  • Divide the puff pastry into two parts. Now roll out the larger one and line the cake pan with it. Delete the remaining regions.
  • Drain the peaches, pour the juice into a bowl and set aside.
  • Pour the pureed peach juice into a small pan, add the cornstarch, nutmeg, cinnamon and a pinch of salt. Bring the mixture to a boil and, stirring constantly, let the resulting juice gently reduce until it becomes thick. Remove from heat and add lemon juice and butter.
  • Stack the peaches on the bottom cake layer.
  • Pour the prepared mixture over the peaches.
  • Cover the pie with a second layer of puff pastry. Smooth the edges. You can cover the edges of the cake with foil, they won’t burn.
  • Bake at 160°C for about 45-60 minutes. The cake is ready when the top layer is golden.
  • Remove the cake from the oven, let it cool.
  • Add a scoop of vanilla ice cream to the individual pieces on a serving plate.

For the filling:

  • 4 cups peeled and chopped peaches
  • 3 egg yolks
  • 2 tablespoons of flour
  • pinch of salt
  • a pinch of nutmeg
  • quarter teaspoon of ground cinnamon
  • 1 cup sour cream
  • 1 teaspoon of vanilla
  • 1 cup of sugar

On a small scale:

  • ½ cup brown sugar
  • ½ cup flour
  • ½ teaspoon of cinnamon
  • 4 tablespoons of butter

Preparation process:

  • Prepare with the crumbs: mix the flour, sugar, butter and cinnamon in a bowl and mix everything well.
  • Bake at 200°C for the first 15 minutes. Remove the cake and place the peach mixture on top.
  • Bake for another 15 minutes.
  • Then add the breadcrumbs and bake for another 15 minutes.
  • After removing from the oven, let cool to room temperature.

  Preparation process:

  • First, prepare the pie dough. Put the flour, salt and cubes of butter in the bowl for preparing the dough. Turn on the mixer and mix for a short while until the dough starts to resemble crumbs.
  • Then add a little ice water and continue mixing. Be careful with the water so that your dough is not too runny. The dough should have a tendency to stick together but still be slightly crumbly. Roll out such dough on a floured rolling pin.
  • Grease a cake pan with butter and place the dough on it. Wrap in foil and leave in the freezer for at least half an hour.
  • Peel and slice the peaches and arrange them on top of the pie crust. Don’t worry too much about the perfection of the shape of the slices you stack, in the end you won’t even be able to see the perfect stack anyway.
  • Beat the egg yolks, Greek yogurt, flour, sugar and vanilla with a fork or whisk. You will get a perfect pudding-like mass. Pour it over the stacked peaches.
  • Bake the cake for 30 minutes at 200°C. In the meantime, prepare the crumb.
  • You prepare the crumb by mixing the butter and flour well. Then stir in the sugar.
  • After half an hour, take the cake out of the oven and sprinkle the cake with breadcrumbs. If you don’t want it to overbake, you can cover the cake with aluminum foil.
  • After a quarter of an hour of baking, check whether the cake is ready – poke a skewer into the cake, and if no pieces of dough stick to it, you can rejoice, the cake is ready.
