Savory Zucchini Pie
Try this unique Savory Pie with Zucchini and Red Onion. Zucchini will add enough vitamins and minerals to your cake.
Dough ingredients
- 230 g plain flour
- 100 g of butter
- 1 egg
- 3 tablespoons of lukewarm water
- pinch of salt
Ingredients for the filling
- 1 small zucchini (250 g)
- 200 g of ricotta cheese
- 1 whipping cream 31%
- 3 eggs
- 1 red onion
- 3 tablespoons of chives
- salt pepper
Procedure for the dough
- Sprinkle a pinch of salt into the flour, mix and add butter.
- If the butter is solidified from the fridge, grate it into the flour using the coarse side of a grater.
- Add the eggs and mix everything with your hands.
- We will have a crumb, which we use spoons of lukewarm water to combine into a dough, which we wrap in cling film and put in the fridge to rest for at least an hour.
- Take the dough out of the fridge and roll it out.
- Put it in a 27 cm diameter cake tin, pierce it with a fork in several places so that the dough does not puff up during baking.
- For the same reason, we put a foil on it, on which we pour any raw (uncooked) legume or rice that we have on hand.
- Pre-bake in the oven at 180 °C for about 10 minutes.
Filling procedure
- Mix eggs with cream, beat.
- Add ricotta, salt, pepper, chopped chives and mix everything well.
- Wash the courgette and the onion and cut them both into rounds.
- After the dough is pre-baked, we take it out, remove the foil with weight (legumes, rice) and do not turn off the oven, because we will use it immediately.
- Pour the prepared ricotta filling onto the dough and then place the zucchini and onion slices.
- Put it back in the oven and bake at the existing 180 °C for another 30 minutes.

Onion pie
Do you have a surplus of onions at home? What should she use for a savory pie with onions? The result is worth it. Get inspired!
Dough ingredients
- 175 g of plain flour (1 tablespoon of flour can be replaced with parmesan, the dough is then even more delicious)
- 100 g cold butter cut into cubes
- 1 egg yolk
- 4 tablespoons of cold water
Ingredients for caramelized onions
- 5 red onions cut into strips
- half to 1 tablespoon of sugar
- 3 tablespoons of high-quality balsamic vinegar
- salt pepper
- rosemary
- spoon of olive oil
Ingredients for the filling
- 100 ml whipping cream
- 50 ml of milk
- 1 egg and 1 egg white
- 100 g strong cheese (gouda, cheddar, …)
Procedure for the dough
- Put all the ingredients in a large bowl, first mix them with a fork, then start processing by hand.
- We work quickly, when the dough is roughly combined, we turn everything out onto a floured roll and knead for a while longer.
- The dough should be a consistent ball.
- We wrap the dough in food foil and let it rest in the fridge for half an hour.
Filling procedure
- Heat the olive oil in a pan, add the onion and a sprig of rosemary, and sauté on medium heat for about 10 minutes.
- Cover the onion with sugar, fry everything together for a while until caramel forms on the onion.
- Add 3 tablespoons of balsamic vinegar, let it evaporate and remove from the heat, remove the rosemary sprig.
- Preheat the oven to 200°C.
- We roll out the dough on a floured roll, roll it onto a rolling pin, roll it out into a mold and press it with our fingers.
- We will leave the edges higher, because during baking the dough will burn a little and the edges will decrease a little bit, we will cut off the rest of the dough.
- Pierce the dough with a fork and place a piece of baking paper on it, sprinkle a handful of dry beans on it as a weight and put it in the oven.
- Bake for 15 minutes, then remove the beans and baking paper and bake for another 5 minutes, until the surface is lightly golden.
- Grate the cheese and set it aside. Beat eggs with milk and cream in a bowl, season well with salt and pepper.
- Take the pre-baked body out of the oven, pour a little cream mixture on the bottom, place part of the onion on it, cover with cheese, cover with the remaining cream, and place the rest of the onion and cheese.
- Reduce the temperature in the oven to 190°C and bake for another half hour.

Broccoli Savory Pie
Broccoli is an excellent vegetable not only for soups or baked potatoes and salads. It also makes a delicious and healthy cake. Try it and let us know how it tasted.
Dough ingredients
- 250 g plain flour
- 125 g of butter
- 1 egg
- 25 ml of water
- salt
Ingredients for the filling
- 250 ml cream (33%)
- 125 ml of milk
- 3-4 eggs
- salt
- pepper
- 1 piece of broccoli (florets)
Method
- We prepare a smooth dough from flour, butter, egg, water and a pinch of salt, which we leave to rest in the cold for 2 hours.
- Then we roll out the dough and put it in the mold.
- Pierce the bottom with a fork, cover with foil and sprinkle dry beans or other legumes (for weight) on top.
- Bake for approx. 10-15 minutes in an oven heated to 180 °C.
- Let the body cool down and you can fill it.
- Cut the broccoli florets into smaller pieces and boil them briefly in salted water.
- Let it drain.
- We pile it on top of the pre-baked dough and cover it with a dressing made of cream, milk and eggs, which we only lightly salted and seasoned with pepper.
- Before baking, the cake can be sprinkled with grated cheese such as gruyer, cheddar or camembert.
- Bake for another 25 minutes.

Vegetable pie from puff pastry
This really easy and cheap recipe will be appreciated by anyone who wants to quickly prepare something, for example for a meeting with friends or family.
Ingredients
- 1-2 slices of puff pastry
- 1 egg
- 1 tablespoon semi-coarse flour
- 1 whipping cream
- Salt pepper
- Provencal herbs
- Hard cheese – edam, gouda, cheddar or parmesan,…
- 350g of frozen vegetables
Method
- Roll out 1-2 slices of puff pastry, depending on how big your mold is. Roll them out to a thickness of 3-4 mm.
- Put the rolled out dough in a pie form, cover with frozen vegetables.
- Beat the egg with cream, salt and pepper, then pour it over the vegetables in the mold.
- Top everything with grated cheese of your choice and Provencal spices.
- Place the cake in a preheated oven at 180°C and bake until golden.
- The cake is best served warm. However, it is also good cold.

Spinach quiche with cheese
Get inspired by the cake, which is great as an appetizer but also as a warm dinner. You can serve it warm or cold. It’s up to you how you like it best.
Dough ingredients
- 300g plain flour
- 170g of butter
- 1 egg
- 60 ml of cold water
- Pinch of salt
Ingredients for the filling
- 250 ml of milk
- 1 cup of whipping cream
- 6 eggs
- 250g of fresh spinach (e.g. baby spinach)
- 70g Parmesan (or other hard cheese)
- Salt and pepper
Method
- Place the ingredients for the dough in a bowl and make a smooth dough. Place the finished dough in the refrigerator for at least half an hour.
- Preheat the oven to 170°C.
- Wash the spinach in cold water and then scald it with boiling water. Let it drain and, if necessary, chop it lightly.
- Grate the hard cheese.
- Beat eggs with cream in a bowl, add milk, grated cheese, salt and pepper.
- Roll out the smoothed dough and use it to line a cake mold or a smaller tray.
- Place the spinach on top of the dough and pour over the egg and cream mixture.
- Place the cake in the preheated oven and bake for about 40-45 minutes.

There aren’t many restrictions on savory pie fillings. A number of common raw materials can be used. We can use different pieces of meat, sausages, cheeses and boiled or raw eggs.
However, since we want to have cakes mainly with vegetables, we will choose, for example, one of the fillings, where the vegetable base is broccoli, spinach, peppers, carrots, cabbage.
