  • 1/2 teaspoon of sugar
  • 1 tablespoon of Shaoxing wine
  • 1/4 teaspoon ground black pepper
  • A little beaten egg to coat the pork chops
  • 1 and 1/2 tablespoons of cornmeal

For the tomato sauce:

  • 1/2 medium onion, sliced
  • 2 coarsely chopped garlic cloves
  • 50 g of mushrooms cut into slices
  • 40 g of paprika cut into large cubes
  • 1 large tomato cut into large cubes
  • 2 tablespoons of tomato puree
  • 1/2 teaspoon of salt
  • 2 teaspoons of cane sugar
  • 1/4 cup of water
  • 1 teaspoon cornstarch (mix with 2 tablespoons water to make a slurry)

To finish:

  • Grated cheese of your choice
  • Chopped parsley for garnish
  • Frying oil

  • Put oil in a pan and fry the garlic in it. Add beaten eggs and fry until they have the consistency of scrambled eggs.
  • Add the cooked rice and sauté while stirring constantly. Season with salt and pepper.
  • We set the stove to full and fry on high heat for the last 20 seconds, then remove the pan.
  • Cut the pork chops so that they are no more than 1 cm thick. Beat them thoroughly with a meat mallet.
  • Mix salt, sugar, Shaoxing wine, white pepper in a bowl and add the patted cutlets. Wrap in the mixture and leave to rest in the fridge for at least 1 hour so that the marinade can take effect.
  • Then take out the chops and dip them in beaten eggs. We coat in corn flour and put in hot oil in a pan, where we fry on both sides until the chops are golden.
  • Cut the cutlets prepared in this way into smaller pieces and set aside for now.
  • Put the onion and garlic in the pan from the cutlets and fry until they begin to smell.
  • Add the mushrooms, chopped tomatoes, tomato puree, water, salt and sugar and let it cook for about 3 minutes.
  • We add paprika and finally thicken the mash that we previously prepared from cornstarch and water.
  • Preheat the oven to 175 degrees.
  • Prepare a baking dish and put the rice prepared at the beginning on the bottom. Place pieces of pork chops on top of the rice and cover with sauce.
  • Sprinkle with grated cheese and place in the preheated oven. Bake for about 15 – 20 minutes.

Is round or long grain rice better?

Rice is good for health, there is no doubt about it. It contains B vitamins, starch and is gluten-free. Although there are many types of rice, the most commonly used are definitely long-grain and round-grain.

In the case of the long grain, it is a universal and very popular type. It has thin grains and when cooked properly, it is not sticky at all.

The most popular long-grain rice is, in addition to the classic, basmati or jasmine rice. It is great for meat and vegetable dishes. Round grain is most suitable for risotto, porridge or increasingly popular sushi.
