Ingredients for the body
- 270 g plain flour
- 220 g of granulated sugar
- 2 eggs (room temperature)
- 120 g butter (softened)
- 225 ml buttermilk
- 1 teaspoon of vanilla extract
- 2 tablespoons of Dutch cocoa
- 1 teaspoon white vinegar (wine)
- pinch of salt
- 1 teaspoon of baking soda
- 1 teaspoon food coloring (red)
Ingredients for the filling
- 500 g mascarpone
- 500 g creme fraiche (or sour cream)
- 4 tablespoons of powdered sugar
Method
- First, preheat the oven to 170°C. Grease the cake pan with butter and sprinkle with cocoa powder.
- Mix softened butter with sugar and vanilla extract in a bowl. Blend for about 5 minutes to achieve a frothy consistency.
- Then beat the eggs (room temperature) into the foam and mix gradually.
- In another bowl, mix flour with cocoa, soda and mix everything with a whisk.
- In another bowl, mix buttermilk with food coloring and vinegar into a thin paste.
- Add a third of the flour mixture to the melted butter with the eggs, then add the colored mixture. Then gradually work in the rest of the red flour mixture. You should get a dough that is neither thin nor thick.
- Pour the resulting dough into the prepared mold and bake for 35-40 minutes, until the surface is evenly risen and elastic to the touch. Leave to cook for another 5 minutes in the partially opened oven, then remove and leave to cool completely on a wire rack.
- Cut the cooled carcass into two parts. Save the clippings. You crush them and decorate the cake with them at the end.
- You prepare the cream by mixing mascarpone, powdered sugar and creme fraiche.
- Spread the cream first on the bottom layer (do not skimp on it), then fold the top layer, spread the cream on the sides of the cake as well. Finally, sprinkle the surface of the cake with the crumbled scraps of the corpus. And you’re done.

- In a large bowl, combine the sugar, flour, cocoa, baking powder and salt.
- In another bowl, mix the buttermilk with the oil and add the eggs, vanilla extract, vinegar and red food coloring. Beat with a whisk.
- Gradually mix the wet mixture into the dry flour mixture until you have a smooth dough.
- Slowly pour in the boiling water, stirring constantly.
- Pour the resulting batter into the prepared pan and bake for 30-35 minutes or until a skewer inserted comes out clean. Then leave to cool on a wire rack.
- Mix butter, mascarpone in a bowl and mix until smooth. Slowly add the powdered sugar and finally the vanilla extract and one tablespoon of whipping cream.
- Beat until the frosting is pale and pretty fluffy. If necessary, add another spoonful of cream.
- Cut the cooled cake on the surface so that it is flat. Save these scraps for decorating the cake.
- Spread the frosting evenly over the entire cake and smooth it with a spatula. Finally, crumble the scraps all over the surface and you’re done.

- Slowly add the dry ingredients to the liquid ingredients and mix well. Divide the resulting dough into two prepared cake molds and bake for 25-35 minutes. Test with a toothpick to see if the dough is ready.
- After baking, leave to cool in the tins for 10 minutes, then turn out onto a wire rack and leave to cool completely.
- Meanwhile, in a bowl, beat the butter with the vanilla extract, a pinch of salt until foamy, then add the powdered sugar and mix for about 5 minutes. Then mix in the mascarpone.
- Align the body so that the surface is flat and put the scraps aside, you will need them for decoration.
- Cut both carcasses evenly to obtain four sheets.
- Spread the first sheet with a thin layer of cream, fold the second part and spread the cream again. Then place the two remaining sheets and also spread with a layer of cream.

- Beat in one egg at a time. Pour the resulting mixture into the prepared mold and bake for 40-55 minutes. Then let cool on a wire rack for at least an hour.
- Meanwhile, prepare the base for the Red Velvet. Leave the oven preheated and grease and flour two cake tins.
- Beat the butter with the sugar until fluffy. Then add the eggs one at a time and beat on high.
- In another bowl, mix the cocoa, vanilla extract and red food coloring into a thick paste. Then add the mixture to the butter mixture and stir to combine properly.
- Reduce the mixer speed to low and slowly add half the buttermilk with half the flour. Then add the remaining buttermilk and flour and beat until smooth.
- Reduce the speed of the mixer again and add the salt, baking soda and vinegar. Turn on high speed and beat for a few minutes until smooth.
- Divide the batter evenly between the two cake pans and bake for about 30 minutes, or until a skewer inserted comes out clean. Leave to cool for 10 minutes, then remove from the tins and leave to cool completely on a cooling rack.
- Prepare the frosting by beating the butter with the powdered sugar, vanilla and a pinch of salt in an electric mixer until smooth. Increase speed and add curds one at a time. Mix for another 2 minutes to combine.
- You can assemble the cake. If necessary, cut off the tops of the bodies and save the scraps for decoration at the end.
