Rhubarb pie from a mug
You don’t need a scale for this sweet rhubarb recipe, just your favorite mug! You can conjure up this perfect soft, fluffy and supple cake without any weighing!
What will we need
- 4 cups rhubarb
- 2 tablespoons of lemon juice
- 2 cups of strawberries
- 1 white yogurt
- a cup of sugar
- 3/4 cup oil
- 3 cups semi-coarse flour
- baking powder
- grated almonds for sprinkling
Method
- Beat eggs with sugar, add flour and baking powder.
- Mix oil and yogurt into the mixture.
- Beat, divide the resulting dough into 2 parts.
- Peel the rhubarb stalks, cut them into approximately 2 cm long sticks.
- We use young rhubarb either raw, or we boil it for a while in sweetened water, let it drain, cool and then use it.
- Older rhubarb, when the stems are already woody, are not suitable for use.
- We mix rhubarb with strawberries and sugar to create a filling that we cover with the first layer of dough.
- Pour the other half of the dough over the filling and sprinkle with almonds.
- Bake for 35 minutes at 180º C.
We recommend supplementing sweet recipes with rhubarb with dairy products, for example flavored cottage cheese or sour cream.

Sponge cake with rhubarb
Fluffy dough like a cloud and sweet and sour rhubarb will put a smile on your face after the first bite.
What will we need
- 400 ml of whipping cream
- 200 g of granulated sugar
- 1 bag of vanilla sugar
- 5 eggs
- 450 g plain flour
- 1 bag of baking powder
- 3 cups chopped, peeled rhubarb
Method
- Preheat the oven to 200°C.
- Pour the cream into a large bowl, mix it with sugar and vanilla sugar and beat until semi-stiff. Then mix in eggs and flour sifted with baking powder one at a time.
- Place the rhubarb on top of the dough in the baking dish – it will fall into the dough by itself during baking.
- Bake for 30 minutes at 200 º C.
- Serve sprinkled with powdered sugar.

Method
- Preheat the oven to 180 ºC.
- Separate the yolks and whites. Beat the yolks with sugar, then add softened butter and milk or cream.
- In another bowl, beat the egg whites until stiff.
- Mix baking powder with vanillin sugar and flour.
- Then carefully mix the snow and flour into the yolk mixture.
- Bake for about an hour.

- 1 kg of rhubarb
- 1/2 kg of sugar

Method
- Boil peeled and chopped rhubarb in a little water, add sugar.
- Boil to a thick consistency.
- If we add other fruits, we cook them with rhubarb.

What will we need
- 8 cups chopped rhubarb
- 2 liter canning jars with lids
- 4 spoons of sugar
Method
- Peel and cut the petioles into sticks, boil for a few minutes, set aside and let stand.
- Then we take it out, straighten it in glasses, sprinkle with granulated sugar in the ratio of 2 spoons of sugar per liter glass and close the lids.
- Sterilize for 10 minutes at 85 °C and then cool immediately.
