This fried egg sandwich recipe is a great and easy meal! You can use any type of bread or cheese for this quick and easy breakfast. Serve with fruit, vegetables and juice/homemade lemonade for a nutritious breakfast.

What will we need

  • 2 eggs
  • 4 slices of toasted bread
  • 2 tablespoons of butter
  • 4 slices of cheese (Eidam, Cheddar, Mozzarella, Roquefort)
  • 2 spoons of spreading butter
  • chive
  • salt pepper


  1. Cut a circle about the size of a yolk in the middle of all 4 slices.

How to make an ox eye?

The round and therefore neat shape of the oxeyes is best ensured by roasting them in a deep fried egg mold , a fritter or a smaller pan.

Let any mold be warmed up without fat first, then put a small piece of butter on it and let it melt or rub it with oil and let it warm up.

Crack the egg in half, split the shells and carefully drop the egg into the heated fat so that the yolk remains in the middle. If we don’t have a well-shaped mold and use a pan, we have to quickly and deftly bring the egg white to the center so that the rounded shape is preserved as much as possible.

Let the eggs cook at a milder temperature so that the white does not harden prematurely and the bottom does not burn. In no case do not cover with a lid , so the yolk would be pulled through the blank.

Salt the eggs slightly only when the yolk starts to solidify. If we salt the egg immediately, the yolk will spread . As soon as the white is set and the yolk is semi-solid, remove the egg with a spatula and serve immediately. Ox eyes cannot be stored, they lose their shape and taste.
