  • 600 ml of warm water
  • 7 cups flour
  • 2.5-3 tablespoons of fresh yeast (you can use 2 teaspoons of dry yeast)
  • 6 tablespoons of extra virgin olive oil
  • 1.5 teaspoons of salt
  • 2 teaspoons of sugar

Method

  • Put the yeast in a bowl and cover it with warm water. Stir until the yeast dissolves.
  • Pour flour onto the roll so that it resembles a volcano and pour the yeast and water directly into its tip. Add any other ingredients as well.
  • Knead everything together for 10-15 minutes until a smooth and elastic dough is formed.
  • Grease a bowl with a little olive oil and put the dough in it. Turn the dough in the bowl so that its surface is slightly oiled.
  • Cover the bowl with the dough and let it rest for 4-5 hours. Make a cross on the surface of the dough with a knife. Italian tradition interprets this act as blessing the food.
  • Preheat the oven to 200°C.

Instead of tomato sauce, which is most often spread on the dough, you can use cream, which softens the whole dish beautifully.

Ingredients

  • 5 tablespoons of unsalted butter
  • 2 tablespoons of all-purpose flour
  • 1 and ¼ whole milk
  • ¼ teaspoon sea salt
  • ⅛ teaspoon black pepper
  • 2 cloves of garlic (pressed)
  • ¼ cup Parmesan (grated)

Method

  • Melt the butter in a small saucepan. Stir in the flour and fry for 1-2 minutes, whisking constantly, until the flour is browned.
  • Slowly pour in the milk, whisking constantly until the mixture is smooth.
  • Stir in salt, pepper and garlic.
  • Add the parmesan cheese and mix for another 30 seconds.
  • Remove the pot from the heat and continue whisking until the cheese is melted and the sauce is smooth.

In general, about the preparation of homemade pizza dough

The basic pizza dough is simple yeast dough. To prepare it, smooth or semi-coarse flour is used, to which a little oil, salt, yeast and milk are added. Instead of milk, it is possible to use water or buttermilk, kefir, and even beer.

Of course, other unleavened pizza doughs can also be used. This is, for example, dough with the addition of potatoes, bread dough or dough made from whole grain flour. Next, yogurt, cottage cheese or shortcrust pastry with the addition of raising powder. Preparing pizza from purchased puff pastry is quick.


Shaping the pizza

The traditional and usual shape of pizza is round. A variety of molds of various sizes are used for this purpose. For a larger number of diners, or for bigger eaters, it is easier to prepare a pizza recipe on a baking sheet.

If you don’t have a pizza pan, bake the round shape in a cake pan. In addition, you can also prepare small pizzas of various sizes, which you cut out of the dough using a glass or pot lid.


Pizza toppings

The rolled out and shaped dough is most often spread with ketchup, passata, tomato puree or a cream base, see the recipe above. For greater spiciness, you can use sharp ketchup or flavor it with chili spices or pressed garlic. Then it is enough to add a different combination of filling.

This can consist of tomatoes, cut into rounds, chopped onions, strips of peppers, thin rounds of zucchini, slices of ham, salami or, finely chopped, sausages, various meat or fish fillings, slightly stewed mushrooms, boiled eggs cut into rounds, crabs bars, sardines and other ingredients that you like and have available at the moment.

If you want a very spicy pizza, you can add hot peppers or olives. Slices of cheese are usually placed on top of the dish (you can also grate the cheese). At the end, the whole meal is seasoned and topped with basil, oregano or another favorite herb.

You can also divide the pizza topping into two or more flavors by marking out slices with a piece of dough and alternating the toppings.
