Spinach Muffins with Cheese

These soft muffins are perfect for a weekend brunch. Spinach together with strong cheese creates a luxurious combination of flavors.


  • 300 g plain flour
  • 150 g of fresh spinach leaves
  • 2 eggs
  • 110 g of Niva or feta cheese
  • 255 liters of milk
  • 1 tablespoon of baking powder
  • 1 teaspoon of salt
  • 5 tablespoons of olive oil
  • 1/2 clove of garlic


  1. Preheat the oven to 190°C.
  2. Cut the spinach into pieces, finely chop the garlic.
  3. Mix flour with baking powder and salt.
  4. Beat the milk with eggs and oil and mix with the loose mixture.
  5. Mix spinach with garlic and cheese into the dough.
  6. Divide into greased (or paper-lined) muffin tins and bake for approx. 20-25 minutes.

Savory muffins with parmesan cheese, bacon and spring onion

These muffins are salty through and through – from the topping to the batter. Extra virgin olive oil also gives them a distinctive rich taste. Enjoy them for example as a hearty breakfast, but they also work great as a light lunch.


  • 5 slices of English bacon
  • 3 spring onions
  • ¼ cup grated Parmesan cheese
  • ¼ cup plain yogurt
  • ¼ cup of milk
  • 1 egg
  • 1 cup plain flour
  • 1 teaspoon of baking powder
  • ¼ cup olive oil
  • salt and pepper


  1. Preheat the oven to 180°C.
  2. Grease muffin tins with olive oil or use paper cups.
  3. Dice the bacon and onion.
  4. Mix with the rest of all ingredients except Parmesan.
  5. After mixing thoroughly, pour the dough into the molds and bake for 20 minutes at 200°C.
  6. Five minutes before the end, sprinkle the muffins with Parmesan cheese and let them bake until golden.
  7. After removing from the oven, let them cool down for a while.
  8. You can serve them with potatoes or eat them alone, for example with wine.

Vegan muffins with tomatoes, corn and caramelized onions

These vegan savory muffins are filled with juicy tomatoes, sweet corn, caramelized onions and seasoned with Italian herbs. It is an excellent breakfast, it is also great as a packed lunch or as a snack at any time of the day.


  • 1 cup whole wheat flour
  • 1 cup plain flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 1 tablespoon of Italian herbs
  • 1/2 teaspoon ground black pepper
  • salt to taste
  • 1 cup chopped tomatoes
  • 1/2 cup corn kernels fresh/frozen/canned
  • 1/4 cup chopped spring onions (white and green parts)
  • 1 and 1/4 cup soy or any other plant-based milk
  • 1 teaspoon of apple cider vinegar
  • 1/4 cup + 1 tablespoon of any cooking oil (preferably neutral flavored)


  1. Heat 1 teaspoon of oil in a pan and add chopped onion.
  2. Add sugar, salt and sauté until the onion caramelizes.
  3. Put soy milk in a bowl and add apple cider vinegar.
  4. Let it stand for a few minutes.
  5. Mix both flours, baking soda, baking powder, pepper, salt and Italian herbs in a bowl.
  6. In another large bowl, mix the curdled milk and oil.
  7. Add the dry ingredients and mix well.
  8. Next, we add caramelized onions, tomatoes, corn and spring onions.
  9. We mix.
  10. Put the muffin batter into muffin tins and bake in a preheated oven at 180°C for about 25 minutes or until a toothpick inserted into the muffin comes out clean.
  11. Leave to cool on a wire rack and then remove from the mold.
  12. Enjoy it!

Flourless savory muffins

Preparing a fluffy egg mixture full of great vegetables and tasty cheeses will definitely not take you too much time and you will conjure up a fantastic breakfast or dinner in no time.


  • 10 eggs
  • 3 handfuls of baby spinach,
  • 3 handfuls of chopped broccoli, yellow peppers, red peppers, cherry tomatoes
  • a handful of finely chopped bacon, grated cheddar, grated mozzarella, shallots, a handful of chopped spring onions
  • salt and pepper to taste


  1. In a larger container, mix the eggs.
  2. Grease the mold for 12 muffins with oil and start combining the ingredients.
  3. Salt and pepper.
  4. Decorate half of the future muffins with shallots and the other with spring onions.
  5. Pour the egg into the filling and put in the oven preheated to 180 °C.
  6. Bake for about 20 minutes.

Zucchini muffins with feta cheese

Most recipes for zucchini muffins are in a sweet form, but zucchini as a vegetable, on the other hand, encourages a sweet preparation. Try this variation with feta.


  • 2 cups of flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1/4 cup milk
  • 1/4 cup oil
  • 1 egg
  • 1 1/2 cups zucchini (shredded)
  • 150g feta cheese (cut into pieces)
  • 2 tablespoons fresh parsley (chopped)


  1. Preheat the oven to 200°C and prepare a tray with 6 muffin holes.
  2. Wipe the sheet.
  3. Mix together the flour, salt and baking powder.
  4. Gradually add milk, oil and egg.
  5. Stir until the mixture is beautifully smooth.
  6. Then add zucchini, feta cheese and parsley.
  7. Mix all the ingredients thoroughly with the dough.
  8. Pour the batter into the muffin holes and bake in the oven for about 20-25 minutes.
