What is smoked meat and how is it prepared?

Smoking is a very popular method of meat processing, it is heat treatment with smoke at low temperatures.

The meat must also be pickled in a salt mixture for about 4-6 weeks.

Temperatures vary according to the type of meat, but in general we can say that it is around 50-60 degrees, but it depends on the type of meat.

Wood suitable for smoking is, for example, beech, acacia, cherry and or alder.

This is the only way to ensure that the meat is not dried out and has a full, smoky flavor.

The smoking time is 6-8 hours, some pieces of meat are smoked for up to 22 hours.

You can buy ready-made and seasoned meat and enjoy it at home, for example in soups.
