- 250 g of sponge cake
- 400 g of sweetened condensed milk
- 80 g of dried coconut
- 25 g of Dutch cocoa
- A teaspoon of finely grated orange peel
- 60 ml of dark rum
- 40 g desiccated coconut (toasted)
Method
- Process the cookies into fine crumbs
- Transfer the crumbs to a large bowl
- Add condensed milk, coconut, sifted cocoa, orange peel and rum
- Mix everything well to combine the ingredients
- Shape the dough into walnut-sized balls
- Roll the balls in extra coconut
- Place them on a tray, cover and refrigerate until solidified

Coconut balls with rum
I like to use dark coconut rum for this recipe to help bring out the coconut flavor of the balls. If you want, you can also use regular dark rum, this will give you a strong rum taste, rather than coconut.
What will we need
- 350 g of vanilla cookies
- 200 g of pecans
- 90 g of powdered sugar
- 60 g of high quality cocoa
- 30 ml dark coconut rum (you can use regular dark rum)
- 3 tablespoons light corn syrup
- 200 g grated coconut (for coating)
Method
- Pour the coconut into the bowl of a food processor and process until smooth
- Set the coconut aside in a shallow bowl for later use
- Place the cookies and nuts in a food processor
- We process the ingredients until they are ground into small pieces
- Pour the cookie and nut mixture into a large bowl and add the icing sugar and cocoa
- Stir to combine the ingredients
- Add corn syrup and rum
- Mix again
- We may need to use our hands to mix so that the ingredients are evenly combined
- Use your hands or a small cookie scoop to make balls out of the mixture
- Wrap each ball in the reserved coconut
- Store in an airtight container
- Let them sit for at least a day before serving so that the flavor develops

Rum balls with raisins
Nothing says Christmas more than these simple, festive balls made with rum and chocolate, cocoa and, of course, rum raisins.
What will we need
- 50 g raisins (chopped)
- 2 tablespoons of dark rum
- 250 g of chocolate biscuits
- 50g Dutch cocoa powder (plus an extra 50g)
- 180 g of desiccated coconut
- 400 g of sweetened condensed milk
Method
- Line a large tray with baking paper
- Place the raisins and rum in a large bowl and let stand for 10 minutes to soften the raisins
- Meanwhile, put the cookies in a food processor and blend until they are finely crushed
- Add cookies, cocoa, coconut and condensed milk to the raisin mixture and mix well with clean hands
- Pour extra cocoa on a plate to hand
- With lightly greased hands, shape rum balls from the dough, which are then coated in extra cocoa
- Place the balls on the prepared tray and refrigerate them for 2 hours until solidified

- 350 g finely chopped pecans (divided 250 g + 100 g)
- 60 ml of bourbon
- 125 g butter, softened
- 250 g of powdered sugar
- 500 g dark chocolate frosting (melted)
Method
- Mix 350 g of pecans and bourbon
- In this way, let the mixture stand covered for 8 hours or overnight
- Mix the softened butter and powdered sugar until combined, then fold in the pecan mixture
