What to do when the potato chips fall apart?
If they fall apart during shaping, they either need a little more flour or starch to hold together or are too wet and need to be re-wrung.
Your potato pancake mix needs to have as little moisture as possible. This is fundamentally important. Too wet batter and your patties won’t hold their shape, won’t be crispy, and won’t have the right brown exterior.
Squeeze out as much liquid as you can, maybe twice. Once after grating the potatoes and once while forming the patties.
Shape them well! First, use your hands to mix all the ingredients together. Then use a tablespoon to make sure each patty is the same size. Potato chips that are too thick will be steamed in hot oil instead of crispy.
Your oil must always be hot! bitter! bitter!
