- 125 g of romadur

- ½ teaspoon of ground cumin
- Pinch of salt
- Ground black pepper
- 125 g of fresh cheese
Method
- Mash the mature cheeses together with the butter in a bowl
- Add the onion and the remaining spices
- Mix everything together again to combine the ingredients
- Add fresh cheese to achieve a creamier consistency
- Finally, stir in the freshly pressed garlic
- The spread gets a reddish color thanks to the paprika
- Put the spread in the fridge for a few hours so that the flavors combine and the garlic gains intensity
- The spread is served with pretzels, bread and beer
If you like a smooth spread, blend the cheeses, butter and spices in a food processor until smooth. Add the chopped onion and garlic last and mix by hand.

Romadura spread with nuts

What will we need
- 200 g of ripe romadur
- 75 g walnuts (toasted)
- A spoonful of honey
- Fresh thyme (can also be dried)
Method
- We cut off the upper part of the crust from the romadur and cut the sides into cubes
- Put it in the oven at a very low temperature and let it soften
- Bake for about 30 minutes
- Then we transfer it to a food processor and mix until the cheese acquires a creamy consistency
- Add honey, thyme and salt to taste and mix lightly
- Serve the spread sprinkled with toasted walnuts

Ripe cheese in bread
This spread with romadur will make an impression especially with the style in which it is served. Its taste is fantastic and it will make you even more excited about the fact that its entire volume is in the bread.
What will we need
- Large onion (finely chopped)
- 4 cloves of garlic (pressed)
- 2 tablespoons of butter
- 250 g romadur (peeled and diced)
- 250 g of cream cheese
- 125 g sour cream
- 2 teaspoons of brown sugar
- 2 teaspoons of lemon juice
- A teaspoon of Worcestershire sauce
- Pinch of salt
- A pinch of pepper
- Loaf of sourdough bread (approx. 450 g)
- Pepper
- Fresh vegetables
Method
- Fry the onion and garlic in butter in a large pan
- Fry the mixture for approximately 10 minutes until the onion turns golden
- Remove the pan from the heat and set aside
- Place the peeled romadur in the oven and let it warm up at a low temperature
- Meanwhile, whip sour cream, brown sugar, lemon juice, Worcestershire, salt, pepper and onion
- Then stir the cream cheese into the mixture and set aside
- Cut off the upper part of the loaf
- Hollow out the loaf and leave only a small layer of dough on its bottom
- Cut the hollowed-out part of the bread into cubes
- Mix the melted romadur and cheese mixture together
- Pour the cheese mixture into the hollowed-out loaf
- Cover with the cut off part and wrap the whole loaf in aluminum foil
- Bake the wrapped bread in the oven at 200 degrees for about an hour
- The spread is served in a loaf sprinkled with paprika together with bread cubes and fresh vegetables

Romadur beer spread

- 110 g blue cheese (niva)

- 4 slices bacon (fried)
- 230 g of fatty cottage cheese
- 130 g of romadur
- 30 ml of milk
- 2 tablespoons of lemon

- Cut the fried bacon into small pieces
- Put it in a food processor (or in a bowl, then mix by hand) and add the other ingredients

- A sprig of rosemary
- 2 cloves of garlic

Method
- Mix maple syrup, garlic and water in a small pot on the stove
- We mix until the contents start to ring, i.e. 10-15 minutes
- Discard the rosemary and garlic
- Remove the syrup from the heat and set aside to rest
- Cut off the top crust from the cheese

What will we need
- 3 tablespoons fig marmalade (or half and half with honey)
- 75 g dried figs (cut into slices)
- 50 g shelled pistachios (roughly chopped)
- 50 g walnuts (roughly chopped)
- 370 g of romadur
Method
- Preheat the oven to 190 degrees
- Chop the figs, nuts and pistachios into a small bowl
- Add half of the fig marmalade and mix everything together to coat the nuts and figs
- Cut off the top rind from the cheese and cut it with grid cuts
- Put the romadur in a baking dish
- Spread it with the rest of the jam (or honey)
- Add the fig and nut mixture on top
- Place the bowl in the oven and bake for approximately 10-15 minutes until the cheese softens
