New Year’s canapés from corn baguette

INGREDIENTS

  • 3 corn baguettes
  • 300 g of cherry tomatoes
  • 2 large sprigs of fresh basil
  • 1 large clove of garlic
  • ½ small shallot
  • 4 tablespoons of creamy balsamic
  • 2 tablespoons of olive oil
  • 150 g of ricotta
  • salt and pepper

METHOD

  1. Cut the tomatoes into quarters with a sharp knife.
  2. Finely chop the shallot and garlic.
  3. In a bowl, whisk the creamy balsamic with the oil.
  4. Salt, pepper and marinate the vegetables for a while.
  5. Spread the corn baguette slices with ricotta, cover with marinated tomatoes and sprinkle with finely chopped basil leaves.

Traditional New Year’s Eve sandwiches

INGREDIENTS

  • 1 whole wheat lid
  • butter
  • egg
  • durable salami (Hercules, Uherak…)
  • tomato
  • cucumber
  • tater tots

METHOD

  1. Brush the wholemeal crust with butter and cover half of it with rounds of boiled eggs.
  2. We fold the salami and form a roll from it, which we push directly into the baguette with our fingers.
  3. Add tomato, cucumber and tartare.

New Year’s Eve appetizers in aspic

INGREDIENTS

for salad

  • 30 dkg of soft salami
  • 2 medium sized pickles
  • 2 medium sized onions
  • 1 glass of Moravanka
  • 250 ml of mayonnaise
  • pepper, salt and sugar to taste

on gelatin

  • 1 bag of finely ground gelatin
  • 450 ml of water
  • 3 tablespoons of vinegar
  • ½ tablespoon of salt
  • 1 and ½ tablespoons of sugar
  • a pinch of ground pepper

raw materials for rolls

  • 10 slices of ham
  • 5 hard-boiled eggs
  • 5 slices of hard cheese
  • 1-2 pickles
  • 10 strips of red pepper
  • 3 tablespoons of sterilized peas (can also be corn)

METHOD

  1. Let’s prepare a homemade salad.
  2. Chop or finely chop the salami, cucumbers, onions and Moravanka (without pepperoni).
  3. Drain the water from Moravanka through a strainer.
  4. Add majolica to the ingredients.
  5. Mix thoroughly and season to taste.
  6. Let’s prepare the gelatin.
  7. Pour cold water into the saucepan and season it with salt, sugar, vinegar and ground pepper.
  8. Mix everything thoroughly and add a bag of gelatin.
  9. Stir the gelatin thoroughly in the water with a whisk and let it rest for 10 minutes so that the gelatin swells.
  10. Then put it on a low flame and heat the gelatin while constantly stirring.
  11. Gelatin must not be boiled.
  12. As soon as the water starts to smoke more, take the saucepan off the stove.
  13. Allow the gelatin to cool to a lukewarm state.
  14. Before the gelatin cools down, arrange the aspic rolls.
  15. First, we fill the ham with salad . , roll up and store the rolls in the refrigerator.
  16. We will prepare the decorations.
  17. Peel and slice the eggs, prepare the cucumbers.
  18. Cut the smaller cucumber in half and cut it into a fan (into five connected slices). If we have large cucumbers, we cut them into diagonal slices. Cut a piece of capsicum into strips.
  19. We store in the refrigerator.
  20. Depending on the size of the rolls, we will choose a suitable form for aspic. It should have a flat bottom and a size such that rolls can be folded into it as economically as possible.
  21. I pour the cooled aspic into a bowl in about a centimeter layer. Put in the fridge.
  22. Let the aspic harden so that it already holds its shape , but is not yet hard.
  23. We stack the filled rolls on this layer.
  24. Then we add cooled aspic to the rolls so that it runs over them.
  25. Fill the mold to half the height of the rolls and let it harden again, but again not completely, only until semi-soft.
  26. Pour another small layer and let it harden again until semi-soft.
  27. We put decorations on the rolls.
  28. Cover with a layer of aspic, it should extend about 1 cm above the ingredients.
  29. Let it harden ideally overnight in the fridge.

Chicken or beef broth will definitely come in handy for New Year’s Eve treats. During New Year’s Eve, traditional foods can be lightened up with other popular foods such as cheese, smoked salmon, tuna, fruit, vegetables and popular quality foods.

Cheese spread with slaw

The softness of the cottage cheese and the distinct taste of niva complement each other perfectly in this spread.

INGREDIENTS

  • half a cup of your favorite cottage cheese
  • amount of niva at our discretion – a minimum of 100 g is suitable
  • butter approx. 50 g
  • 1 onion
  • clove of garlic
  • pepper, salt, chili to taste, or ground paprika

METHOD

  1. Mix cottage cheese and butter in a bowl, if necessary, use whisks.
  2. Add pre-grated fennel and finely chopped onion.
  3. Stir in the crushed clove of garlic.
  4. Season with salt, pepper and selected spices as needed. As a general rule – the more we put in the niva spread, the less salt we should add – the niva itself is quite salty.

We serve it on favorite pastries, we can decorate it with vegetables (cherry tomatoes, pickled cucumbers) or walnuts.

Ermine spread

Ermelín must not be missing from the New Year’s Eve table, and why not try something other than classic sandwiches and canapés.

INGREDIENTS

  • 2 pieces of Hermelín cheese
  • 2 eggs, hard-boiled
  • 100 g of white yogurt
  • 4 spoons of mayonnaise
  • 1 teaspoon full-fat mustard
  • salt and pepper
  • 1 apple

METHOD

  1. Coarsely grate the cheese and eggs into a large bowl.
  2. Add mayonnaise, white yogurt, mustard and finely chopped onion.
  3. Then we just salt and pepper.
  4. We can decorate apple slices.

We can serve with fresh vegetables on a fresh baguette.

Salad with herb ermine

Not everyone is in the mood for spreads and canapés on New Year’s Eve, if you are one of those looking for a light meal, this salad is a great choice.

INGREDIENTS

  • at least 2 ermines
  • arugula
  • tomatoes
  • Red onion
  • toast bread on croutons
  • a handful of walnuts
  • butter
  • salt. pepper, favorite salad spices (oregano, thyme, basil)
  • olive oil, balsamic vinegar
  • optional: garlic

The amount of ingredients depends on our preference – whether we want a more vegetable or cheese salad.

METHOD

  1. In order to speed up the preparation itself, we will first process the ingredients that need heat treatment.
  2. Fry the diced bread in butter. Fry for as long as you like to get crispy. We can also add garlic cut into thin strips to the pan.
  3. As soon as we are done, let it cool down while we prepare the other ingredients. Cut the tomatoes and red onion into small pieces, mix and season with salt and pepper.
  4. Let’s turn our attention to the ermines. We separate the creamy part from the mold, which we mix with the selected herbs in a bowl.
  5. Add arugula and nuts only when serving.

We serve everything together on one plate – chopped vegetables and fresh arugula, ermine paste (can be divided into smaller pieces with a spoon), sprinkled with walnuts and drizzled with olive oil and balsamic.

You can also experiment a little with the ingredients – you can add avocado, different seeds or different types of salad.

Filled ermine trefoils

This salty cheesy treat will delight any New Year’s Eve celebrant.

INGREDIENTS

  • 3 ermines
  • 1 cream cheese
  • Red onion
  • favorite spices (e.g. suitable for grilled ermine)
  • salt, pepper, chili

METHOD

  1. Cut the ermines into triangles.
  2. We separate the edge of the mold from the cream part – we don’t throw any of it away!
  3. Cut the red onion into really small pieces.
  4. In a bowl, mix the inside of the ermine with the other ingredients, choose the amount of spices according to your own taste – gradually add and taste.
  5. Once everything is mixed, we fill the left mold edges with the mass.
  6. Leave in the fridge for some time before serving.
  Tip: we can also use, for example, garlic with walnuts, different types of herbs or chili and sweet pepper as a filling.
