  • 4 potatoes
  • 4 cups dried mushrooms
  • 4 cups baby spinach
  • 2 cloves of garlic (finely chopped)
  • 1 tablespoon of coconut oil
  • 1 tablespoon of almond butter
  • 1 tablespoon of balsamic vinegar
  • lemon juice (from 1 lemon)
  • pinch of salt

Vegan sauce:

  • 3 cups of vegetable broth
  • 2 tablespoons white shiro miso paste
  • 1 tablespoon of onion powder
  • 2 tablespoons of Tamari gluten-free soy sauce
  • ¼ cup yeast
  • ¼ cup organic rose hip powder (purchased at a health food store)
  • ¼ cup vegan butter

  • Preheat the oven to 200°C.
  • Using a fork, make a hole on the sides of each potato – this will help the heat to escape during baking.
  • Wrap each potato in foil and bake in the oven for 40-50 minutes.
  • While the potatoes are baking, prepare the pan.
  • Heat the coconut oil in a pan and fry the garlic, mushrooms and season everything with a pinch of salt. Cook for 5-10 minutes.
  • Mix the almond butter, balsamic vinegar and lemon juice in a bowl. Pour everything over the vegetables in the pan. Continue cooking until the mushrooms are browned and tender.
  • Add the spinach and cook for 2-3 minutes.
  • Slice the baked potatoes and fill with the mushroom mixture from the pan.
  • When unpacking, be careful not to get scalded by the steam that has accumulated in the foil.

Vegan Sauce:

  • In a blender, combine the vegetable stock, miso paste, onion powder, soy sauce, yeast, and rose hip powder. You can replace it with flour or cornstarch. Mix well to combine all the ingredients.
  • Melt the vegan butter in a saucepan and add the blended mixture. Cook until the sauce starts to thicken. This will take about 8-10 minutes.
  • Pour the finished sauce over the potatoes and serve.

Mushroom pie with parmesan cheese

You can serve this unusual dish both as an appetizer and as an original side dish. It tastes great with pork or beef, for example.

  • 800 g of wild mushrooms or champignons
  • 200 g of creamy processed cheese
  • 1 cup grated cheddar
  • 1 cup grated Parmesan cheese
  • 2 cups breadcrumbs
  • 1/2 cup fresh parsley
  • 6 cloves of garlic
  • 6 tablespoons of olive oil
  • 4 tablespoons of butter
  • salt pepper

  1. Preheat the oven to 180°C.
  2. Lightly fry half the amount of quartered mushrooms in a pan with oil.
  3. Add half of the pressed garlic, salt and pepper to them and simmer the mushrooms for a few minutes.
  4. When the mushrooms have released all their liquid, remove them from the pan and prepare the second half of the mushrooms in the same way. If you would like to saute all the mushrooms at once, due to their quantity, it could happen that they would not be sauteed thoroughly, so we recommend this procedure.
  5. Put all the fried mushrooms in a bowl and add melted cheese cut into pieces.
  6. Mix everything thoroughly until the cheese melts.
  7. Next, add one cup of breadcrumbs, grated cheddar, half a cup of Parmesan and most of the chopped parsley to the mixture.
  8. Mix everything thoroughly so that the individual ingredients are well incorporated.
  9. Transfer the mixture to a baking dish or baking pan.
  10. In another bowl, mix together the melted butter, remaining breadcrumbs and Parmesan cheese.
  11. Add a little salt and then sprinkle this mixture over the mushrooms in the baking dish.
  12. Place in the preheated oven and bake for approximately 25-30 minutes.

Serve the mushrooms baked in this way sprinkled with the remaining parsley.
