Ingredients:

  • 1 cup uncooked rice
  • 2 cups of vegetable broth
  • 1 chopped onion
  • 1 chopped bell pepper
  • 1 medium carrot, chopped
  • 3 crushed garlic cloves
  • 2 tomatoes
  • 1 handful of fresh peas
  • 1 teaspoon sweet ground paprika
  • 1/2 teaspoon dried chili
  • 2 tablespoons of oil
  • Salt and ground black pepper to taste
  • Fresh parsley for garnish

Method:

  • Heat the oil in a pan to a medium temperature, add the chopped onion and carrot and fry for about 3 minutes.
  • Add garlic, pepper, chopped tomatoes and cook for 5 minutes, stirring frequently.
  • Then mix in the rice, peas, fresh and dried paprika and chili powder.
  • Pour in the broth and bring to a boil
  • Reduce the heat, cover with a lid and cook for about 15 minutes until all the liquid is absorbed.
  • It is important to stir regularly and often throughout.
  • Season with salt and pepper and serve. Decorate the plate with chopped fresh parsley.

Pork risotto

This delicacy will tantalize your taste buds, because what’s better than stewed meat that is juicy and delicious.

Ingredients:

  • 600 g of pork
  • 200 g of smoked bacon
  • 6 – 8 cloves of garlic
  • 2 large onions
  • 3 dried chili peppers
  • 1 bay leaf
  • 2 tablespoons of tomato paste
  • 1 tablespoon ground sweet paprika
  • 1 teaspoon of salt
  • 1/2 teaspoon ground black pepper
  • 50 ml of red wine
  • 350 ml broth (pork or beef)
  • 2 cups of long grain rice
  • 4 cups of water
  • 3 tablespoons of oil

Method:

  • Cut the meat into equal-sized pieces and the bacon into medium-sized cubes.
  • Heat the oil in a pan, add the bacon and meat and let it fry.
  • Add diced onion, pressed garlic, tomato paste and cook for about 3-4 minutes.
  • Season, add chopped chili peppers, pour in the wine and stock, mix and let it cook over a low heat until the meat is soft.
  • But we have to make sure that it is soft and juicy at the same time, not dried out.
  • When we are done, we remove the meat from the stove and cook the rice.
  • Put 2 cups of rice in a pot, pour over 4 cups of water and bring to a boil.
  • Cook over low heat until the water is absorbed.
  • If we have a rice cooker, we prepare the rice in it.
  • Then just mix the rice with the meat and serve.

Vegetable pan with rice

A pot full of vegetables and meat, that’s exactly what this recipe for Serbian risotto will leave you licking your lips the next day.

Ingredients:

  • 1/2 cup oil
  • 1,200 g of chicken or beef
  • 10 – 12 onions
  • 1 1/2 kg of tomatoes
  • 1 medium-sized eggplant
  • 1 green pepper
  • 2 zucchini
  • 3 stalks of celery, cut into slices
  • 2 cups of water
  • 1 cup of rice
  • A handful of parsley
  • Salt and ground black pepper to taste (can be four-colored or white)

Method:

  • Preheat the oven to 180 degrees.
  • Cut the meat into medium-sized cubes, the celeriac into smaller cubes.
  • Cut the tomatoes into slices together with the cleaned onion.
  • Peel the eggplant and zucchini and cut them into equal pieces, about 1 x 1 cm.
  • Put oil, onion, eggplant, green pepper, zucchini and celery in a bowl and add salt to taste.
  • We will take a larger baking pan and layer the individual ingredients into it.
  • Put half the tomatoes, half the vegetable mixture on the bottom and sprinkle with pepper.
  • Add the chopped meat and spread over the entire surface.
  • Cover the meat with the other half of the vegetables, sprinkle uncooked rice and the remaining tomatoes.
  • Finally, cover with water, cover with aluminum foil and bake in a preheated oven for 2 hours.
  • After this time, remove the foil and let it bake uncovered for another 10 minutes.
  • Then just remove from the oven and serve.

Mushroom mixture

This Serbian risotto will delight you, especially if you love mushrooms. It is simple and yet very tasty and filling. In addition, everything is perfectly underlined by white wine.

Ingredients:

  • 4 tablespoons of oil
  • 1 medium onion
  • 300 g of Portobello mushrooms
  • 1 cup of round white rice
  • 1 cup white wine (best quality Chardonnay)
  • 1 teaspoon vegeta (or a similar spice that we normally use)
  • 1/4 teaspoon ground white pepper
  • 2 cups of boiling water
  • 1 tablespoon fresh parsley

Method:

  • Peel the onion and cut it into fine pieces. On the other hand, cut the mushrooms into thicker slices.
  • Rinse the rice, strain and let it drain.
  • Heat the oil in a saucepan and add the onion.
  • Let it fry and stir continuously so that the onion acquires a golden hue.
  • Add the mushrooms and cook for about 4 minutes.
  • Then add rice, spices and cover with wine. Let it boil and, stirring occasionally, wait until 2/3 of the wine has evaporated.
  • Finally, add hot water and cook for another 15-20 minutes.
  • If the mixture becomes sticky, you will need to add more water.
  • Stir occasionally and wait until the water has evaporated and the rice has the desired consistency.
  • Then we just set aside and can serve garnished with chopped parsley.

Tip: If you want, you can also clean the spring onion, cut it with the green part and sprinkle it as you like.

Risotto like from a school canteen

Although we want to forget these institutions as adults, it does not hurt to occasionally remember a recipe that we liked when we were still schoolboys.

Ingredients:

  • 1 large onion
  • 2 tablespoons of vegetable oil
  • 500 g of beef
  • 1 teaspoon ground sweet paprika
  • 4 peeled tomatoes
  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon of four-color pepper
  • 1 cup uncooked rice
  • 2 cups of water

Method:

  • Cut the onion into cubes and throw it into the pan on the heated oil. Fry until golden brown.
  • Sprinkle with paprika, throw in thinly sliced beef and let it simmer for 30 minutes.
  • Salt, pepper and add tomatoes cut into quarters and peppers into strips.
  • Boil for about 10 minutes and add rice, which we cover with water.
  • Cook for another 25-30 minutes until the water evaporates and the rice is soft and tender.

Believe that this Serbian risotto will win your heart. The preparation is quick, simple and the resulting dish is delicious. It is a successful combination of appropriately selected ingredients.

Ingredients:

  • 250 g of fresh forest mushrooms, sliced
  • 3 cups of boiling water
  • 2 tablespoons olive oil (or 1 tablespoon lard)
  • 1 medium onion
  • 3 cloves of garlic
  • 3 sprigs of fresh thyme
  • 1 1/2 cups risotto rice
  • 1 1/2 quarts of hot chicken stock
  • 3/4 cup fresh peas (can also be frozen)
  • 1 tablespoon of unsalted butter
  • Salt and ground black pepper to taste
  • A handful of fresh parsley
  • Parmesan or Grana Padano for sprinkling

Method:

  • Heat the oil in a large pan and add finely diced onion and thinly sliced garlic.
  • Fry for 3-4 minutes until the onion is soft and not glassy.
  • Cut the mushrooms into slices and add to the pan. Add salt, pepper, thyme and sauté for a few minutes.
  • Sprinkle the rice over the risotto, mix and fry for a minute.
  • Pour in 1/2 liter of chicken broth, stir, cover with a lid and reduce the temperature to medium.
  • Cook until all the liquid is absorbed. Then pour in the remaining chicken broth.
  • Stir and let it cook until the rice is pretty soft but not overcooked.
  • Finally, we throw in fresh peas and butter, which we let melt.
  • Add salt or pepper as needed and serve garnished with chopped fresh parsley and sprinkled with grated cheese.

Tip: If we want to use dried mushrooms, soak them in warm water for 1 hour before cooking. Then drain them, but keep the water aside and add to the risotto instead of 1/2 liter of chicken stock.

Risotto with poultry meat, peppers and tomatoes

Serbian Chicken Mix is a great choice for anyone who loves poultry. This is a slightly modified version with turkey, which will leave you with dust.

Ingredients:

  • 600 g of turkey breast
  • 2 red peppers
  • 2 large onions
  • 3 cloves of garlic
  • 2 tablespoons of oil
  • Salt to taste
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon ground sweet paprika
  • 1/2 teaspoon hot ground paprika
  • 250 g of long-grain rice
  • 2 tablespoons of tomato paste
  • 1 1/4 liters of chicken stock (could also be beef)
  • 500 g chopped tinned tomatoes

Method:

  • Rinse the turkey breast, dry it and cut it into 2 cm cubes.
  • Remove the seeds from the peppers and cut them into strips. Peel the onion and finely chop it into thin slices.
  • Clean and press the garlic.
  • Heat the oil in a saucepan, add the meat and stir-fry until golden brown.
  • Salt, pepper, add onion, garlic and peppers and cook for about 2 minutes.
  • Sprinkle with sweet and hot paprika, add rice and stir in tomato paste.
  • Pour in the broth and stir in the chopped tomatoes.
  • Bring to a boil and cook over medium heat for about 20-30 minutes, stirring frequently.
  • Add salt and pepper as needed. Then we serve immediately.

Ingredients:

  • 250 g of cherry tomatoes
  • 1/2 salad cucumber
  • 1 small red onion
  • 3 tablespoons of extra virgin olive oil
  • Salt and ground black pepper to taste
  • Fresh parsley or chives for garnish

Method:

  • Cut the tomatoes into halves or quarters, depending on their size.
  • Cut the onion into thin slices, dice the cucumber and put everything together with the tomatoes in a bowl.
