Traditional Frankfurt soup with sausage and potatoes
This soup is really delicious and also very filling. Thanks to sausage and potatoes, the whole family can eat enough. Try this classic frankfurter soup from our grandmothers.
Ingredients
- 750g potatoes (amount to taste)
- Vienna sausages (amount to taste)
- 150g of celery
- 250g of leeks
- 2 onions
- 3 carrots
- 1 liter of chicken stock
- 1 teaspoon marjoram
- 1 bay leaf
- 30g of parsley
- 1 tablespoon of butter
- Salt and pepper
Method
- First, peel the potatoes, carrots and celery. Cut them into pieces.
- Also cut the sausages into rounds.
- Peel the onion and chop finely. Wash the leek and cut into slices.
- Finely chop the parsley.
- Heat the butter in a large saucepan and sauté the onion. Add sausage and sauté for a while.
- Add the marjoram, potatoes, leeks, carrots and celery. Saute for another 2 minutes.
- Add the chicken broth, add the bay leaf, cover with a lid and let it cook for about 30 minutes. Stir occasionally.
- Remove from heat, season with salt and pepper and serve.

Real bean soup
You can enrich this soup with beans. It will be fuller and full of protein. Get inspired!
Ingredients
- 5 thin sausages
- 1 can of beans (white or red)
- 1 onion
- 3-4 potatoes
- 3 cloves of garlic
- 1 tablespoon of butter or lard
- 1 tablespoon plain flour
- 2 tablespoons ground sweet paprika
- 1/2 teaspoon hot paprika
- 1.5 liters of stock (or water with broth)
- A pinch of love
- Marjoram
- Salt and pepper
- Caraway seeds
Method
- First, finely chop the onion and garlic.
- Melt the butter in a saucepan and add the onion and cumin. Sauté until golden, then stir in the garlic.
- Saute briefly and then sprinkle with sweet and hot paprika. After mixing, dust with flour.
- Stir for a while and then pour over the stock or water with the mixed broth.
- Bring to a boil, add the sliced potatoes and a sprig of chives.
- Cook for about 10 minutes and then add the chopped sausage.
- Cook until the potatoes are soft and finally add the beans. (Also with pickle)
- Boil everything briefly and season with salt or pepper.
- Serve the finished soup with fresh bread.

Frankfurter-style cream soup
Try this recipe for a quick frankfurter soup with cream. Sour cream will add softness to the soup and the result will certainly be delicious!
Ingredients
- 3 sausages
- 4 small potatoes
- 1 onion
- 1 liter of chicken stock (or water with broth)
- 1 tablespoon sweet paprika
- 200ml cream (or 100ml cream and 100ml milk)
- 2 tablespoons plain flour
- 1 tablespoon of butter
- Salt and pepper
- Libeček for sprinkling
Method
- Finely chop the onion. Cut the sausage into rounds and peel the potatoes and also cut them into cubes.
- In a large pot, foam the onion in butter, throw in the chopped sausage and saute.
- Remove from heat, sprinkle with paprika and dust with flour. Stir and return to heat.
- Pour in the broth, mix thoroughly and cook for 10 minutes.
- Then add the chopped potatoes, salt, pepper and cook until the potatoes are soft.
- Towards the end of cooking, add the cream and let it cook for a while longer.
- Season with salt and pepper to taste and sprinkle with fresh fragrant libécco.

Luxurious Frankfurt soup with mushrooms
Maybe you didn’t know that any mushrooms can be added to this soup. You can use fresh from the forest, frozen, or dried. Purchased mushrooms also do no harm.
Ingredients
- 3-4 sausage legs
- 1 onion
- 150g of mushrooms
- Butter or lard
- 3 cloves of garlic
- 1 tablespoon ground sweet paprika
- 1 liter of meat broth
- 300g potatoes (3-4 pcs)
- Cumin (ground)
- 1 teaspoon marjoram
- Salt pepper
- Plain flour for thickening (or egg yolk)
Method
- Peel the potatoes and cut them into cubes. Finely chop the onion and cut the sausage into rounds.
- Heat the butter in a pot and fry the onion with the chopped sausage.
- Then add the chopped mushrooms and crushed garlic.
- Sprinkle with paprika and fry briefly.
- Pour in the broth and add the chopped potatoes.
- Season with a pinch of salt, cumin and pepper and cook until the potatoes are soft, about 20-25 minutes.
- Towards the end of cooking, thicken with flour mixed with a little water or broth.
- Finally, add marjoram, salt or pepper to taste and serve with pastries.

Quick Frankfurter soup with sausage

- 1 liter of broth

- 100 ml of milk for softening
- Fresh parsley
- 1 tablespoon plain flour
Method
- Finely chop the onion. Peel the potatoes and cut them into cubes. Cut the sausage into rounds.
- Heat the butter or lard in a large saucepan. Then add the finely chopped onion and fry until golden. Dust with flour and fry briefly.
- Then sprinkle with sweet paprika and pour in the stock, stirring constantly.
- Pour in the chopped potatoes. Salt, pepper and cook until the potatoes are soft.
- Towards the end, add the milk and add the sliced sausage into rounds.
- Cook for a short time, approx. 5 minutes.
- Finally, add the chopped parsley and serve.

Frankfurt soup not from Frankfurt?
As you may have guessed, this soup has nothing to do with this German city. The same goes for the frankfurter sauce.
Just like other names of Czech dishes, this one also came from the heads of some innkeepers, who derived the name of the soup from the main ingredient – sausage.
The basis of this great soup is Frankfurt sausages, the history of which dates back to 1487, when these lean meat sausages were sold.
Here in the Czech Republic, however, you can often find ordinary Javanese or Vienna sausages in Frankfurt soup or sauce.
