Real Peking soup
This soup is one of the most famous and popular soups not only in China, but all over the world.
Ingredients
- 4 Chinese shiitake mushrooms
- 4 cups of broth
- 1 small can of bamboo shoots
- 3 teaspoons of vinegar
- 3 spoons of soy sauce
- 1 teaspoon cornstarch
- 1 egg
- 2 teaspoons of sesame
- 3 spring onions
Method
- Pour the broth into the pot. Cut the mushrooms into thin strips and add to the broth.
- Cook on low heat for 8 minutes, add bamboo shoots and cook for another 4 minutes.
- Mix soy sauce and vinegar in a bowl and stir into the soup.
- Then we mix the cornstarch with a little water and pour it into the soup. Stir until the soup begins to thicken.
- Finally, add a beaten egg to the soup. Served with spring onions and sesame seeds.

Spicy vegetarian soup
This meatless version of Peking soup will blow your mind. It is not only very simple, but also very tasty.
Ingredients
- 6 cups of vegetable broth
- 2 cups shiitake mushrooms
- 1 small can of bamboo shoots
- 1 small can of water chestnuts (available at Asian grocers)
- 2 spoons of soy sauce
- 1 teaspoon chili
- 3 cloves of garlic
- 2 tablespoons of white vinegar
- ½ cup shallots
- pepper
Method
- Pour the vegetable broth into the pot.
- Add chopped mushrooms, bamboo shoots, chestnuts, soy sauce, chili, vinegar, pressed garlic to it.
- We cook for 20 minutes.
- Add chopped shallots and cook for another 5 minutes.
- Depending on the taste, we can add more chili, vinegar or soy sauce and we can serve.

Sweet and sour Peking soup
This pork soup is a perfect combination of sweet and sour taste. Try it and see for yourself!
Ingredients
- 30 g of dried Chinese mushrooms
- 5 cloves of garlic
- 1 bunch of spring onions
- 1 onion
- 2 tablespoons of oil
- 12 cups of broth
- 250 g of lean pork
- 1 tablespoon of grated ginger
- 1 cup bamboo shoots
- 1 tablespoon of chili paste – you can add or subtract according to taste
- ½ cup soy sauce
- ½ cup rice vinegar
- 1 spoon of sugar
- 2 eggs
- 2 tablespoons of cornstarch
Method
- Cook the mushrooms according to the instructions, cut into thin strips and set aside.
- Pour the broth into a saucepan and bring to a boil. Add chopped spring onions, pressed garlic, onion and cook for about 20 minutes.
- Meanwhile, heat the oil in a pan and fry the diced pork until soft.
- Add ginger, bamboo shoots, chili paste, soy sauce, vinegar and sugar to the pan.
- Mix the mixture well and pour it into the broth. Then add mushrooms, starch mixed in water and cook on a low flame for 10 minutes.
- Add the beaten eggs while stirring constantly. Serve garnished with spring onions.

Peking style chicken soup
Lovers of chicken meat and exotic flavors will find themselves in this excellent soup.
Ingredients
- 250 g of chicken breast
- 100 g of fresh shiitake mushrooms
- 0.5 l of chicken broth
- 150 g of bamboo shoots
- chili paste
- 2 tablespoons of oil
- 1 onion
- 2 carrots
- 100 g of mung bean sprouts
- 2 tablespoons of tomato paste
- 1 spoon of sugar
- 5 spoons of soy sauce
- 1 tablespoon of cornstarch
Method
- Put the chicken breasts in the broth, bring to a boil and cook for 30 minutes.
- In the meantime, prepare the vegetables. Allow the bamboo shoots to drain. Finely chop the onion, carrot and mushroom.
- Remove the meat from the pot and cut it into cubes and return it to the pot.
- Add tomato paste, sugar and vinegar to the broth.
- Pour oil into the pan and fry the onion and chili in it.
- As soon as the onion has a golden color, add it to the pot with the soup.
- Add carrots, mushrooms, babmus sprouts and cook for 15 minutes.
- Season with soy sauce, add cornstarch mixed in water and stir until the soup begins to thicken.
- Serve the soup garnished with spring onions.

Beef soup with noodles

- 500 g of beef
- 5 star anise
- ¼ teaspoon ground cloves
- 1 whole cinnamon stick
- 5 cloves of garlic, cut in half
- 5 slices of ginger
- 5 spoons of soy sauce
- 2 carrots
- 300 g of egg noodles
- ½ bunch of fresh coriander
Method
- Cut the beef into cubes, put it in a pot and cover it with cold water.
- Add garlic, ginger, cinnamon, anise, cloves and slowly bring to a boil.
- Cook on low heat for 1 hour.
- In the meantime, cook the noodles according to the instructions and set aside.
- After an hour of cooking, add chopped carrots to the pot and cook for 8 minutes.
- Season with soy sauce and serve with noodles with fresh coriander.
