Pickling for gooseberry canning is the same as for other fruits, only the ratio of water and sugar changes, which depends on the sweetness of the fruit.

Preparation process

  • Pour one part water and one part sugar into a saucepan.
  • If you prefer a smaller amount of sugar, adjust the proportions to your liking.
  • Heat the mixture slowly and stir.
  • Bring to a boil and cook until the sugar is completely dissolved.

Canning gooseberries in the dishwasher

There is nothing easier than canning in the dishwasher – how to do it? We will advise you on this in the following text!

You will need

  • gooseberry
  • infusion
  • canning jars with lids

Preparation process

  • First wash the gooseberry and let it drain.
  • Then prepare the pickle.
  • Place the gooseberries in canning jars that you have thoroughly sterilized in advance.
  • Pour the hot infusion into the prepared glasses with gooseberries – hot so that the berries do not crack.
  • Seal tightly and stack in the dishwasher so that all the glasses are standing straight.
  • Stack them a little apart – they won’t crack.
  • Turn on the longest wash program and let it finish.
  • Then pull out the jars and turn them upside down on a blanket or towel.
  • Allow to cool and store.

Canning gooseberries in the oven

Almost everyone has an oven, so why not use it for canning as well. It is easy!

You will need

  • gooseberry
  • infusion
  • deep tray with a tea towel

Preparation process

  • Clean the gooseberry from the stalks and flowers and wash.
  • Prepare the jars – sterilized.
  • Boil a pickle made of water and sugar.
  • Stack the gooseberries in canning jars.
  • Pour the hot pickle over it and immediately close the lids on the jars.
  • Place in a deep tray, on the bottom of which we put a tea towel – never stack the glasses right next to each other, leave them spaced apart, they could crack.
  • Cover with water – about 2 centimeters and bake at a temperature of 70 degrees for about 15 minutes.
  • After baking, pull out the glass and turn it upside down.
  • Allow to cool and store.

Canning gooseberries in a microwave oven

You will need

  • infusion
  • gooseberry
  • plastic bowl

Preparation process

  • The procedure begins in the same way as for other canning methods – remove impurities from the gooseberry and wash it.
  • Pour it into prepared sterilized jars.
  • Pour the hot brew up to the rim into the glasses and seal tightly.
  • Set the power of the microwave oven to 700 Watts.
  • Place the glass in a plastic bowl – this will prevent the juice from accidentally leaking out.
  • Turn on one glass for 6 minutes – with each additional glass, double the cooking time.
  • Once done, take the jars out and place them face down on a tea towel.
  • Leave to cool and store in the cellar.

Classic gooseberry canning

It is not at all a simple matter to preserve gooseberries, it often happens that the berries crack. We will show another method of preparation so that the gooseberry remains whole.

You will need

  • gooseberry
  • infusion
  • canning jars
  • needle

Preparation process

  • And again the same as before – remove the stems and flowers from the gooseberry, wash it.
  • We will prepare sugar syrup according to taste.
  • We will thoroughly sterilize all the canning jars we will use.
  • Pour the gooseberry into a pot, cover with water and cook for 5 minutes – keep the temperature around 60 degrees the whole time, it must not boil.
  • Then pour the gooseberry into cold water and then into the glasses.
  • Fill the glasses with hot pickle up to the rim.
  • Cover and place in a canning pot – about 1 centimeter apart.
  • Pour water into the canning pot so that the jars are submerged.
  • We cook for 20 minutes under a temperature of 85 degrees.
  • Take out the glasses while they are still hot and turn them upside down.
  • Allow to cool and store in a cool, dark place.

You can also store gooseberries in other forms, such as jam or pickled gooseberries. Try these recipes too.

Pickled green gooseberry

You will need

  • 250 g of gooseberries
  • 15 g of white vinegar
  • 3/4 teaspoon brown sugar
  • 1 tablespoon of lemon juice
  • clove

Preparation process

  • Wash the gooseberry and cut off part of the stem and flower.
  • Mix together the ingredients – vinegar, sugar and cloves.
  • Allow the mixture you just cooked to cool and then pour it over the gooseberries.
  • Add the lemon juice and seal the jars while still warm.
  • Turn the jars upside down and let them cool.
  • Before serving the gooseberry, let it rest for at least 2-3 weeks.
  • Other spices such as cinnamon, ginger and pepper can also be added for gastronomically pleasing variations.

Gooseberry jam

You will need

  • 2 1/2 kg of gooseberries
  • Lemon juice
  • 2 kg of granulated sugar
  • 2 teaspoons of fruit pectin

Preparation process

  • Prepare the gooseberry – rid it of unwanted impurities.
  • Place the gooseberry in a pot with enough water.
  • Heat slowly to boiling point and stir in the pectin.
  • Add the lemon juice once it reaches a steady boil.
  • Let the mixture boil for 3-5 minutes, then turn off the heat and let it bubble for about 15-20 minutes.
  • Then add sugar to the mixture and cook for another 10 minutes.
  • Make sure the sugar is thoroughly dissolved – to avoid crystallization.
  • During the entire cooking process, collect the foam around the edges.
  • Once done, pour the hot mixture into glasses.
  • Cover the jars tightly with the lids and turn the bottoms up so they stick to the jars.
  • Allow to cool and store.
