The name bubble is derived from the word bublat – the light dough rises during baking, while the fruit that is placed on the surface of the dough sinks down, so it looks as if the dough has bubbled upwards.
It is traditionally made from cherries, but it is excellent with any fruit – blueberries, currants, raspberries, forest mixture, but also plums, rhubarb or even pineapple.
After baking and cooling, sprinkle it with powdered sugar and if you are not going to eat it right away, cover it with a clean tea towel to keep it fresh for as long as possible.
Serve it with a scoop of vanilla ice cream on hot summer days.
But a sprig of fresh mint, lemon balm or a few pieces of fruit will also make a great show.
