Traditional poppy seed cake

A sweet, simple, delicious cake with poppy seeds and lemon icing that will bring sunshine and warmth to even the coldest days. Don’t skip the simple frosting, it’s the best part. Our recipes for poppy seeds are equally excellent, try them yourself.

What will we need

  • 350 g plain flour
  • 30 g cornstarch
  • 1 teaspoon of salt
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 50 g of poppy seeds
  • 230 g of butter
  • 350 g granulated sugar
  • 4 large eggs
  • 2 teaspoons of pure vanilla extract
  • zest of 3 large lemons
  • juice of 2 large lemons
  • 240 ml of buttermilk

For syrup

  • 100 g granulated sugar
  • juice of 2 large lemons

For the frosting

  • 120 g sifted powdered sugar
  • juice of 1/2 a large lemon

Method

  • Preheat the oven to 180 degrees.
  • Wipe out the cake tin.
  • Sift the flour and cornstarch into a large bowl. Whisk in the salt, baking powder, baking soda and poppy seeds.
  • Beat the butter until smooth and creamy, about 1 minute.
  • Add sugar, eggs and vanilla.
  • Beat on medium-high speed until combined.
  • With the mixer on low speed, add the dry ingredients in three additions, alternating with the buttermilk, mixing each addition just until incorporated.
  • Pour the batter into the pan and bake for 40-50 minutes or until a toothpick inserted into the cake comes out clean.
  • When done, remove from the oven and let cool inside the pan for 10 minutes.
  • During this time, prepare the simple syrup. Combine granulated sugar and lemon juice in a small saucepan over medium heat.
  • Cook, stirring constantly, until the sugar dissolves. Remove from heat and set aside.
  • Pour a spoonful of syrup on the slightly cooled cake.
  • Allow the cake to cool before frosting.
  • For the frosting, whisk together the icing sugar and lemon juice in a small bowl. Drizzle over the poppy seed cake.

Prepare the cake and syrup according to steps 10 and 11. Cover the cake tightly and refrigerate for 2 days or freeze for up to 2 months. Warm to room temperature and proceed to step 12.

  • 230 g of butter
  • 350 g granulated sugar
  • 6 egg whites
  • 240 g sour cream
  • 230 ml of lemon juice
  • rind from one large lemon
  • 345 g plain flour
  • 1 tablespoon of baking powder
  • 1 teaspoon of salt
  • 3 spoons of poppy seed (soak in water for an hour when preparing the cake)

For the frosting

  • 115 g of melted butter
  • 120 ml of lemon juice
  • 250 g of powdered sugar

Method

  • Preheat the oven to 180 degrees. Wipe out the cake tin.
  • In a medium bowl, whisk together the flour, baking powder, salt, lemon zest and poppy seeds.
  • Beat the butter with the sugar.
  • Add the egg whites.
  • Add sour cream and mix.
  • Alternate adding the flour mixture and lemon juice to the butter mixture, mixing until combined.
  • Pour the batter into the prepared pan and bake for about 45 to 50 minutes, until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the tin for at least 30 minutes before turning it out.
  • Mix all the ingredients for the frosting and beat until smooth.
  • Pour the frosting over the cooled poppy seed cake.

  • Cool in the tin for 10 minutes before turning out.
  • To make the frosting, place the icing sugar in a small bowl, add 1 tablespoon of the buttermilk and 1 tablespoon of the juice, and mix with a whisk until combined.
  • Pour the frosting over the warm poppy seed cake and leave to cool completely.
