Ingredients:

  • 500 g puff pastry
  • 1/4 cup chopped red onion
  • 2 cups grated cheddar cheese
  • 1/4 cup fresh cilantro
  • 1/4 cup fresh basil
  • 1 cup broccoli florets
  • 1 can of black beans
  • 1 glass of pickled dried tomatoes
  • 2 eggs
  • 3 slices of ham or bacon
  • 1 Italian sausage (salsiccia)
  • 1 teaspoon of ground cumin
  • 1 teaspoon chili
  • 1 teaspoon sweet paprika
  • 2 tablespoons of olive oil
  • salt pepper

Method:

  1. Roll out the puff pastry into a pancake and cut into triangles. Then put one of the fillings into each triangle and roll up.
  2. For the bean filling, heat a little oil in a small pan, add the chopped red onion, cumin, chili and fry for about 2 minutes. Then add the washed sterilized beans and cook for 5 minutes. Finally, salt and pepper the mixture. Sprinkle the filling on the puff pastry with a little grated cheddar and cilantro.
  3. For the egg and ham filling, first boil scrambled eggs with a little salt and pepper. Then put them on the prepared puff pastry triangles, add pieces of fried ham or bacon and some basil leaves.
  4. For the Italian filling, fry small pieces of Italian sausage in a small pan with a little oil, add some pepper and sweet paprika. When the meat is lightly browned, also add pieces of sun-dried tomatoes and cook together for approximately 10 minutes.
  5. For the cheese-broccoli filling, just put a little grated cheese on triangles of puff pastry together with broccoli florets, sprinkle with salt and pepper.
  6. Place the filled pastry on a baking sheet lined with baking paper and bake in an oven preheated to 180°C for approximately 15 minutes until golden.

Savory strudel with vegetable filling

Strudels or strudels don’t always have to be sweet. Swap apples, poppies, jams or nuts for vegetables, mushrooms, cheese or charcuterie. You will see that you will have a great time!

Ingredients:

  • 250 g puff pastry or pizza dough
  • 150 g of broccoli florets
  • 200 g of mushrooms
  • 100 g of mozzarella
  • 1 red pepper
  • 2 tablespoons of oil
  • 3 cloves of garlic
  • 1 egg
  • 1 tbsp of milk
  • 1 teaspoon of Italian herbs
  • salt pepper

Method:

  1. Divide the broccoli florets into smaller pieces, cut the mushrooms into slices and the pepper into pieces.
  2. In a pan with one tablespoon of oil, then cook the broccoli and pepper until soft for a few minutes.
  3. Add Italian seasoning, crushed garlic cloves and cook for another minute.
  4. Season with salt and pepper, stir and remove the mixture from the pan.
  5. Add the remaining oil to the pan and fry the mushrooms in it.
  6. Simmer gently.
  7. Afterwards, lightly cut the cooked vegetables and mushrooms into smaller pieces on a cutting board.
  8. When this mixture has cooled, add the grated mozzarella to it and put the bowl with the mixture in the fridge for a while.
  9. In the meantime, preheat the oven to 200°C.
  10. Roll out the puff pastry on a sheet lined with baking paper into a rectangle.
  11. Then put the prepared filling from the fridge on half of the dough.
  12. Then fold the other half of the dough over the filling, as if you were making a strudel.
  13. Seal the edges of the dough well to make a neat strudel.
  14. Brush the strudel with beaten egg and milk.
  15. Place in the preheated oven and bake for approximately 20-25 minutes until golden.

Traditional pies filled with a mixture of meat and cabbage

Pirohs, or bags, exist in many variants. The traditional Russian variant includes a filling with minced meat and cabbage. But you can also fill the pies with mushrooms or spinach.

Ingredients:

Dough

  • 400 g plain flour
  • 180 ml of milk
  • 1 egg
  • 20 g of yeast
  • 1 teaspoon of sugar
  • 2 teaspoons of oil
  • 1 teaspoon of salt
  • egg yolk and a pinch of salt for brushing

Filling

  • 300 g of ground beef
  • 2 cups shredded cabbage
  • 2 tablespoons of oil
  • 1/2 cup finely chopped onion
  • 3/4 teaspoon of dried dill
  • 1/2 teaspoon of dried minced garlic
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper

Method:

  1. Prepare yeast from yeast, sugar and a little milk.
  2. Then add the rest of the milk and about a third of the flour.
  3. Mix everything thoroughly into a smooth dough.
  4. Let the dough rise for about 60 minutes.
  5. After this time, add the remaining flour, eggs, oil and salt to the dough.
  6. Mix all the ingredients thoroughly, work them into a dough and leave to rise again, approximately 45 minutes.
  7. In the meantime, prepare the filling.
  8. Sauté the cabbage and onion in a pan with a little oil for about 5-7 minutes.
  9. Afterwards, remove this mixture from the pan and add the ground beef to the pan, and sauté until it loses its liquid and becomes smaller pieces.
  10. Then add the cabbage mixture to the meat again.
  11. Mix everything and add all the spices, i.e. dill, salt, pepper and garlic.
  12. Then divide the dough into 8-10 loaves, it depends on how big you want to make the pies.
  13. Then roll each bun into a pancake and fill with meat and cabbage filling.
  14. Fold the dough in half over the filling, forming a crescent shape and pinching the edges tightly to seal.
  15. Brush the pie created in this way with a yolk mixed with a pinch of salt.
  16. Place in an oven preheated to 200°C and bake for approximately 15-20 minutes.

This savory filled pastry is very often served with sour cream.

Savory filled cupcakes

These salty tartlets filled with a mixture of cheese, sausage and vegetables can be not only a very tasty dinner, but also a great treat for a visitor.

Ingredients:

Dough

  • 250 g plain flour
  • 120 g of butter
  • 6 tablespoons of ice cold water
  • salt

Filling

  • 200 g of bacon
  • 100 g of cheddar
  • 300 ml of sour cream
  • 3 eggs
  • 1 red onion
  • 2 shallots
  • 2 tbsp chutney
  • 1 tbsp freshly chopped chives

Method:

  1. Make a dough out of flour, butter, salt and water by hand or with a food processor.
  2. Then form a ball from the dough, wrap it in cling film and let it rest in the fridge for approximately 30 minutes.
  3. Preheat the oven to 200°C.
  4. Divide the cooled dough into six equal-sized parts and then roll each part into a pancake.
  5. Then, using a cup or something similar, cut circles out of the dough.
  6. Use your fingers to press the circles cut in this way into the tartlet form, remove the remaining dough.
  7. Put the dough back in the fridge to chill for 30 minutes.
  8. Prick the dough in the molds with a fork and bake for approximately 8-10 minutes (until golden) in the preheated oven.
  9. In the meantime, prepare the filling.
  10. Fry the diced bacon in a pan.
  11. Remove the fried bacon from the pan and use the fat to fry the chopped onions and shallots.
  12. Then put a little chutney, fried bacon, onions and a little grated cheddar in each tartlet.
  13. Add a little sour cream in which you beat the eggs and add the spices.
  14. Finally, sprinkle a little cheese on each tartlet.
  15. Place back in the preheated oven and bake for approximately 20-25 minutes.

Serve the baked savory tartlets sprinkled with chives.

  • 1 cup pickled artichokes
  • 1/3 cup capers
  • 1 cup black olives
  • 1/2 cup spinach leaves
  • 100 g of feta cheese
  • 300 g of mozzarella
  • basil

Method:

  1. Stir and dissolve yeast and honey in lukewarm water.
  2. Mix the flour and salt in a bowl, then slowly mix in the water, honey and yeast mixture to form a dough.
  3. When you have made a smooth dough, transfer it to an oiled bowl, cover with a tea towel and leave to rise in a warm place for about 30 minutes.
  4. After rising, spread half of the dough on a baking sheet, you can use a rolling pin.
  5. Then spread the dried tomatoes, which you have mixed with a pressed clove of garlic, on the dough.
  6. Then spread the other ingredients on top of the tomatoes, i.e. chopped pieces of pepper, artichokes, olives, spinach leaves, capers, basil and grated mozzarella and feta.
  7. Roll the remaining dough into a pancake and cover the filling.
  8. Then seal the dough well on the sides so that the filling does not leak out during baking.
  9. Leave the focaccia prepared in this way to rest for 20 minutes.
  10. In the meantime, preheat the oven to 200°C.
  11. Brush with olive oil and sprinkle with sea salt before placing in the oven.
  12. Bake for approximately 30-35 minutes until golden.

  2. When the yeast rises, add flour, salt, the rest of the milk, butter and eggs.
  3. Work by hand or with the help of a kneader into a smooth, non-sticky dough.
  4. Cover the dough with cling film and let it rise in a warm place for at least an hour.
  5. After it has risen, roll out the dough and then use a knife to cut triangles from it, which you will then make into rolls.

  6. Meanwhile, fry the chopped onion in two teaspoons of oil until golden.
