Honest recipes for crispy potato pancakes as you like them

Basic dough for potato pancakes

The basis is, of course, potatoes, raw.

Floury potatoes , which do not contain too much water, are more suitable. That’s why, for example, we don’t use new potatoes , but older potatoes are already ideal.

We grate the peeled potatoes either on a special grater that crushes them a little or on a so-called teardrop grater , where we grate them into noodles.

Both methods are possible, according to experience, the noodles are fried a little longer, but they need less flour for thickening .

If necessary, drain the water from the grated potatoes, sprinkle them with a little milk, then until they do not darken , add an egg, salt, a little spice and thicken with flour.

We can then add vegetables, sausages, other ingredients to this base according to taste and possibilities, or make stuffed potato pancakes.

Traditional potato pancakes

INGREDIENTS

  • 1/2 kg of potatoes
  • 3 eggs
  • flour
  • 5 cloves of garlic
  • sprigs of dill
  • 3 tablespoons of oil
  • salt pepper
  • marjoram

METHOD

  • Peel the potatoes and finely grate them.
  • Add eggs, crushed garlic, dill, marjoram, pepper and salt.
  • Mix in 2-3 tablespoons of flour, the dough must remain liquid.
  • Fry the potato pancakes on hot oil until golden brown on both sides. Pour the batter from the ladle, spread the spatula gently over the entire pan.
  • Keep covered, serve with cream and a sprig of dill.

Zucchini potato pancakes

INGREDIENTS

  • 1/2 kg of potatoes
  • 1 small zucchini
  • 3 eggs
  • flour
  • 4 cloves of garlic
  • 3 tablespoons of oil
  • salt pepper
  • marjoram

METHOD

  • Peel the potatoes and finely grate them. We also grate the zucchini, we don’t need to peel it. We mix both.
  • Add eggs, crushed garlic, marjoram, pepper and salt.
  • Mix in 2-3 tablespoons of flour, the dough must remain liquid.
  • Fry the potato pancakes on hot oil until golden brown on both sides. Pour the batter from the ladle, spread the spatula gently over the entire pan.
  • Keep covered, serve with cream or sauerkraut.
Recipe for Zucchini Potato Pancakes

Stuffed potatoes with cheese

INGREDIENTS

  • 1/2 kg of potatoes
  • 3 eggs
  • flour
  • 5 cloves of garlic
  • 8 slices of cheese to taste
  • 3 tablespoons of oil
  • salt pepper
  • marjoram

METHOD

  • Peel the potatoes and finely grate them.
  • Add eggs, crushed garlic, dill, marjoram, pepper and salt.
  • Mix in 2-3 tablespoons of flour, the dough must remain liquid.
  • Pour the batter from the ladle onto the hot oil, gently spread it all over the pan with a spatula. Cover with 2 slices of cheese and pour the batter again with a ladle.
  • Fry on one side and carefully turn over. Bake until golden brown.
  • Keep covered, serve with cream, pickles or cabbage.

INGREDIENTS

  • 1/2 kg of potatoes
  • 3 eggs
  • flour

  • a cup of sauerkraut
  • 3 tablespoons of oil
  • salt pepper

  • Add eggs, minced garlic, dried cabbage, marjoram, pepper and salt.
  • Mix in 2-3 tablespoons of flour, the dough must remain liquid.
  • Fry the potato pancakes on hot oil until golden brown on both sides. Pour the batter from the ladle, spread the spatula gently over the entire pan.
  • Keep covered, serve with cream and a sprig of dill.

INGREDIENTS

  • 1/2 kg of potatoes

  • a cup of finely chopped pickled mushrooms

  • Mix in 2-3 tablespoons of flour, the dough must remain liquid.

  • Keep covered, serve with cream and vegetables.

Pancakes with meat mixture

Another immortal classic is potato pancakes, for which we prepare an excellent meat mixture.

Ingredients 1

  • 1 kg of peeled raw potatoes
  • 250 ml of hot milk
  • 3 eggs
  • Salt to taste
  • Freshly ground four-color pepper (2 – 3 rotations of the grinder)
  • 2 tablespoons grated marjoram
  • 6 – 8 cloves of garlic
  • 7 heaped spoons of plain flour
  • A little olive oil for the dough and table oil for frying

Procedure 1

  1. Grate the potatoes in a large bowl, cover with hot milk and mix a little.
  2. Add eggs, olive oil, salt, spices, press garlic and gradually add flour while stirring constantly.
  3. The stated quantity is only indicative, as it always depends on the wateriness of the potatoes. If the dough becomes too thick, add a little milk, otherwise, use more flour to make a smooth but not too thin dough.
  4. Once we have mixed it carefully, heat the oil in a pan and pour in the batter with a ladle, which we spread to the sides to form the shape of the potato cake. Fry until golden on both sides.

Ingredients 2

  • 500 g of chicken breast
  • 1 red pepper
  • 50 ml of sunflower oil
  • 1 red onion
  • 3 spring onions
  • Salt to taste
  • A pinch of ground black pepper
  • 1 teaspoon sweet ground paprika
  • 1/2 tsp curry spice
  • 1 teaspoon of oregano (if you don’t like it, you can replace it with oregano, for example)

Procedure 2

  • Cut the meat into strips, put it in a bowl and cover it with oil, in which mix the spices.
  • Let it sit in the cold for about 1-2 hours. Meanwhile, clean the onion and spring onions and cut into slices.
  • Also clean the pepper and cut it into small cubes. Drizzle a little oil on the pan, add the meat and fry until soft.
  • Add salt, add onions and paprika and let it fry for a while longer. The vegetables must soften, but at the same time retain their crunch.
  • We serve by spreading the mixture on half of the potato cake and covering it with the other half.

Potatoes with smoked meat

We especially love smoked meat with mashed potatoes or we eat it with lentils, but it’s not bad at all in a potato cake like this.

Ingredients

  • 1 kg of raw potatoes
  • 4 eggs
  • Salt to taste
  • Ground black pepper as needed
  • 1 teaspoon ground cumin
  • 2 tablespoons of marjoram
  • 3 teaspoons of dried garlic
  • Plain flour (depending on the wateriness of the potatoes)
  • Smoked meat

Method

  1. Peel the potatoes, grate them, add eggs, salt, pepper, sprinkle with marjoram and garlic and mix. We mix and start gradually adding flour until we have a dough that will have a consistency similar to pancakes. Do not forget to stir so that lumps do not form in it.
  2. Cut the smoked meat into the thinnest slices possible (the thinner the better). Pour a little dough onto the hot oil in the pan, twist the pan a little so that it spreads over a larger area, place a slice of smoked meat on the dough and cover with more dough.
  3. Only a thin layer is enough, but enough to completely cover the smoked meat. Fry until golden on both sides and serve. If you want, you can add chopped spring onions or chives for decoration.

If you like, you can sprinkle thinly sliced onions, ideally red, but you can also use classic kitchen or spring onions.

If you don’t like frying, or fried delicacies are not good for you, try baked potato pancakes – you pour the dough on a baking sheet lined with baking paper and put it in a hot oven.

Bake longer than frying, about 15 minutes on each side , but you will save a lot of calories.
