Method

  • Preheat the oven to 180 degrees and line a baking dish with aluminum foil and grease it.
  • In a large bowl, whisk together the flour, baking soda, and salt.
  • Stir in oatmeal and brown sugar.
  • Add the butter and use your fingertips to work the butter into a crumb-like mixture.
  • Add half of the oat mixture to the prepared baking dish and press it to the bottom.
  • Spread the raspberry jam in an even layer over the oat layer.
  • Sprinkle the rest of the oat mixture evenly over the top and then press lightly into the jam layer.
  • Bake in the preheated oven until golden, about 35-40 minutes.

Slices with raspberry filling and vanilla frosting

Here are our simple raspberry slices with four incredible layers: a buttery short crust, a dense raspberry filling, a brown sugar crumble and a dollop of sweet vanilla frosting. In addition to raspberries, strawberries are another popular fruit, so don’t hesitate to try strawberry cuts for every occasion.

What will we need

  • 115 g butter (melted)
  • 50 g granulated sugar
  • 1 teaspoon of pure vanilla extract
  • 1/4 teaspoon salt
  • 125 g semi-coarse flour

For filling

  • 240 g of raspberry jam
  • 12-16 fresh raspberries

On a dime

  • 45 g of oatmeal
  • 70 g of brown sugar
  • 1/4 teaspoon ground cinnamon
  • 30 g semi-coarse flour
  • 60 g butter (cold and cut into cubes)

For the frosting

  • 240 g of powdered sugar
  • 2-3 tablespoons of milk or cream
  • 1/2 teaspoon of pure vanilla extract

Method

  • Preheat the oven to 150°C. Line the bottom and sides of a square pan with baking paper.
  • In a medium bowl, combine the melted butter, granulated sugar, vanilla, and salt.
  • Add the flour and mix until combined.
  • Press the mixture evenly into the prepared baking pan.
  • Bake for 15 minutes.
  • Remove the crust from the oven and turn the oven on to 180°C.
  • Spread the marmalade on the crust and sprinkle with raspberries.
  • Mix the flakes, brown sugar, cinnamon, and flour in a medium bowl.
  • Add cold butter and make a crumb.
  • Sprinkle the marmalade with breadcrumbs and bake for 30-35 minutes or until golden brown. The raspberry filling should bubble around the edges.
  • Remove from oven and let cool at room temperature for at least 20 minutes, then refrigerate for at least 2 hours (or overnight).
  • Before serving, mix the icing sugar, 2 tablespoons of milk or heavy cream and vanilla extract.
  • Decorate the individual raspberry slices with the glaze.

  • 190 g golden oreos
  • 45 g butter (melted)

For raspberries

  • 125 g of fresh or frozen raspberries
  • 25 g of granulated sugar

For filling

  • 240 g of heavy cream
  • 120 g of powdered sugar
  • 450 g of cream cheese
  • 60 g of Greek yogurt or sour cream
  • 1 teaspoon of lemon juice
  • 1 teaspoon of vanilla extract
  • pinch of salt

Method

  • Line a square mold with baking paper.
  • Blend the cookies until you get fine crumbs.
  • Pour the melted butter into the cookies to combine the cookies and butter into a lumpy crumb.
  • Add the crumb to the prepared mold and press it evenly into the bottom of the mold. Put the pan in the freezer while you prepare the raspberries.
  • Add the raspberries to a small saucepan over medium heat along with the sugar.
  • Cook for about 5 minutes, stirring occasionally, until the raspberries have broken down and the sauce has thickened slightly.
  • After cooking, remove from the heat and pass the cooked raspberries through a fine sieve to remove the seeds.
  • Let the raspberry sauce cool in the fridge while you prepare the filling.
  • Pour the heavy cream into a medium bowl and whisk.
  • Add the cream cheese to a large bowl and beat until smooth.
  • Add yogurt, lemon, sugar, salt and vanilla and beat again.
  • Gradually add the whipped cream.
  • Spoon the mixture onto the cooled crust.
  • Pour the cooled raspberry sauce all over the cream cheese mixture and stir with a skewer.
  • Cover the unbaked raspberry slices with foil and let them cool in the fridge for at least 8 hours.
