Portioning and preparation
If we don’t have the purchased meat already portioned, we cut it as needed. We can bone the chops. If we leave them with the bone, we cut the meat near the bone so that it cooks better.
We rinse, dry and gently pat the cutlets, preferably wrapped in foil or stored in a microtene bag, so that the juice from the meat does not soak into the cutting board.
Then we also cut the individual portions along the edges so that they do not curl during roasting. Of course, cutlets can also be cut into strips, which are prepared even faster than portions in slices.
Recommended attachments
All kinds of side dishes go well with quick cutlets. Mainly boiled, stewed or baked potatoes or fried or baked potato chips and croquettes.
Steamed rice is also suitable, which can be flavored with spices or vegetables to make it special. Pasta is also not excluded. We often serve tartar sauce or some other cold sauce of choice for these quick fixes.
Warm dressings made from ketchup, mustard and similar ingredients are also suitable. And let’s not forget one of the vegetable salads. If we supplement the meat dish with a side dish with a rich vegetable garnish, we get an almost festive-looking dish without much effort and with a minimum of time spent in the kitchen.
