- 250 ml of whole milk

- 3 tablespoons honey (or granulated sugar)
- 1 tablespoon of rum

METHOD
- Boil milk, poppy seeds and sugar together.
- Season with honey, rum and cinnamon.

Poppy seed bun with mascarpone cream
This dessert has a luxurious taste and texture and you will surely like it. The combination of poppy seed and vanilla dough and delicious mascarpone cream is simply unforgettable!
Ingredients
For the dough:
- 1 vanilla pod
- 2/3 cup milk
- 2/3 cup poppy seeds
- 1 and 2/3 cups cake flour
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 170 g butter at room temperature
- 1 cup of sugar
- 4 egg whites at room temperature
- pinch of salt
- 1/4 cup sugar
For the cream:
- 230 g mascarpone
- 3-4 teaspoons of powdered sugar to taste
- 1/3 cup deluxe whipping cream
- a drop of vanilla extract
Method
- Gently beat the mascarpone and sugar to the cream until combined.
- Add the cream and vanilla and mix until the mixture is smooth and a little thick.
- Be careful not to mix, or the mascarpone will start to fall apart.
- Refrigerate until ready to use.
- Cut the vanilla pod lengthwise on the dough.
- Boil the milk with the vanilla pod.
- Put the poppy seeds in a bowl and cover with milk boiled with vanilla pods.
- Cool to room temperature.
- Scrape the vanilla pod into the milk mixture.
- Preheat the oven to 160 degrees Celsius.
- We prepare a 23 cm round cake tin, grease it with butter, sprinkle it with flour and put baking paper on it.
- Sift the cake flour, baking powder and salt into a bowl.
- Beat the butter until light and fluffy, about 2 minutes.
- Gradually add 1 cup of the sugar and continue beating until the mixture is very light and creamy, about 5 minutes.
- Add one-third of the flour mixture, alternately with half of the milk-poppy mixture and finish with the flour mixture.
- We stop the mixer just before mixing thoroughly and gently finish mixing by hand using a rubber spatula.
- Beat the egg whites and a pinch of salt on medium speed to form soft peaks.
- We continue to beat and add 1/4 cup of sugar, just a little at a time.
- Increase the speed to high just before adding the last few teaspoons of sugar.
- Beat until peaks form that are stiff and glossy, about 1 minute.
- Mix a third of the beaten egg whites into the dough.
- We continue to carefully add the remaining egg whites and mix gently.
- Scrape the batter into the prepared pan and bake for about 50-55 minutes, or until a skewer inserted into the center comes out clean.
- Let cool on a wire rack for 10 minutes.
- Turn the bun out of the mold and let it cool completely on a wire rack.
- Decorate with cream and serve.

METHOD
