Spring nettle soup
If for some reason you avoid dairy products, this soup can also be prepared without cream. Its taste will be just as delicious!
Ingredients:
- 4 cups fresh young nettles
- 1/2 cup shallots
- 1/2 cup celery
- 2-3 potatoes
- 4 cups chicken stock
- 2 cups of water
- 1 and 1/2 tbsp fresh lemon juice
- 3 tablespoons of whipped cream
- 1 tbsp olive oil
- 1 bay leaf
- 1 teaspoon of butter
- 1/2 teaspoon dried thyme
- salt pepper
Method:
- Bring salted water to a boil in a pot.
- Throw in the nettles and blanch them for about 2 minutes.
- Then transfer the nettles from the boiling water to a bowl of ice water.
- Cut off the thicker stems from the nettles.
- Heat the olive oil in a saucepan and fry the chopped shallots and celery in it for about 5 minutes.
- Add the diced potatoes, chicken stock, bay leaf and thyme to the pot.
- Bring to a boil and cook for approximately 5 minutes.
- Chop the nettles and add them to the pot as well.
- Add two cups of water and cook over low heat, stirring occasionally, for about 15 minutes until the potatoes are tender.
- Remove the bay leaf from the pot and use an immersion blender to blend the mixture until smooth.
- Add lemon juice, whipped cream and season with salt and pepper.
The nettle soup is served sprinkled with black pepper and garnished with a sprig of mint.

Gentle nettle cream
This fresh green creamy soup can be a very healthy and tasty dinner. If you want to achieve a thicker cream, add more potatoes or possibly other vegetables such as carrots, parsley or celery.
Ingredients:
- 2 cups fresh young nettles
- 1 onion
- 3 cloves of garlic
- 2 potatoes
- 2 cups of water
- 1 bouillon cube
- 1 Tbsp fresh lemon juice
- salt pepper
Method:
- Rinse the nettles and remove the thicker stems.
- Heat the oil in a pot and let the chopped onion vitrify on it.
- Then add the pressed garlic and let it become fragrant.
- Add the chopped potatoes, broth made from the bouillon and water to the pot.
- Mix thoroughly, cover with a lid and let it cook for about 10 minutes.
- When the potatoes are a little soft, add the chopped nettle leaves to the pot and cook for about a minute.
- Add the lemon juice and blend everything using an immersion blender.
- Season with salt and pepper.
Serve the nettle cream drizzled with olive oil and sprinkled with seeds.

Creamy soup of young nettles, leeks and potatoes
The taste of nettle goes very well with whipped cream or cream. Try their combination in this delicious soup!
Ingredients:
- 2 cups fresh young nettles
- 4 leeks
- 3-4 potatoes
- 1 cup of whipped cream
- 4 cups chicken stock
- 1/3 cup dill
- 2 tablespoons of butter
- olive oil
- salt pepper
Method:
- Wash the leek and cut its white part into rounds.
- Then boil it until soft in a pot in which you have melted butter and a little oil.
- Then add diced potatoes to the leek, cover with broth and cook gently in a pot covered with a lid for approximately 20 minutes.
- In the meantime, blanch the nettles in a pot of hot water and then in a bowl of cold water.
- When the potatoes are soft, add the nettles, dill, cream and spices to the pot.
- Mix and then blend into a smooth puree with an immersion cooker or with the help of a food processor.
Nettle soup with leeks and potatoes is served with fresh bread and garnished with sour cream.

Nettle cream soup with bacon
This soup doesn’t always have to be just for vegetarians. You can easily add pieces of bacon or smoked meat to it.
Ingredients:
- 4 cups fresh young nettles
- 200 g of bacon
- 1 onion
- 3 potatoes
- 1/3 cauliflower
- a few broccoli florets
- 3 cloves of garlic
- 1/2 cup whipping cream
- 4 cups of vegetable broth
- 1 Tbsp butter
- fresh juice of one lemon
- 1 teaspoon Dijon mustard
- 1 bay leaf
- thyme
- salt pepper
Method:
- Heat the butter in a saucepan and gently cook the chopped onion, potatoes, cauliflower and broccoli in it for approximately 6-7 minutes.
- In the meantime, cut the bacon into cubes and fry it in a pan.
- Then add pressed cloves of garlic, bay leaf, stock, mustard, salt and pepper.
- Mix everything thoroughly and bring to a boil.
- Cook for approximately 10-15 minutes until the vegetables are tender.
- In the meantime, wash the nettles, remove the thicker stems and blanch them using hot and then cold water.
- Then add the nettle leaves to the pot and cook for 1-2 minutes.
- Add lemon juice and blend until smooth with an immersion blender or food processor.
- Then add the whipped cream and thyme to the puree.
- Taste and add salt if necessary.

Nettle and zucchini soup with sunflower seeds
If you are preparing the soup as part of a spring menu for guests, decorate it with edible flowers and seeds. The gourmet experience will be perfect.
Ingredients:
- 2 cups fresh young nettles
- 1 zucchini
- 4 potatoes
- 1 clove of garlic
- 4 cups of vegetable broth
- sunflower seeds
- salt pepper
Method:
- Peel the zucchini and potatoes and cut them into cubes.
- Wash the nettles and remove the larger stems.
- Place the chopped potatoes, zucchini, nettles and crushed garlic in a pot and cover with broth.
- Bring the mixture to a boil, cover and cook for approximately 15 minutes until the zucchini and potatoes are tender.
- Blend until smooth using an immersion cooker or food processor.
- Season with salt and pepper.
The finished nettle soup is sprinkled with roasted sunflower seeds.

Vegetable soup with nettles
Soup with nettles does not always have to have only the typical form of cream. They can also be added to a classic broth with vegetables.
Ingredients:
- 2 cups fresh young nettles
- 6 baby potatoes
- 1 onion
- 2 carrots
- 1 parsley
- 1 small celery
- 3 stalks of celery
- 3 cloves of garlic
- 1 leek
- 2 tablespoons of olive oil
- 1 bay leaf
- spring onion
- dill
- parsley
- salt pepper
Method:
- Heat the oil in a saucepan and then add the chopped vegetables, i.e. onion, carrot, parsley, leek, celery, celeriac.
- Sauté the vegetables for approximately 5 minutes, add the pressed garlic and cook for another 2 minutes.
- Pour approximately two and a half liters of water into the pot and add the bay leaf.
- Lightly salt and bring to a boil.
- Cook in a covered pot for approximately 30-35 minutes.
- Add the whole baby potatoes to the pot and cook for about 10 more minutes, until the potatoes and other vegetables are completely soft.
- Finally, add the chopped nettles that you blanched before.

Why include nettle in your diet?
Most of us have not-so-pleasant childhood memories of nettle, when encountering it almost always caused a typical burn, itch and rash. However, nettle has also been used in medicine, cosmetics and cooking for several centuries. It brings a number of positive effects to our organism. These are most pronounced especially in fresh young plants.
In terms of vitamins, nettle is particularly rich in vitamins C, A and K, and also contains a number of minerals such as iron, phosphorus, magnesium, silicon and calcium. From the point of view of medicinal effects, the use of this herb for anemia or joint problems is known. Last but not least, it also has a beneficial effect on the detoxification of the blood and the entire organism.
