A simple salad full of flavor, which is beautifully refreshing especially during summer days. You will love the combination of sweet tomatoes, salty goat cheese and spicy radishes!

Ingredients:

For the salad:

  • a few lettuce leaves, chopped
  • a few leaves of baby spinach
  • a handful of cherry tomatoes, halved
  • two radishes, finely chopped
  • 50 g of goat cheese

For the topping:

  • 1 and ½ spoons of olive oil
  • ½ tablespoon of red wine vinegar
  • juice of half a lemon
  • salt
  • freshly ground black pepper

Method

  1. Place lettuce leaves, spinach leaves, tomatoes and radishes in a bowl.
  2. In another bowl, mix the olive oil, vinegar and lemon juice.
  3. Season with a pinch of salt and pepper.
  4. This creates a salad dressing.
  5. Pour the dressing to taste over the ingredients in the first bowl and mix gently with a spoon or your hand to coat the vegetables nicely.
  6. Sprinkle the goat cheese over the salad and serve immediately.

Radish salad with cottage cheese

This salad is absolutely luxurious and at the same time very simple to prepare. What gives it its charm is serving whole radishes, including their green part, which is even healthier than their underground part. Enjoy it!

Ingredients:

  • 12 radishes
  • 4 spring onions, thinly sliced
  • 1 sprig chopped mint leaves plus additional leaves for serving
  • 1/2 bunch dill, chopped and extra for serving
  • 2 tablespoons of extra virgin olive oil
  • juice and finely grated rind of 1 lemon
  • 100 g of fresh sheep’s or goat’s cottage cheese

Method

  1. Wash the radishes and remove any wilted leaves from the green tops.
  2. Thinly slice half of the radishes, leaving the top green parts whole and set aside.
  3. Place radish slices, spring onion, mint and dill in a bowl.
  4. Add 1 tablespoon oil, half the lemon juice and a quarter of the zest and mix.
  5. Cut the remaining radishes in half lengthwise (try to keep the leaves attached to each half).
  6. Place a spoonful of cottage cheese on each serving plate.
  7. Add the radish halves with the green parts to the cottage cheese and scatter the remaining green parts on the arranged plate.
  8. Drizzle with remaining lemon juice, lemon zest, and 1 tablespoon oil.
  9. Sprinkle with dill and mint and serve.

Radish salad with yogurt-dill dressing

Luxury on a plate! Radishes, cold cucumber, baked chickpeas, lettuce and yogurt and dill dressing together create a perfect and fresh combination that you don’t have to be ashamed to serve even to the most demanding diners.

Ingredients:

For the salad:

  • 1 lettuce
  • 6 radishes, thinly sliced
  • 1 cucumber, thinly sliced
  • 1 large avocado, diced
  • 1 can of chickpeas
  • 2 teaspoons of olive oil
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon smoked paprika

For the dressing:

  • 3/4 cup Greek yogurt
  • juice of 1/2 lemon
  • 1 tablespoon of apple cider vinegar
  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground pepper

Method

  1. Preheat the oven to 200°C.
  2. Drain and rinse the chickpeas.
  3. Peel the chickpeas, but you can skip this step if you want to save time.
  4. Place the chickpeas on a baking sheet and toss with olive oil, sea salt and paprika.
  5. Bake the chickpeas in the oven for 40 minutes.
  6. After 40 minutes, remove from the oven and let rest for 10 minutes.
  7. Put it back in the oven for another 10-15 minutes until it’s nice and crispy.
  8. Mix all dressing ingredients in a small bowl.
  9. Refrigerate until ready to serve.
  10. Place the lettuce on a plate, spread the radishes, cucumber and avocado evenly over the salad.
  11. Pour the desired amount of dressing over the entire salad.
  12. Sprinkle with roasted chickpeas.
  13. Enjoy your meal!

A simple cucumber-radish salad

An excellent salad that will serve perfectly as a main dish thanks to the combination of potatoes, vegetables and ham. In addition, the lemon dressing gives it a luxurious twist!

Ingredients:

For the salad:

  • 10 potatoes, washed
  • 75 g of baby spinach
  • 1 bunch asparagus, trimmed and blanched
  • 100 g ham cut into thick slices, torn
  • 4 radishes, thinly sliced
  • 1 spring onion, thinly sliced
  • 2 tablespoons chopped basil

For the topping:

  • 2 tablespoons of lemon juice
  • 1 tablespoon of extra virgin olive oil
  • 2 teaspoons of coarse mustard

Method

  1. Cook the whole potatoes in a large pot of boiling salted water for 10 minutes until tender.
  2. Drain, and when cool enough, peel and cut into thick slices.
  3. Whisk together all dressing ingredients in a large bowl.
  4. While still warm, add the potatoes to the dressing and mix carefully.
  5. Set aside to cool.
  6. To serve, arrange the spinach, potatoes and remaining ingredients on a plate and drizzle with the remaining dressing.

For the salad:

  • 2 whole eggs
  • 1 bunch radishes (6-8 medium radishes), thinly sliced
