  • 220 g of butter
  • 200 g of granulated sugar
  • 6 large eggs
  • ½ teaspoon of salt
  • 340 g plain flour
  • 250 ml thick whipping cream
  • 2 teaspoons of vanilla extract

What will we need

  • Wipe out the cake pan.
  • In the bowl of a stand mixer on medium speed, beat the butter and sugar until light and fluffy, about 5 minutes.
  • Add eggs one at a time, beating each egg.
  • Add salt to the measured flour, whisk to combine and aerate the flour.
  • Then alternately add the flour and heavy whipping cream, starting and ending with the flour.
  • Add the vanilla extract and mix until incorporated.
  • Pour the batter into the mold and place in a COLD oven, then turn the oven on to 180 degrees.
  • Bake for 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the whipped cream cake cool on a wire rack for 45 minutes before turning out onto a serving plate.

  • 3 large eggs

  • 1 1/2 cups heavy whipping cream, cold
  • 1 cup plus 1 tablespoon powdered sugar
  • Butter for greasing the mold
  • Fresh fruit to serve (optional)

For the frosting

  • 1 1/4 cups heavy whipping cream
  • 1/3 cup powdered sugar
  • 1 teaspoon of pure vanilla extract

Method

  • Preheat the oven to 180 degrees. Wipe out the cake pan.
