Ingredients:
- 3 large eggs
- 175 g granulated sugar
- 125 ml extra virgin olive oil
- 125 ml of milk
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of almond extract
- 200 g semi-coarse flour
- 1 baking powder
- 1/2 teaspoon of salt
Method:
- Preheat the oven to 180°C, grease a round cake tin and sprinkle flour on the sides, while putting baking paper on the bottom.
- Put the eggs and sugar in the bowl of a food processor and beat for about 30 seconds at the highest speed.
- Gradually add the oil slowly so that it is whisked into the mixture. Immediately after that, add the milk and also mix thoroughly. Then reduce the speed and beat intermittently.
- Mix flour, baking powder and salt in a bowl. Add parts to the container and whisk.
- Pour the finished dough into the prepared mold and place in the preheated oven.
- Bake for about 30-35 minutes, using a toothpick to check if the dough is sticking.
- Remove the mold from the oven and let it rest for 5 minutes. Then remove from the mold and let cool.
- Brush the surface with extra virgin olive oil before serving.

Oil pot bun
This recipe is simple and the result is very tasty. You don’t need butter and it’s still perfectly delicious. You will see that this cocoa dessert will captivate you.
Ingredients:
- 2 cups powdered sugar
- 3 cups semi-coarse flour
- 2 teaspoons of baking soda
- 1/2 teaspoon of salt
- 1/2 cup of Dutch cocoa
- 2 cups of water
- 1 cup vegetable oil
- 2 tablespoons of white vinegar
- 1-2 teaspoons of vanilla extract
Method:
- First, we start by preheating the oven to 175 degrees and lining a round form with baking paper.
- In a large bowl, mix the sugar, flour, baking soda, salt and cocoa, i.e. the dry ingredients.
- Then add water, vegetable oil, vinegar and vanilla. Beat with a wooden spoon or whisk until the dough is pretty smooth.
- Pour into the prepared mold and place in the preheated oven.
- Bake for 40 minutes. At the end of baking, use a toothpick to check if the dough is cooked.
- If so, remove from the oven and let cool.
- Then we turn the bun out of the mold and sprinkle with sugar. If you want, you can use chocolate icing instead of sugar.

Oil dessert with fruit
This delicious oil bun is amazingly soft, supple and, thanks to the extra virgin oil, has a completely unmistakable taste. It’s a great bun for sitting down with tea.
Ingredients:
- 225 g plain flour
- 2 teaspoons of baking powder
- 150 g granulated sugar
- 150 ml of extra virgin olive oil (if you don’t have it, use vegetable oil)
- 2 eggs
- 3 spoons of milk
- 450 g mixed dried fruit (raisins, papaya, apricots, etc.)
Method:
- Prepare a cake tin, line it with baking paper and preheat the oven to 170 degrees.
- Sift the flour and baking powder into a bowl and sprinkle with sugar. Mix thoroughly.
- Mix the oil, eggs and milk in a measuring cup and add to the flour.
- Finally, add dried fruit and mix for the last time.
- Pour into a mold, put in a preheated oven and bake for about 1 hour, then lower the temperature to 150 degrees and bake for another 50 minutes.
- When the surface of the bun browns too quickly, cover it with aluminum foil.
- We check with a skewer that the dough does not stick and if everything is fine, we can take it out of the oven.
- We do not tip it out and let it cool in the form.
- After it has completely cooled, remove the mold and serve.

Apple cake with olive oil and maple syrup frosting
Believe me, this oil bun with apples will take the wind out of your sails and you will have to have a very strong will so that it doesn’t get dusty right away and end up in your sitting room. It is absolutely luxurious with pieces of your favorite fruit and a frosting that has brought this dessert to absolute perfection.
Ingredients:
Corpus:
- 100 g raisins (Sultanas)
- 240 ml of water
- 200 g semi-coarse flour
- 60 g of buckwheat flour
- 95 g of wholemeal flour
- 1 teaspoon of ground cinnamon
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon of salt
- 3 large apples (preferably the Granny Smith variety)
- 200 g cane sugar
- 160 ml extra virgin olive oil
- 2 eggs + 2 egg whites
- 2 teaspoons of vanilla extract
- Zest from 1 chemically untreated lemon
- Glaze
- 100 g unsalted fresh butter
- 120 g of brown sugar
- 60 ml of maple syrup
- 220 g of cream cheese
Method:
- Preheat the oven to 180 degrees, grease the cake tin and sprinkle it with flour.
- Pour 2/3 of the water into the pot and add the raisins. Bring to a boil over low heat and cook until all the water has evaporated. Then set aside.
- Mix all types of flour, baking soda, baking powder, salt in a bowl and mix.
- Peel the apples, remove the core and cut them into cubes about 2-3 cm in size.
- Then pour sugar into the bowl of a food processor, add olive oil, whole eggs, vanilla and lemon zest.
- Turn on medium and beat for 7 minutes until the mixture is pretty light, thick and doubled in size.
- We put the container on the line, sprinkle in the dry ingredients and mix carefully so that everything comes together, but at the same time the dough remains nice and fluffy.
- Finally, add the chopped apples, raisins, the remaining 1/3 of the water and mix slowly.
- We put the egg whites in a small bowl and beat them to form snow, which we gently mix into the mixture.
- Pour the finished dough into the mold and put it in the preheated oven for 60 minutes. Check the middle of the bun with a skewer, and if the dough still sticks, bake for another 10-15 minutes.
- Remove the baked bun from the oven and let it cool in the form. In the meantime, prepare the frosting.
- Place the softened butter, brown sugar and maple syrup in the bowl of a food processor and beat until light and fluffy.
- Then we add the cream cheese bit by bit, which we beat gradually. Finally, let’s put it on medium for about 2 minutes so that the frosting is beautifully smooth.
- Remove the cooled cake from the mold and spread the frosting evenly on the surface. If you want, you can also sprinkle pieces of chocolate or coconut, but it is not necessary.

Yeast cake with plums
Do you have a supply of fruit from your garden and are you wondering how to make the best use of it? You will make this bun so often that you won’t want to see a single plum, how good it is.
Ingredients:
Dough:
- 250 g semi-coarse flour
- 80 ml of lukewarm milk
- 1 bag of instant yeast
- 1/2 teaspoon of salt
- 2 eggs
- Grated rind from 1 chemically untreated lemon
- 1 teaspoon fresh chopped rosemary
- 60 g granulated sugar
- 125 ml of olive oil
For decoration:
- 3 – 5 large plums, sliced
- 1 teaspoon of chopped rosemary
- 40 g cane sugar
Method:
- Put flour, milk, instant yeast, salt, eggs, lemon zest and rosemary into the bowl of a food processor.
- Turn on low speed so that the individual ingredients are combined. We have to take into account that the dough will be quite stiff at the beginning.
- We replace the mixing attachment with a hook for kneading the dough and turn it on at medium speed.
- Add the sugar slowly, kneading each bit for about 2 minutes.
- When all the sugar is used, let it knead on medium until the dough starts to spin around the kneading hook.
- Then we return the mixing attachment/whisk, pour in the olive oil and mix at low speed to make the dough pretty smooth.
- It is best to prepare a glass bowl, grease it with oil, put the finished dough in it and cover it. Leave to rise at room temperature for about 2 hours.
- After this time, gently knead the dough and spread it evenly in a round baking dish.
- Top with chopped plums, cover and leave to rise again for 1 1/2 hours at room temperature.
- Then all you have to do is preheat the oven to 200 degrees, sprinkle the bun with rosemary and sugar and put it in the oven for 10 minutes.
- Reduce the temperature to 175°C and bake for another 30 minutes. As soon as the plums release their juice and the surface is golden brown, it’s done.
- Remove the mold from the oven and let it rest for 10 minutes. We turn it out of the mold and wait for the bun to cool completely.

Cheese pudding with apples
As for this oil bun, after baking it, we will feel like it’s Christmas. Our household smells not only of sweet apples, but also of cinnamon, cloves and ginger. Every single bite will melt right on the tongue, and at the same time it won’t even give us that much work.
Ingredients:
Dough:
- 1 1/2 cups plain flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon ground cloves
- 1 teaspoon of cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1/3 cup coconut oil
- 2 tablespoons of molasses
- 2 large eggs
- 1/2 cup of soft cottage cheese
- 1/4 cup milk
- 1 teaspoon of freshly grated lemon peel
- 1 1/2 teaspoons lemon juice
- 1 medium-sized apple, cut into small cubes
- 1/2 cup chopped walnuts

- 1/2 cup semi-coarse flour

- Preheat the oven to 175 degrees and grease and flour any form we have at hand.
- In one bowl, mix all the dry ingredients except sugar, i.e. flour, baking powder, cloves, cinnamon, ginger and salt.
- Put the sugar and coconut oil in the second bowl and beat gently with a wooden spoon. Add molasses and mix.
- Add the eggs one at a time and beat each thoroughly. Using a fork, mix the cottage cheese with the milk and also mix it in.
- Finally, add the lemon juice, stir in the lemon zest and beat until smooth.
- Add the dry ingredients in parts and then mix for about 1 minute. Finally, add the chopped apple and give it a final stir.
- We transfer the dough to the prepared form and cover it with crumbs, which we make by mixing the ingredients in a small bowl until small balls are formed.
- Sprinkle the finished breadcrumbs over the bun and place in the preheated oven for 40 minutes. We check with a toothpick whether the bun is cooked and then remove it from the oven and let it rest in the form for 15 minutes.
- Turn the cake out, let it cool and serve.
Tip: Flavored or classic whipped cream, or a scoop of ice cream, for example with chocolate topping, is suitable for decoration.

Olive oil cake with lemon
Lemon is often condemned because of its sour taste, but believe me, you can’t harm your dough by using it.
After all, its amazing aroma and characteristic taste can transform even the most ordinary bun into something delicious and unsurpassed. The bun is juicy, soft and beautifully supple.
Ingredients:
- 1 1/4 cups extra virgin olive oil
- 3 large eggs
- 1 1/4 cups milk
- 1 1/2 tablespoons of grated lemon peel from a chemically untreated lemon
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup Limoncello (Italian spirit)
- 2 teaspoons of lemon extract
- 1 3/4 cups granulated sugar
- 2 cups semi-coarse flour
- 1 1/2 teaspoons salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon of baking soda
- Icing sugar for sprinkling
Method:
- Preheat the oven to 165 degrees and line the form with baking paper and spray it with cooking spray.
- Pour the olive oil into a large bowl, add the eggs and beat thoroughly.
- Add milk, lemon juice, limoncello, lemon extract, whipped cream and beat again for about 1 minute.
- Sprinkle sugar, lemon zest and mix. Add flour, salt, baking powder, baking soda and mix thoroughly to make the dough pretty smooth.
- Transfer to the prepared form and bake in a preheated oven for approximately 60-75 minutes. Use a skewer to check whether the dough is sticking.
- Place the baked bun on the rack and let it rest in the mold for about 1 hour. Then remove from the mold and sprinkle with sugar.

A light dessert with the scent of tangerines
This fruit has an amazing and completely unbeatable taste, thanks to which the oil bun with fruit gets a whole new dimension.
Ingredients:
- 7 tablespoons of unsalted butter
- 2 cups semi-coarse flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup extra virgin olive oil
- 3 spoons of lukewarm milk
- 4 eggs
- 1 cup of sugar
- Grated peel from 2 chemically untreated tangerines
Method:
- Prepare a baking dish, preferably round, grease and sprinkle with flour. Preheat the oven to 175 degrees.
- Sift the flour, baking powder and salt into a medium bowl.
- In another bowl, beat the melted butter with olive oil and milk.
- Finally, we take a larger bowl, put the eggs, sugar, lemon zest into it and beat it thoroughly for about 3 minutes using a hand mixer.
- Gradually mix the ingredients from the other two bowls on the mixer and make a smooth dough without lumps.
- Pour into the mold and bake for 30 minutes. As soon as the bun acquires a golden brown shade and begins to separate from the walls of the mold, we are done.
- Remove from the oven and the form, place on a wire rack and let cool.

Yogurt and honey bun with oil
If you prefer butter and do not allow it, then after tasting this oil bun, you will change your mind.
It will melt in your mouth and you can easily eat it all while sitting down. This will be ensured by a suitable selection of ingredients, thanks to which the resulting dessert is perfectly supple.
Ingredients:
- 2/3 cup extra virgin olive oil
- 2/3 cup honey
- 1 tablespoon finely chopped fresh thyme
- 1 teaspoon of grated lemon peel
- 3 large eggs
- 1 1/2 cups semi-coarse flour
- 1/2 teaspoon of baking powder
- 1/4 teaspoon of baking soda
- 1/4 teaspoon salt
Method:
- We preheat the oven to 170 degrees and prepare the form for the cake, but also for the bishop’s sandwich, etc., it depends on what we have at hand.
- In a large bowl, mix yogurt, honey, olive oil, thyme and lemon zest.
- Beat in the eggs one at a time and sprinkle in the flour, baking powder, baking soda and salt.
- Mix thoroughly to form a smooth dough and transfer it using a kitchen spatula/spatula to a baking dish, which we spray with baking spray or line with baking paper.
- Bake for about 40-45 minutes and then take the finished bun out of the oven and let it rest for 10 minutes before removing it from the mold.
- Then carefully remove from the mold, place on a kitchen rack and let cool completely.

- Grated peel from 1 chemically untreated orange
- 1/4 cup fresh orange juice
- 2 teaspoons of vanilla extract

- 2 cups semi-coarse flour
- 3/4 cup extra virgin olive oil
For the frosting:
- 1/4 cup fresh orange juice
- 1/2 cup powdered sugar
Method:
- Preheat the oven to 170 degrees and prepare a baking dish, which we grease and sprinkle with flour.
- Put the eggs and sugar in a bowl and beat with a hand mixer for about 1 minute so that the mixture is nice and fluffy.
- Add buttermilk, orange peel, orange juice, vanilla extract, baking powder, salt and mix thoroughly until everything is combined.
- Sprinkle in the flour and mix so that no lumps form.
- Finally, add olive oil and beat with a mixer into a smooth dough.
- Transfer to a mold and bake for 35-45 minutes. The surface should have a golden brown color and when we try to insert a skewer into the middle of the bun, it should come out clean and the dough should not stick.
- Remove from the oven and let rest for 15 minutes, then turn out onto a wire rack and set aside to cool.
- As soon as the bun has cooled, we will prepare the frosting.
- Put the orange juice in a small bowl, add the sugar and mix until the glaze is beautifully smooth.
- Then, using a spatula or a brush, spread the icing on the cake and let it cool again.
- Just add sugar before serving and we can serve.
