Vegetable pan with smoked tofu and teriyaki sauce

The home of tofu is Asia, which is why even the most common tofu recipes belong to Chinese, Japanese or Vietnamese cuisine. Try the delicious sweet and salty skewers with tofu and pineapple seasoned with fresh ginger.

What will we need

For teriyaki sauce

  • 1/2 cup soy sauce
  • 1/4 cup maple syrup
  • 1/4 cup pineapple juice
  • 2 cloves of garlic
  • 1 teaspoon of freshly grated ginger
  • 1 tablespoon of starch
  • 1 tablespoon of water

For tofu and vegetables

  • 250 g of smoked tofu
  • 1/2 large red onion
  • 1/2 red pepper
  • 1/2 green pepper
  • 1/2 yellow bell pepper
  • 250 g of pineapple (you can also use canned)

Method

  1. First, prepare the teriyaki sauce: mix all the ingredients in a pot over a low heat and let it cook for about 2 minutes, stirring constantly. Then remove from heat and let cool slightly.
  2. Cut the tofu into cubes approx. 1×1 cm and cover with teriyaki sauce. Leave to marinate for at least 1 hour.
  3. Preheat the oven to 200°C.
  4. Pour the chopped marinated tofu, pepper, pineapple and onion into the baking dish
  5. Bake for about 30 minutes and turn several times during baking.
  6. After baking, remove from the oven, brush with the remaining marinade and serve immediately with e.g. rice.

Smoked tofu and chickpea spread

What will we need

  • 1 can of chickpeas
  • 175 g of smoked tofu
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons of mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 clove of garlic
  • a pinch of oregano
  • salt and pepper to taste
  • 1 small carrot
  • half a red pepper
  • 2 spring onions

Method

  1. Place all the ingredients in a blender and blend to a smooth paste. If you prefer a coarser texture, do not chop the vegetables by hand.
  2. Allow to cool and serve with pastries.

Crispy baked tofu nuggets

Tofu recipes often replace meat recipes, but even carnivores will like these nuggets. Try them with hot dip or sweet chili sauce.

What will we need

  • 1 package of tofu
  • 75 g of vegetable broth
  • 1 tablespoon of soy sauce
  • 75 g plain flour
  • 2 eggs
  • 150 g breadcrumbs
  • 2 teaspoons paprika
  • 1/2 teaspoon of garlic
  • 1/2 teaspoon onion
  • salt and pepper to taste

Method

  1. Preheat the oven to 200°C.
  2. Cut the tofu into cubes and lightly dry with a paper towel.
  3. Mix the stock and soy sauce and place the tofu in the mixture so that it is coated on all sides. Marinate for at least 10 minutes.
  4. Coat the marinated tofu cubes in flour, beaten egg and breadcrumbs. Place on a tray lined with baking paper.
  5. Bake for about 15 minutes, then turn and bake for another 15 minutes. Remove from the oven and serve with your favorite dip.

Smoked tofu and dried tomato spread

Wondering how to prepare tofu in a way other than Asian? Try this sun-dried tomato and olive oil Mediterranean spread that will get you going!

What will we need

  • 300 g of smoked tofu
  • 50 g of sun-dried tomatoes without oil
  • 15 g of yeast
  • 2 cloves of garlic
  • 2 tablespoons of lemon juice
  • 1 tablespoon olive oil
  • salt and pepper to taste

Method

  1. Peel the garlic and place in a blender along with the sun-dried tomatoes and blend.
  2. Add the cubed tofu, lemon juice, olive oil, salt, pepper and yeast and mix some more.
  3. Put in the fridge, where the spread will last up to a week.

Simple fried tofu with vegetables

Tofu is the alpha and omega of modern vegetarian cuisine, so we mustn’t forget the wonderful recipes made from tofu with vegetables. Baked tofu goes well with typically Asian side dishes – rice, pasta or perhaps couscous.

What will we need

  • 250 g of tofu
  • 4 tablespoons of soy sauce
  • 2 tablespoons of agave syrup or honey
  • 2 tablespoons of sesame oil
  • 1/2 teaspoon sweet chili sauce

Method

  1. Mix all the ingredients (except the tofu) in a bowl to make the marinade.
  2. Cut the tofu into cubes and dip thoroughly in the marinade. Leave to marinate for at least 30 minutes.
  3. Add oil to the pan and let it heat up.
  4. Add the tofu to the pan and fry until golden.
  5. Serve with steamed vegetables and rice noodles.

Korean tofu soup

This Korean soup is full of kimchi flavor, garlic spice, and silky soft tofu. It cooks in just 30 minutes for a delicious meal that’s vegan and gluten-free!

What will we need

  • 1 tablespoon of olive oil
  • 1 small onion, chopped
  • 3 cloves of garlic, chopped
  • 5 cm ginger, sliced
  • 120 g of kimchi
  • 1 teaspoon red chili flakes
  • 1 tablespoon of sesame oil
  • 1 tablespoon tamari
  • 140 ml of kimchi juice
  • 1 liter of vegetable broth
  • 1 package soft tofu, drained and cut into large cubes
  • 2 spring onions, sliced

Method

  • Heat the olive oil in a saucepan over medium-high heat, add the onion, garlic and ginger and cook for 2 minutes.
  • Add the kimchi, red chili flakes, sesame oil, tamari and kimchi juice and mix everything together and cook on medium heat for 1-2 minutes.
  • Pour in the broth, bring to a boil, then cover and let it bubble for 10-15 minutes.
  • Remove the lid and add the tofu and chopped green onions and serve.

What is tofu?

Tofu is a traditional Asian delicacy that originated in China around two centuries BC. Tofu did not reach us until the 20th century and literally conquered the whole of Europe. Tofu is tasty, healthy, vegetarian and vegan, gluten-free, rich in proteins , but low in carbohydrates and fats, so it’s actually almost an ideal food . So what is tofu made of?

The base of tofu is milk created from soybeans , which is mixed with curd and the result is basically a vegetable cheese. If the correct production procedure is followed, the resulting product does not have the characteristic leguminous aftertaste and in its natural form is ready for flavoring and further processing.

You can eat natural tofu raw, but its spongy structure is ideal for marinating and seasoning . Due to this, it has an almost universal use in the kitchen as a meat substitute – it perfectly absorbs all the flavors of the spices you add to it. In addition, he is good to work with.

Tofu is already commonly available in our stores, as it forms part of a healthy diet, which has been very popular in recent years. There are two basic types of tofu – hard and silken .

Silken tofu has the consistency of cream cheese and has a comparable use, especially in vegan cuisine – it is used in sweet desserts, but you can also make balls from it for frying.

You can buy classic “hard” tofu either in its natural version or marinated in various ways, e.g. herbal, chili, deli… The most popular and probably the tastiest is smoked tofu , which is comparable in taste to e.g. smoked cheese.

What to watch out for when eating tofu:

  • tofu and all soy products contain large amounts of oxalate – not suitable for people suffering from oxalate kidney stones
  • some studies suggest that increased soy consumption may be associated with higher rates of breast cancer, but the link has not been fully proven
  • phytoestrogen in soy products may have a slightly feminizing effect (breast development in men) or have an impact on fertility
  • soy products originating in the USA are often genetically modified (GMO) – the solution is to buy organic tofu
  • soy products can be treated with hexane (solvent) – the solution is to buy organic tofu

Soy does not have to be in the form of tofu – try other great recipes from soy .
