Ingredients:

For the dough:

  • 1/2 cup powdered sugar
  • 2 egg yolks from an L-sized egg
  • 100 g of milk chocolate
  • 120 g of salted pistachios
  • 1 egg white
  • A pinch of coarse sea salt
  • 1/4 teaspoon of vanilla extract

For decoration:

  • 175 g of cooking chocolate
  • 1 tablespoon of solidified shortening
  • 100 – 125 g of chopped pistachios

Method:

  • We start by melting and letting the milk chocolate cool while we finely chop the cooking chocolate.
  • Pour the salted pistachios into the blender jar and blend thoroughly into a paste.
  • Bring 1/4 cup sugar and 1/4 cup water to a boil in a small saucepan. Cook over medium heat, stirring constantly, until the sugar is completely dissolved. Then set aside.
  • Prepare a pot with hot water for a water bath and put the yolks in a bowl. Place on a saucepan and beat with a mixer on medium speed for about 2 minutes.
  • Add sugar syrup and remove from the water bath. We turn on the mixer at the highest speed and beat until the mixture is nicely foamy and cool. It takes about 3-4 minutes.
  • Pour the mixture over the melted chocolate and mix. Let cool in the refrigerator for 45 minutes.
  • Add the pistachio paste and the remaining sugar to the bowl of the food processor. Mix on medium speed until smooth. Mix in the egg white, vanilla and a pinch of salt.
  • Preheat the oven to 170 degrees and prepare a tray lined with baking paper.
  • Transfer the finished dough to a pastry bag with a simple round tip and spray circles with a diameter of approx. 5 cm on the baking sheet, leaving at least a 2 cm gap between each piece.
  • Place in the preheated oven and bake for about 10 minutes so that the cookies have golden edges. Transfer to a kitchen rack covered with baking paper and let cool completely.
  • Then we turn the cookies upside down and put 1 and 1/2 teaspoons of the chocolate filling, which we put in the fridge before, on half of them. Cover with the second wheel and leave to cool for 1 hour.
  • Meanwhile, melt the cooking chocolate in a water bath. Then we set aside, add the solidified fat and stir until the chocolate and fat combine. Stir until the mixture is cool.
  • We take the cookies out of the fridge and dip them one by one in the chocolate coating using a fork, on which we always place the cookie, dip it and let it drip over the bowl. Then we put it on the kitchen grid, under which we put a sheet. Then all you have to do is sprinkle chopped pistachios on all the cookies.

  • Preheat the oven to 180 degrees and prepare two trays, which we will line with baking paper.
  • Put margarine and granulated sugar in the bowl of a food processor and beat until light foam. Add eggs, vanilla extract and mix again.
  • Sift the flour and add it to the container with the wet ingredients together with the ground pistachios. Mix until a smooth dough is formed.
  • Using a spoon, make mounds on the baking sheet and leave at least 3 cm of space between them. Place in the preheated oven and bake for about 10 minutes until golden.
  • Remove the finished cookies from the oven and let them rest on the baking sheet for 5 minutes. Then we transfer it to the kitchen grid and wait until they cool down completely.
  • While the cookies are cooling, prepare the frosting.
  • Put powdered sugar, water, vanilla extract in a bowl and mix with a fork until all lumps disappear.
  • We can decorate the cookies with the icing using a decorating bag, an ordinary bag with a corner cut off, or just a spoon, which will give it a somewhat rustic look.

For the dough:

  • 75 g of pistachios
  • 300 g plain flour

  • 4 tablespoons of ground pistachios

Method:

  • Place the pistachios and flour in a food processor and blend until the pistachios are ground enough, but not enough to form a paste.

  • If you want, you can sprinkle coarse sea salt before serving, but it is not necessary.

Pistachio Truffles

This traditional delicacy from the Middle East has been given a new coat and will excite your taste buds to the max. They are perfectly tasty, tender and look great. One will certainly not be enough for you.

Ingredients:

For the dough:

  • 114 g unsalted pistachios
  • 150 g of granulated sugar
  • 57 g fresh unsalted butter
  • 80 g semolina
  • 1 cup of water
  • 1 tablespoon of orange blossom water
  • 1 teaspoon of rose water

For the cream:

  • 237 ml whipping cream
  • 118 ml whole milk
  • 15 g semi-coarse flour
  • 14 g of cornstarch
  • 1 teaspoon of granulated sugar
  • 1 teaspoon of vanilla flavoring

For decoration:

  • Ground pistachios as needed
  • Edible dried rose petals

Method:

  • Prepare a medium-sized saucepan on the work surface, into which we put the cream, milk, flour, cornstarch and sugar and whisk until everything is mixed and dissolved, without visible lumps.
  • Place on the stove, set the temperature to medium high and cook, whisking constantly, until large bubbles begin to form on the surface and the mixture boils.
  • Cook for another 30 seconds to thicken the mixture and add the vanilla extract. Mix, pour into a glass bowl, cover with cling film or a plastic lid and refrigerate for at least 2-3 hours and up to 3 days.
  • Transfer the cooled cream to a pastry bag with a round tip of approx. 1 cm in diameter and make scoops of the same size, one next to the other, on a baking sheet lined with baking paper.
  • Dip your finger in water and lightly press the top of each scoop of cream with the tip to make it rounder. Cover with plastic wrap and put in the fridge for 2 hours. In the meantime, prepare the dough.
  • Line a baking sheet with baking paper or put a silicone baking mat on it.
  • Put the pistachios with 2 spoons of sugar in a food processor and mix thoroughly, but again not so much that the pistachios are not a paste.
  • Heat the butter in a pot, and when it melts, cover it with semolina and stir constantly until the semolina and malt start to smell nice, about 3 minutes in total.
  • Add water, sprinkle the remaining sugar and stir to dissolve.
  • We continue to cook, stirring constantly, until the semolina absorbs all the moisture. This takes about 3-4 minutes. The consistency of the mixture should resemble mashed potatoes.
  • Finally, mix in the pistachio mixture, rose water and orange blossom water and mix until the mixture is smooth.
  • Set aside, let it cool a little, and then use an ice cream scoop spoon to make scoops of the same size on a baking sheet lined with baking paper.
  • We make a hole in each one with our thumb, into which we push one piece of filling from the refrigerator and wrap it like a ball. Wrap in ground pistachios and place in a paper basket. Decorate with an edible flower petal.
