What will we need
- 60 ml of heavy cream
- 80 g of grated Emmental cheese
- 2 tablespoons chopped chives
- 3 tablespoons of butter
- A portion of homemade pepperoni (see the last recipe of this article)
- Onion (diced)
Method
- In a small bowl, mix grated Emmental cheese with heavy cream and chopped chives
- Melt a spoonful of butter in a pan
- Throw in the chopped onion and fry until golden
- Remove the onion from the pan and set it aside
- Melt the remaining butter in the same pan
- When the butter is hot, throw in the home-cooked speck
- We then cook these on medium-high heat until they are golden brown and crispy on the edges
- Add the cheese mixture to the pan
- Stir vigorously to combine the ingredients and melt the cheese
- Garnish with chopped chives and crispy fried onion
You can also bake this recipe for speck. Preheat your oven to 220 degrees in grill mode and after step 6 place the pan under the grill for about 2-3 minutes until the top is golden brown. Remove, garnish with chives and scallions and serve.

What will we need
- 300 g of pepper
- Onion (sliced)
- 180 g Emmental cheese
- 4 tablespoons of softened butter
- Salt
- Pepper
Method
- Preheat the oven to 200 degrees
- In a pot of boiling salted water, cook the egg noodles according to the instructions on the package (or try the recipe for home-made specks given in the last article of this text!)
- Meanwhile, cut the onion into thin slices
- Heat the butter over medium heat and add the chopped onion
- Add salt and pepper to taste and cook, stirring frequently, until the onion is slightly caramelized
- When the onion is ready, remove it from the heat and set it aside
- Add the noodles, cooked onion and ¾ of the cheese to the baking dish
- In a baking dish, mix all the ingredients to combine and sprinkle the rest of the cheese on top
- Place in the oven and bake at 200 degrees for 25-30 minutes until the cheese is melted and bubbling
- Take out the skewers, let them rest for 10 minutes and then serve

enjoy a creamy mushroom sauce made from fresh mushrooms, traditional chicken schnitzel and original German egg noodles. The recipe may seem complicated, but the opposite is true! You have never cooked such an easy recipe before.
What will we need
For chicken
- 4 thin slices of sliced chicken breast
- 250 g of flour
- 250 g breadcrumbs
- 2 eggs (beaten)
- 2 teaspoons paprika
- ½ teaspoon of garlic powder
- ½ tsp onion powder
- Salt
- Pepper
- 2 tablespoons of olive oil
- Spoon of butter
On the spit
- 750 g semi-coarse flour
- 2 tablespoons of powdered milk
- 3 eggs
- 320 ml water (approx.)
- A spoonful of oil
For the sauce
- 500 g of chopped mushrooms
- 500 ml of beef broth
- 85 ml of red wine
- A teaspoon of Dijon mustard
- A teaspoon of olive oil
- 2 tablespoons of butter
- 60 g plain flour
- Salt
- Pepper
Method
- Mix the flour and powdered milk in a bowl for the skewers
- Make a well in the middle and then add the wet ingredients
- Mix the dough until it comes together
- The consistency should resemble pancake batter, but thicker
- Let it rest for 30 minutes
- In a large pot with salted boiling water and a spoonful of oil, we will cook the speck
- To shape the noodles, we will use a slotted spoon with large holes or a colander with large holes or a special mold for gnocchi or skewers
- Push the dough through the mold and cook for 2-3 minutes until they rise to the surface
- After cooking, remove them from the water and set them aside
- While the specks are resting, we will prepare the meat
- Preheat the oven to 200 degrees
- Divide the flour, breadcrumbs and beaten eggs into three bowls
- Add salt and pepper to the flour
- Add paprika, garlic powder and onion powder to the breadcrumbs and mix
- We wrap each piece of chicken on both sides in triple wrap
- Melt half a spoonful of butter in a pan over medium heat and add a spoonful of olive oil

- In a medium-sized bowl, mix the flour, milk, eggs and spices
- Knead everything until the ingredients are well incorporated

- 4 large eggs
- 125 ml milk (or water)

Method
- Add flour and salt to a large bowl
- Stir to combine
- Crack the eggs into a small bowl and whisk them
- Make a well in the middle of the flour mixture and pour the beaten eggs into it
- Add milk and start mixing and gradually move to kneading
- Knead the dough for 16-20 minutes
- After 15 minutes of kneading, the dough should begin to swell and form bubbles (that’s how we know it’s well done)
- Bring at least 2 liters of salted water to a boil in a large pot and then reduce the temperature to moderate
- Using a specola maker (specola grater, gnocchi grater or specola cutter) squeeze the egg noodles into the boiling water and cook for about 2-3 minutes until the noodles float to the top
- Using a slotted spoon, remove the noodles and place them in a colander
- And then pour them into a large bowl of ice water
- Drain the noodles again and drizzle with melted butter
- Serve warm
