  • 225 ml whole milk
  • 225 g softened unsalted fresh butter

Method:

  • Pour the poppy seeds into the pan and cover with milk. Bring to a boil and as soon as the milk boils, turn off the stove and leave the pan on the stove for 25 minutes.

  • Then carefully run a knife around the edge of the mold and gently release the bun from the walls.
  • After 40 minutes, we can carefully remove the cake and let it cool completely.
  • In the meantime, pour powdered sugar into a small bowl, cover with vanilla extract, milk and mix until the glaze is beautifully smooth and soft.
  • Pour the glaze over the poppy seeds and wait until it hardens in about 60 minutes. We do not put it in the refrigerator, it is enough if it rests at room temperature.

When we were already looking for a suitable recipe for this sweet delicacy, we couldn’t miss a slightly lighter and healthier gluten-free version. It is beautifully light, soft and very tasty.

Ingredients:

  • 3 large eggs
  • Pinch of salt
  • 100 g softened unsalted butter
  • 80 g cane sugar
  • Grated lemon peel from 1/2 chemically untreated lemon
  • 100 g of ground poppy seeds
  • 50 g ground almonds
  • 50 ml of almond milk
  • Icing sugar for sprinkling

Method:

  • Preheat the oven to 180 degrees and line a mold or baking tray with baking paper.
  • Separate the yolks from the whites into two bowls. Add a pinch of salt to the egg whites and beat the egg whites until stiff with a hand mixer.

  • Preheat the oven to 175 degrees and spray the baking dish with cooking spray. Sprinkle with powdered sugar so that the entire surface is covered.
  • Mix flour, poppy seeds, baking soda and salt in a bowl and set aside.
  • Put the buttermilk, lemon zest and juice in another bowl and set aside.
  • We prepare a container from a food processor and put butter and sugar in it. We put it on the base and use a paddle to beat it at medium speed for about 4-5 minutes so that the mixture is nicely foamy.

  • 60 ml of lemon juice

Method:

  • Grease the mold with butter and sprinkle with breadcrumbs. Preheat the oven to 170 degrees.
  • Crack the eggs into a large bowl, add vegetable oil, granulated sugar and beat thoroughly using a hand mixer for 3-4 minutes.
  • Sift flour with baking powder and poppy seeds into another bowl. Then mix them into the beaten eggs.
  • Add milk and mix with a mixer at low speed to create a smooth dough.
  • Pour into a mold and put in the oven for 30 minutes. Set the baked pudding aside and prepare the topping.
  • Sift the icing sugar into a bowl, add the lemon juice and mix well with a fork. Pour over the still hot poppy seeds and spread over the entire surface.
