Ingredients:

  • 500 g of chicken breast
  • 2 red peppers
  • ½ onion
  • 300 g grated cheddar
  • 1 ripe avocado
  • ½ teaspoon chili
  • ½ teaspoon of ground cumin
  • ½ teaspoon dried oregano
  • salt
  • pepper
  • 4 tortillas
  • 2 spring onions
  • 1 cup of sour cream
  • olive oil

Method:

  • Heat the olive oil in a large skillet over medium heat. Add diced pepper, onion and season with salt and pepper and other spices.
  • Simmer gently, after about 5 minutes remove from the heat and put the mixture on a plate next to it.
  • Add a little oil to the pan and add the chicken. Season only with salt and pepper and fry, stirring occasionally, until soft and done on the inside. Set the finished meat aside.
  • Place a tortilla on the pan with the meatloaf and sprinkle the top half with cheese. Add the chicken mixture and the pepper and onion mixture.
  • Then place a few slices of avocado and some chopped spring onions on top of the mixture.
  • Fold in the tortilla, press down and fry lightly on the other side as well. Continue like this for the remaining tortillas.
  • After frying, cut the quesadilla into triangles and serve with sour cream.

Shredded Beef Quesadilla

If you want to really care about the preparation, then choose this recipe with shredded beef. Well-done beef takes time, but the result is luxurious. This Mexican delicacy will make everyone salivate.

Ingredients:

  • 600 g of beef (back)
  • 1 onion
  • 2 cloves of garlic
  • 2 bay leaves
  • 250 ml of beef broth
  • 4 tortillas
  • 300 g of cheddar or other grated cheese
  • butter
  • salt
  • pepper

Method:

  • In a pressure or slow cooker, foam the onion in a little butter, add the bay leaf, crushed garlic, salt and pepper. Add the beef and fry it for a while over high heat.
  • Then pour in the stock and let it simmer on a lower flame for at least 4 hours (longer in a regular pot). Well-cured meat must fall apart after this treatment. Leave the meat to rest in the heat.
  • Lightly fry the tortilla on both sides in a dry pan, sprinkle one side with grated cheese. Place the shredded beef on top of the cheese (only meat without onions, etc.) and top with another layer of cheese.
  • Fold the tortilla in half and fry on both sides for about 4-6 minutes until the cheese melts.
  • Serve with sour cream or vegetable salad.

Tuna Quesadilla Recipe

Are you interested in a lighter option? Bet on fish. Tuna is a playful substitute for chicken, and this quesadilla is also great as a snack for school or a summer picnic.

Ingredients:

  • 100 tuna in its own juice
  • 100 g of mozzarella
  • 2 carrots
  • 1 ripe avocado
  • 3 tomatoes
  • 1 clove of garlic
  • ½ red onion
  • 1 tablespoon of olive oil
  • juice of 1 lime
  • 100 g of canned corn
  • salt
  • pepper

Method:

  • First, prepare the tomato salsa. Cut the tomatoes into small cubes, add finely chopped onion, crushed garlic, salt, pepper and sprinkle with lime juice. Let it sit.
  • Grate the mozzarella and mix it with the grated carrots and tuna.
  • Remove the pit from the ripe avocado and mash it with a fork. Mix with tuna mixture and corn, salt and pepper.
  • Take a tortilla, sprinkle it with cheese and put tomato salsa on it. Then add the tuna mixture and fold the tortilla in half.
  • Fry it in the pan on both sides for about 2-3 minutes. Cut into triangles and serve with iceberg lettuce.

TIP: Add beans or olives to the mixture for variety.

Veggie Quesadilla with Black Beans

As already stated in the title, we promised recipes with and without meat. Therefore, the vegetarian option cannot be missed here. The rich taste of beans, avocado and coriander will convince you that you don’t need meat.

Ingredients:

  • 1 onion
  • 1 red pepper
  • 100 g of black beans
  • 2 avocados
  • 1 handful of fresh coriander
  • 1 lime
  • 200 g of cheddar
  • 1 tablespoon of olive oil
  • 4 tortillas
  • 1 teaspoon Mexican (taco) seasoning
  • pepper
  • salt

Method:

  • Sauté the finely chopped onion together with the diced pepper in olive oil until the peppers are soft (2-3 minutes).
  • Add the black beans and spices. Cook for another minute, then set aside.
  • In a small bowl, mash the avocado with a fork, add lime juice, coriander, pepper and salt.
  • Take a tortilla, spread the avocado mixture on it, then add the bean mixture and cover with cheese.
  • Fold the tortilla in half and fry on high heat for 2-3 minutes. Serve with sour cream.
