Fresh salads with fresh spring vegetables

Overcoming winter requires an increased supply of vitamins, especially vitamin C and minerals.

It is healthiest to supply these vitamins directly from fresh vegetables, so let’s forget about the most well-promoted tablets and look at what is offered to us.

Some vegetables can be eaten on their own, but most vegetables, especially leafy ones, are suitable for salads.

Mimosa Lettuce

It is ideal for your table in spring or summer, when there is plenty of fresh, high-quality salad.

INGREDIENTS

  • 1 lettuce
  • 4 tablespoons of breadcrumbs
  • 2 eggs
  • 1/2 a smaller lemon
  • 6 spoons of fine vegetable oil, ideally cold pressed
  • salt

METHOD

  1. Remove the outer leaves from the salad, carefully rinse the hearts and let them drain thoroughly with the stem upwards.
  2. Dry-fry the breadcrumbs in a non-stick pan until golden.
  3. Hard-boil the eggs, cool, peel and cut into centimeter cubes.
  4. Then we wrap them in warm toasted breadcrumbs.
  5. In a bowl, mix the lemon juice, salt and oil with a whisk until a thick dressing is formed.
  6. Cut the hearts of the salad into several pieces or separate them into leaves and tear a little more.
  7. Mix with the dressing and divide into two plates.
  8. Sprinkle the salad on the plates with the prepared eggs.
  9. Serve immediately, because the crispy breadcrumbs will get wet as they stand and the salad will wilt due to the dressing.

Radish salad with parsley

Simple, crisp and fresh. Perfect for a spring lunch.

INGREDIENTS

  • 2 bunches of radishes
  • 1/2 bunch of parsley
  • 2 tablespoons of lemon juice
  • salt and pepper
  • 2 tablespoons of olive oil

METHOD

  1. Wash the radishes thoroughly and remove the roots and leaves.
  2. Cut them into slices and put them in a bowl.
  3. Finely chop the parsley and add to the radishes.
  4. Season with lemon juice, salt, pepper and drizzle with oil.
  5. Serve as a side dish to grilled or stewed meat.

Tomato salad with parmesan

A simple salad with fresh herbs topped with great parmesan cheese.

INGREDIENTS

  • 6 tomatoes, nicely ripe, cut into chunks
  • 1 red onion, finely sliced
  • 2 tablespoons of chopped coriander
  • 1 teaspoon finely chopped dill
  • salt and pepper to taste
  • 40 g of grated parmesan

METHOD

  1. Mix the tomatoes and onions, sprinkle with coriander and dill.
  2. And just before serving, sprinkle with salt and drizzle with olive oil.
  3. Sprinkle with Parmesan.
  4. Serve with pulled pork sandwiches.

Asparagus salad with strawberries and cheese

We present a recipe for a colorful salad with asparagus, strawberries and spicy reduction.

INGREDIENTS

  • 500 g of green asparagus
  • 1 pack of bugle
  • 250 g of fresh strawberries
  • 6 tablespoons of olive oil
  • 2 teaspoons of balsamic reduction
  • 1 tablespoon of lemon juice
  • 150 g of feta cheese
  • pine nuts for sprinkling

METHOD

  1. If the green asparagus is fresh, we don’t need to peel it, just cut off about 2 cm of the ends, which can be woody.
  2. Throw the asparagus into boiling salted water and cook for about 3 minutes.
  3. Then throw the asparagus into a bowl of ice water to stop the cooking process, the asparagus will remain beautifully green and crunchy.
  4. Prepare the dressing in a bowl – whisk together olive oil, balsamic reduction, lemon juice, salt and pepper.
  5. Clean the strawberries and cut them in half, fry the pine nuts in a dry pan over a low heat until golden and set aside.
  6. Put the bugle in the bowl with the dressing and mix carefully.
  7. Divide the seasoned salad onto plates.
  8. Put chilled asparagus cut into 5 cm pieces, prepared strawberries and crumble cheese on top.
  9. Finally, sprinkle everything with pine nuts and you can drizzle a few drops of olive oil and balsamic reduction.
 TIP: You can use other types of cheese or even more types in the salad. In addition to feta, cheeses with blue mold, double-molded cheeses, Camembert-type cheeses, fresh goat cheeses or mozzarella are also suitable for the salad.

Cabbage salad with ham

You can also make a tasty and quick salad from kohlrabi, which can be prepared the day before, for example as a snack or as an addition to dinner.

INGREDIENTS

  • 1 kohlrabi
  • 1 spring onion
  • 100 g of quality ham
  • chive
  • 1 cottage cheese
  • 1 spoon of mayonnaise
  • salt and pepper

METHOD

  1. Grate the kohlrabi on a coarse grater.
  2. Cut the ham into strips, chop the spring onion and chives.
  3. Combine everything with cottage cheese and a spoonful of mayonnaise.
  4. We salt, pepper and let it sit in the fridge for a while.
  5. Served with pastry.
