blended mixture. Cook until the sauce starts to thicken. This will take about 8-10 minutes.
- Pour the finished sauce over the potatoes and serve.

- 4 large portobello mushrooms (drained with a paper towel)
- 2 tablespoons of olive oil
- 1 large onion (finely chopped)
- 2 medium zucchini (diced)
- 1 roasted red pepper (diced)
- 4-6 sun-dried tomatoes (chopped)
- 2-3 cloves of garlic (pressed)
- 1 large handful of spinach
- a pinch of dried oregano
- pepper
- ¼ cup dried breadcrumbs
- ¼ cup Parmesan (grated)
- ¼ cup mozzarella (shredded)
Method
- Preheat the oven to 190°C and prepare a tray lined with baking paper.
- Using a small spoon, carefully scoop out the gill part of the mushroom and, with a small knife, remove the stem.
- Brush each mushroom with a little olive oil and place on the prepared baking sheet, hollow side up.
- Heat the olive oil in a pan and fry the onion in it. Sauté for 3-4 minutes, then add the zucchini. Fry until the zucchini is soft.
- Add red pepper and tomatoes. Cook for another few minutes.
- Once the onion is translucent and the vegetables are soft, add the garlic. Cook for 1 minute and add the spinach.
- Once the spinach has wilted, remove the pan from the heat and add the rest of the ingredients, except the parmesan. Stir well.
- Divide the mixture into 4 equal parts and fill the mushrooms with it.
- Place in the oven and bake for 35-40 minutes.
- Once the portobello mushrooms are cooked, remove them from the oven and top each with 1 tablespoon mozzarella. Place back in the oven and bake for a further 10-12 minutes.
- Finally, sprinkle each piece with a little parmesan and serve immediately.
